This Is The King Of Fried Rice

  • Disclaimer: yes yes I’m using an induction wok. It’s not ideal but it’s good enough 😘.
Alright gangstas lets cut the shit and end this egg fried rice shaming. There are so many different ways you can do fried rice, many different cuisines behind it too.
BUT when it comes down to just pure flavour and complexity, this for me is top tier. Sweet, salty, smokey and spicy with a hint of funkiness/msg from our sambal.
This is MY take on the nasi goreng.
There's no chilli jam, but there is sambal.
No MSG, but there is sambal (which has MSG in it from the chicken powder)
No peas and carrots, but there is sambal.
No Uncle Roger, but there is sambal.
Look, whichever way you look at it. This IS the best fried rice, it's got way more flavour and so much more fun to eat.
Don't agree with me? Then go and make yourself a bowl of it and thank me later.

Though not Indonesian myself, my father was, growing up in the (southern) Caribbean---yes, there's a huge South-East Asian presence there---I can fully concur that we too rely on Nasi Goreng as the remedy to nearly all "ailments"... particularly of the weekend-festivities type. FTW!
"Eggs last" is exactly what we do too, we enjoy the runny-egg-over-rice variety. Some crack an egg over the rice while still in the wok & the burners are off, so the residual heat & steam cooks the egg.
From experience, for those who do not have access to a proper wok---whether on proper gas burners or induction top---a paella pan (carbon steel is always preferable, as all proper paella pans are, just like a proper wok) is the best suitable alternative.

Instead I went to Malang and found a small dessert bar called ‘Timtong’ which totally blew my mind. It was so good and I’d never experienced a dessert bar like that before. Probably one of the best I’ve ever been to. If u had a chance to go there, make sure to try the apple crumble pudding and fried sweet potato 👍
