    Alone and Kenai
    VIETNAMESE GRILLED PORK (THIT HEO NUONG XA)
    INGREDIENTS
    1 pound boneless pork shoulder or sirloin steak, about ½ inch thick
    Marinade
    1/4 Cup brown sugar
    3 Tbps Honey
    3 Tbsp fish sauce
    2-3 Tbps lemongrass, trimmed and finely chopped
    1 Tbsp Lime Juice
    1 Tbsp chile paste
    1 Tbsp minced shallot
    1 ½ tsp dark soy sauce
    ¼ tsp black pepper
    INSTRUCTIONS
    Mix marinade ingredients in a bowl, and set aside. Place pork steaks in a shallow dish. Pour marinade over pork and turning to ensure well coated. Cover and refrigerate for 4 to 12 hours.
    Preheat a grill to medium-high. Grill for 6 to 8 minutes, turning frequently, until cooked through. Transfer to a plate, loosely cover with foil or an inverted bowl for 10 minutes before slicing and serving.
    Banh Mi Sandwich
    French Baguette
    VIETNAMESE GRILLED PORK (THIT HEO NUONG XA) - thinly sliced
    Pork pâté
    Mayonnaise
    Sliced cucumber
    Sliced jalapeno
    Fresh cilantro
    Pickled daikon and carrots (Đồ Chua)
    Slice open baguette. Spread mayonnaise to inside of baguette. Spread pâté inside of baguette. Layer on remaining ingredients. Enjoy!

      If anyone wanted to know a true “day in the life” up here, the video would sound like there was no audio except for the birds and the wind! Sometimes the only noise outside is me talking to a camera! 🤣Stepping outside is so peaceful! As for my roof, that exact area I was standing will all be pitched so the snow can slide off easier! That may be the last time I can stand up there for that view! So a balcony will be needed for sure now!😁 The propane lighting is nice and rustic looking. I have used Coleman lanterns and they seemed very loud! Very bright but loud. I wonder if these lights do the same thing? But I have to get over my fear of propane first 🤣 Thank you Susan!

      @@AloneinRemoteAlaska I don’t recall the lights being noisy. Just a very faint hiss. Not at all noisy like a Coleman lantern.
      Ahh! A pitch in the roof. You had mentioned it and I forgot. Must be the view from up there that caused me to forget 😎

      HA! That’s the point of cooking on video right! 🤣 No matter what happens this summer, I will go fishing! I absolutely love to fly fish. I did pretty good fishing in Colorado but I think fishing in Alaska will be the jackpot! Just have to watch for bears! 😳 Thank you so much Gerald!

    Sandwich looks good but the holy trinity of sandwiches rightfully belongs to the Rueben, BLT and Cuban. The other sandwich that comes to mind is a “soup sandwich” which I frequently referenced while serving in the Army.

    I really admire you! Living off grid in Alaska. And I just love your dog Kenai; he seem's like such a sweetheart. I have always dreamed of having my own little place out in the country, but, sadly, I don't think that dream will come true. I live in Tacoma, Washington, where I was born and raised, and I have never liked it here. But, at 68 years old, and very low income, I don't think I will ever be able to leave here.....unless a miracle happens. It is wonderful to see a young lady like you being able to live your dream. God bless you dear.

      Trust me! I worried about that too! My roofing contractor has won some awards and has been in the business for awhile. He had good reviews too. Great pictures on some of the crazy stuff he has worked on so he knows a lot about roofing and construction. Even after I paid that first 1/3, I was worried but he kept in contact and actually showed up when he said he would! 😳I guess in Alaska, if you get a bad rap, you’re basically done.Mostly word of mouth advertising. I do like that he is all about the work being professional. Not one of the bragging types. BUT we will see how it goes! Thank you Steve! 😆

    I know what you mean about the air!! I'm on an island in the North Atlantic and we are the windiest city in Canada. I absolutely love the fresh ocean air whipping everything senseless. lol

    everything but the cilantro lol. Glad the roof is progressing finally. Kenai handled that like a champ he deserved his milk bone that day. Its been almost 60 here going on 2 weeks some of the streets here in Fairbanks you almost need a boat to get down but i am enjoying the warmth and sunlight hopefully soon my cabin dream will happen so i can grow old in peace

    The sandwich looks good but we like an Italian sandwich with lots of shredded lettuce and mayo. Kinai is adorable even my son stop and made a comment about how cute he is. We have 3 big puppies ourselves. You have a wonderful day and God bless!

