What you’ll need:
Lava Cake Batter
150g Dark chocolate 65%
150g Unsalted Butter65g Sugar/Dark Palm sugar
3 Eggs
3 Yolk
40g Plain flour
Pinch of Salt
Ganache Centre
150g Dark chocolate 65%
50g Milk
100g Cream
25g Unsalted Butter
Baked at 165C, 18-20mins
Italian Meringue
90g Egg whites
180g Sugar
50g Water
118C
Equipment:
7cm metal ring mould
4cm cylinder silicon mould (optional)
Thermometer
Freeze Dried Mandarins from - Fresh As
Silicon mould from Pavoni
*I highly suggest that if you're not using a silicon mould for the centre to make the ganache a day before to set overnight.

I remember watching a movie called "Chef". The main character Carl Casper actually mentions this. Lava cake isn't a cake that's undercooked in the centre. Its got a frozen chocolate ganache in the center of the cake which melts while the cake bakes in the oven thus giving it the molten chocolate in the centre of the cake.

Yes, and I've made it using more than one kind of center, including salted caramel and raspberry coulis. What matters is that the center is frozen and melts when the dough is cooked.

The struggle is real when it come for baking, I gave up so many times and thought that baking is not for me at all, seing you struggle made my desire of baking back again... Thankyou Chef for sharing and being real.

I love this guy. He is a professional pastry/dessert chef, but he is not afraid to show uncertainty when cooking. Being professional does not mean you do it perfectly all the time :)

You can really tell that you have passion for cooking. I worked as a chef for almost 10 years after school, but it was never my passion nor was the education or line of work my choice. I love cooking at home, but, I was working 80+ hours a week in a strict environment and was allowed zero creativity and it truly made me hate everything about restaurants and its underappreciation for its workers. I cherish the fact that you have the time and means to be creative and do what you really love. And watching you be in your element is a joy to watch. I really hope that these times doesn't affect you and stay safe!

Absolutely loving these videos, reynold has been my favourite since he first did masterchef. What i like most about these is that they a dinky-dye down to earth. It shows the stuff ups as well as the success which makes them more enjoyable and realistic life. Can't wait to go to his restaurant, was planning to go in May for my our 1st wedding anniversary but couldn't due to obvious reasons. But definitely got plans to go soon.

I didn't go to culinary school, didn't have money for it.
Alchemist 2.0 is a restaurant in Copenhagen, I was there end of last year as a stagier.
I'm self-taught, you can be too. But I don't recommend it, it's a longer process. Best to apply and train in good kitchens. Start small.
