- So, I was craving this last year and decided to make it in a small apartment during my stint on Masterchef.
I had other condiments around like a home made lemon ricotta which I slapped on top and served it with some chive oil. It was EPIC!!!!
Since then I can't stop eating my crispy spring onion pancakes without lemon ricotta on it, it's just a perfect marriage.
It reminds me of Turkish Gozleme, but crispier and with lots of oniony garlic goodness.

Here’s what you’ll need:
Spring Onion:
200g Plain flour
170g Water
20g Condensed milk or 10g Sugar
2 Spring onions
Extra Oil
Ricotta:
150g Milk
75g Cream
1 Lemon
Salt
Garlic Confit:
6 Cloves of garlic (or more)
250g Grapeseed oil
2 Sprigs of thyme

There's a few angry comments about this being a rip off another dish. Just to be clear I'm not a perfect chef with all the knowledge in the world.
This is a recipe that I learned - which is the Cong Yu Bing (who's to say who's ripped off who?)
YES - there are similarities in other dishes like Indian Paratha and the Malaysian Roti.

I think it’s better to aim to destabilize and reject purity in food culture by reconsidering the politics of who gets to cook what food. If it’s delicious then that’s what it should be about. And that lemon ricotta, spring onion pancake is damn delicious so everyone can stfu!!!!!!!!!

The main reason I'm so drawn to Rey-Rey's food is his first hand experience about hard work. Yes he is talented and a concept creator but he only became this good by seeing his parents work hard which is is biggest motivation to achieve perfection like we saw on MasterChef and in his cooking now. Oh baby! That reminds me of a Turkish dessert "katmer" which uses pounded pistachios instead of scallions and "kaymak" instead of cheese. Give it a try.
Adding a bit of flour to the oil helps maintain the layers without having the oil get squeezed out when rolling the scallions into the dough.

I love how Reynold kept the working the too wet dough. I fail all the time and sometimes you just gotta work thru shit and make it work. Don't get discouraged especially when working with cheap ingredients like flour slat and water. At worst you toss it and try again or cook it and toss it if it doesn't work out.
