These audits are great, but it seems like they’re only learning how to identify auditors rather than actually understanding people’s rights and how to not violate them.

Education is happening, albeit slowly. Not sure how you can be a police chief or Sheriff in this country and not have had your department complete some thorough civil rights training by now.
Watch a few more videos and you'll see that the police are rarely the good guys. It's very sad.
They usually are. Even in the police cam videos they're always respectful and they really try to keep things chill. It's the Media that says otherwise.
It's good that the police act in a professional manner but you know damn well they're just writing off these one-off cases as "just another first amendment auditor who's bored" and still violating rights left and right. The real value is spreading awareness to the PEOPLE so that they stand up for themselves.