    When I moved to my home in very rural Missouri my roof leaked badly. The roof over the loft bedroom leaked so bad that it was damaging the floor on the main level. On the main level I had 4 ply plastic stapled to various places in kitchen / dining room so that all of the leaks could drain into one 5 gallon bucket. I had to sell off 15 acres to afford a steel roof. I have been here 43 years and it is still going strong. Hope you have good luck with your new roof and that it gets done quickly. Contractors can be iffy. Have been to Alaska and it was beautiful but very expensive to live there. Enjoyed your video.

    I love your pantry. And it's great that you can see everything at the same time. You don't have to hunt at the back for things. Here's an idea for a future episode.... Before you do your 6-month grocery haul, show us your pantry. Then, take us along as you buy groceries and run errands. Then show your haul (on a table or something) and then your filled pantry. Just a thought.... (Yes, I am re watching all your videos today!!!)

      He's a cookie monster! And he usually gets about 1/2 my meals (unless its spicy). I can just put my finger on his leg and he is calm and will fall asleep. Oho! He knows I am talking about him! He's looking right at me! Better go! :-)

    I noticed that when you were putting the food on the coals in the stove, that the glass on your fire view stove is soot/smoke covered. I was taught by my oldest brother if I want to get the glass cleaned up, to use newspaper dipped in water and then cover it with ash from the stove and then scrub the glass until the wet ash dries quite a bit and there's no smeer from the ash on the clear glass. It takes some muscles and patience but the end result is very clean glass .
    The foods you cook look delicious 😋😍👌 thank you 😊. Yummy 😋

      I tried that cool trick but maybe I didn't let it sit long enough. It seems to me that something else may have been used to clean the glass at one time maybe and it distorted the color a bit. I will try it again but I also like that it is a little covered so it doesn't brighten up the cabin so much at night. When I am trying to sleep! 🤣 The sandwich is amazing! My favorite sandwich!       @@AloneinRemoteAlaska you're right that if there's a different substance on the glass it's difficult to get clean. But in your situation of preference of low light, it's just right for you 🙂

    That view isn't going anywhere! Better to not over extend too much and wait til it's more doable. I had thought you were off grid. We do use those propane lights at the cabin. I love them! Nice ambiance! We also have 12 volt lights for quick light. Food looks delicious!

      I am hooked up to the electrical grid here. I’d call it a minor miracle but back in the day when the cabin was built, someone had the right connections to get it done.🤔 I will always be glad I have it but I only use it for freezers, lights and computer. Once I figure the best way to get solar (or wind) I will do so for sure but at least its not something I have to do now. Gives me some breathing room. But the propane lights kind of scare me. Something about my fear of propane I will need to work on for sure! 😁 Thank you Sue!

      @@AloneinRemoteAlaska Breathing room is always good! Funny! We use propane at the cabin, at home at our base camp house and in the RVs. I didn't grow up using it, but I sure love it now! I have a propane stove in all our 'homes'. At our on-grid home base, the power goes out quite often as we are still out in the boonies. It's nice to still be able to cook when that happens. The propane lights just take getting used to, I think. I also use coal oil lamps at the cabin, but more for that cozy feeling. Not easy to read by. They give the same sort of light as candles, but I have a very silly cat that has already burnt her one set of eye brows off chasing little bugs attracted to the candle flame., so I only burn candles that are in jars now. Are you close to Valdez? We roadtripped Alaska years ago, with 4 kids in a truck camper and visited there So pretty!

