The Story of Spinach Cocktail Bars - Because Brownies don't Always Have to be Chocolate!

  • We're travelling to 1981 today to celebrate a contribution cookbook from the American Cancer Society! These are actually called "Bars" but they are very much brownie like and with spinach and cheese, they are absolutely delicious! They went fast here in Palm Springs!

    Here’s your recipe!
    2 TBS Butter, Melted
    2 Eggs
    1/2 Cup Flour
    1/2 Cup Milk
    1/2 TSP Salt
    1/2 TSP Nutmeg
    1 TSP Baking Powder
    1/2 TSP Garlic Salt
    8 Oz Cheddar Cheese, Shredded
    2) 10 Oz Pkgs Frozen, Chopped Spinach
    1 Heaping TBS Parmesan, Grated
    Set oven to 350. Pour melted butter into a 9x13 baking pan. In a large bowl, beat eggs. Add flour, milk, salt, nutmeg, garlic salt and baking powder. Stir to mix thoroughly. Add cheddar cheese. Cook spinach according to package directions, drain well and mix into batter. Mix well. Pour into baking pan. Top with parmesan cheese. Bake 35 minutes, cool 5-10 minutes. Cut into squares.

    This is one treat we have never heard of before. Those compilation cookbooks are full of cool recipes. What a great way to incorporate spinach. Thank you for showing us how it's done!

    Doubling the batter and adding some feta would be spanakopita without the hassle of philo dough.
    On the topic of non-brownies, the climb of Mt. Logan was said to be fueled by Logan bread. SUPER calorie dense bread with multiple period recipes claims. It was made with available ingredients found during the Yukon Gold Rush including whole wheat flour, oil, sugar, corn syrup, nuts, and dried fruit with possibility of egg.

      @@yesterkitchen I'm planning on making them for her fairly soon. They were a staple when she and my father had cocktail parties. I'm sure it will bring back some happy memories for her. Thanks for digging up this old, forgotten recipe.
