This dessert has been on my menu and ever changing since 2015.
I’ve brought the early versions as a pressure test on MCAU and here’s the latest version.

50g Milk
50g Glucose
1 Vanilla bean
Salt

Dulce Cremeux
Creme pat (above)
White Chocolate (caramelised) 90g - 150C for 16-18 minutes
Gelatine Titanium ½ sheet
Cream whipped 125g
Pistachio Monte
White chocolate 45g
Pistachio paste 25g
Gelatine Titanium ½ sheet
Sugar 15g
Cream (whipped to medium peak) 180g
Matcha soil

You most definitely won’t have a pacojet or the ingredients to make this sorbet.
And if you do and you work in a restaurant, this is a secret recipe #saranghae
I use Boiron Green Apple Puree for it.

The only thing I cooked was his fried rice. 😅 I don't like sweets that much but I would kill to taste all of his.
He should have won master chef, and even though he didn’t, he became way more successful than the other contestants, so he’s the real winner
the other contestants beat him fair and square in some areas wheras he dominated in others. Nobody could/can touch him when it comes to desserts, that's for sure!

He has moved on and found success. I find that more inspiring than anything else.

Sometimes it does work that way, winning something doesnt mean that you are better sometimes. It's just because you fit a certain criteria for winning. And it helped that he is very good and love what he did, and the contest became a good marketing for him, and he had the goal.

Ok can we talk about his adorable smile when he puts everything together? You can tell how excited he is about his new creation, and how much it really is a labor of love. It's almost like he's so proud of his baby but a little shy about it as well. Also love the fact that he never feels completely happy with his work-- that there's always something to improve.

Smaller one just looks so sleek, clever, and very... almost treasure like. Honestly, the one I would pick in a heartbeat, simply because of just how gorgeous it could, and will be.

the petition only gets him reviewed. The star is for the restaurant being good. They rate on High-quality produce( ingredients), Chefs with a mastery of culinary techniques( everyone in the kitchen). The taste of the food( easy but its also consistency, each one you crank must have the same level of quality and taste), Lastly the dining experience, the decor/ atmosphere, the service. If someone having shit customer service well there goes the star. The inspectors will eat at the restaurant twice in a day, for 220-250 meals in a year at the restaurant to properly evaluate the consistency. We can definitely get him reviewed but it's up to the restaurant as a whole to earn it.
Yeah, he sure deserves it. What I'm not sure is whether he wants all the insane madness and inhuman stress that comes with it. I know I wouldn't.

I just found him about a month ago and watched all the master chefs with him on it, he is just Brilliant, and an awesome dessert story teller, I wanted to eat all thos cool desserts he made, when we can travel again I want to visit his dessert bar, love just watching him make those rocking desserts, he should have won that show, I did not watch any others that didn't have him in it, then found his youtube and am tickled he posts some of the greatness he does. Looooove it! The desert is amazing as it is but the Piece de resistance is the ceramic celadon box as container.🤩 Adds drama for the presentation...especially when the box is opened and the smoke comes out of it...it’s magical 🤩