      @@LittleCabinintheYukon I use butane to cook sometimes and I am not afraid of that! 😁 No idea what it is about propane! 🤔 I do plan on getting some oil lamps though. I do like that ambiance! And its good back up lighting. I wouldn’t say I live close to Valdez but I did do a video about my trip there. Episode 25. When I went there they still had a bunch of snow! Nothing like your trip!🤣

    You should use bungie cord of some type to secure the things like jars on the shelves. I was in San Fransico Quake and trust me, better safe than sorry. Love the cabin and the views are beautiful. Love things you cook. I lived 15 minutes as the crow flies from center of quake. We could barely walk, and even drawers opened. Only lasted a few seconds but walls moved even on foundation and cracked. My friend house split in half. Her fireplace was no longer. They were able to fix it accept the fireplace. My place they did not do anything just left it like it was. Windows broke too. I had a few that cracked and was replaced. For your safety and cost put some kind of cording up. Or wood. Just think the bungie type of cord or short netting might be cheaper and easier to work with. If you do not it will be a big mess. Remember you have aftershocks some almost as strong as the big quake. Also, run risk of the big one being a pre-quake. Peace! Hope I do not sound bossy but have been through allot of earthquakes. I learned to secure everything. I used puddy for nic nac type stuff. We bolted water heater because it also busted in one, I was in. Flooded my whole house. You do not pick when they hit or where you are at. So better safe for a few dollars.

      Alaska get more earthquakes than any other state! I definitely worry about them! Bungee cords will be installed this summer 100% guaranteed! When I have my root cellar shelved out, they will have bungees or a wood lip and the shelves will be attached to the ceiling. Oh and the earthquake putty for sure!     Just found your channel yesterday and am really enjoying your videos....cutest dog ever ! ...Alaska is my favorite state...you have the perfect place to really live life....I live on 13 wooded acres in rural Ky so nowhere near as remote as you but still out away from people with lots of wildlife....nothing dangerous though .. just deer...wild turkeys...coyotes...foxes etc....
    Looking forward to watching you fix up the cabin and all the beautiful things Alaska has to offer.

      Oh yeah! The forest after rain! Perfection! I live between two big rivers. I can only hear them in winter before they freeze up (after leaves have fallen)Took me awhile to figure out what that noise was 🤣 But rivers don’t make noise! They have a relaxing sound. 😁

I have plenty. :-) Living in Colorado I saw snow all the time. Living in Alaska, I saw more snow this past winter than I had my entire LIFE in Colorado (slight exaggeration) :-) I honestly could get off the plane in Australia and just melt. You have heat in Australia that should be called something other than heat! I am definitely a cold weather gal! Well its awesome to have you along for my adventures here!       It’s really is extreme here. I’m near the coast so temps are moderated. I originate from central Nee South Wales and I grew up with 40+ in summer but -3 in winter. It’s Autumn now and we are Ave 10-18 degrees. Beautiful. There is snow during winter in the high country but I tend to head in the direction of the coast. I follow many homesteaders all over US including Simply Living Alaska and now you.

    Just looking at all that wall to wall Snow, Ice, Cold and more bloody snow makes me shiver, But I respect your decision to chase your dream and I sincerely hope you enjoy every moment of of your dream, there will of course be setbacks but it is the way you handle them that gives one satisfaction ... do not dwell on the problem ... find a solution ... install it ....Move On.
    You have a great Companion/Mate there in your Dog.
    This is Autumn here Down Under(17/5/2022) and our temps are dropping, today has only been 17oC and I am getting toey because winter is about 6 weeks away when temps will be a most uncomfortable ave of 14oC with nights touching ZERO ... That is when my sheets get Magnatised. And no I am not spelling words wrong, rather being born in the U.K. English is my first language so I do not speak American English ie the Black thing round a Wheel is a Tyre - Tire is fatigue.
    Once the Winter is over our temps start rising so by Christmas it can be +40oC which is when I get going and I am 86 and dangerous. Ha Ha

      Yeah that balcony is mandatory in my book! Once the roof goes on, that pitch will do away with my viewing spot. Finances will work out eventually, just take longer now thanks to our “elected one”🤫. But no more sleepless nights wondering if my roof can handle the new snow load!     Its nice seeing the lumber start arriving for your project but it will be even better watching the piles disappear becouse that means the work is getting done and finally you'll have a solid roof over your head. I couldn't imagine building right now with the prices what they are but It needs to be done. Good luck I pray it goes smooth for you.

      I’d say about 1/3 of the projects I wanted to get done had to be put on the back burner because of lumber prices and fuel. 🤨I do have to pay his fuel to run to the dump, drive to my property and back home on the weekends! And he drives a huge Ford F-350 or something like that. It is what it is and no point complaining! But a new roof was mandatory before winter. This past winter was kind of scary at times! All will go smooth! I mean what could possibly go wrong 🤣 Thank you!

    I can tell your happy seeing the materials arriving and you will be even happier when things are moving. My dog Aurora is the same way, she doesn't like strange dogs coming on the property. That sandwich looks mighty tasty, I love halapenos but, I just found out I have a stomach ulcer and have to regulate my food intake. It sucks, I like hot. I can hardly wait for everything to start happening. Great view.

    Very smart to get those layers of heavy old roof off of your cabin also it looks like they will be adding proper rafter support construction under the roof and insulation as well maybe next some new windows and doors to contain your precious heat during those long winters , great job thanks .

      My roofer was on a short list of highly recommended roofers. And the only one that responded to me because he specializes in remote properties. None of the others even responded to say no thank you! 🤨My front door and new back door will be wood doors. The arctic entry door will be the same solid wood door just made to be used easier. My old front door will be repurposed as the door to the future balcony. Balcony will only be accessible from the second level of my cabin. No stairs going up to it from the outside. The roof will be lighter and stronger! Thank you Mike!😁

    Awesome video! Loved it. Yes, there are earthquakes there, mainly smaller ones that occur daily, 24/7 - but not so much that you'll feel them and some large ones that do occur anywhere from once a year to every couple of years or so - that you will definitely feel, that will shake your shelves and house pretty good. Might consider putting a inch or two wood spill railing on your pantry shelving? I've been there when the large quakes have hit, ground level is not too bad, upper levels can be pretty scary, but they don't last but 30 + or so seconds. But its possible that you might be in a area less affected? Will try that sandwich- it looks delicious! Best wishes, always.

      I watch the earthquake tracker website and can see all the quakes that happen here daily. Absolutely amazing. When I have heard other CZcamsrs taking about feeling some quakes, I can see them on the tracker but I have yet to feel any. (Maybe) There have been a time or two that it looked like things were shaking but that could have just been a lack of sleep! 🤣 I know the area I am in felt the 1964 earthquake but I don't think it caused any damage here.     🔨😆🪚 I'm happy for ya, I know that you're stoked about it , sheesh that pork looked amazing ,I'm not so sure about the German pate' stuff? I never tried it before, but all in all it did look tasty..
    Yeah if that was indeed a bear track, it's a biggin...during the daytime go out and start a fire ,make a pit...let it burn ,use all the dead fall that you have lying about, when the bears smell it, their instinctual nature should make them head the other way, anywhere but around there... oh and them shelves...I think you're right, it's definitely shrinkage, but here's a quick frugal solution, an eye hook on each end with either a bungy cord or some elastic string of some kind ,strung across the middle if the shelve heights...and wallah! Problem solved 😉 congratulations on the progress thats about to take place, oh and, the scraps from the job,yeah, you keep them...you paid for em' and dearly I'm sure.. 👍you will incorporate them into your eagles nest room, one way or another...I'll draw it up for you..

      Hey Mike I don’t think the lyrics to that song are correct! 🤣 Hilarious! I think with all the noise about to happen as they replace my roof, bears will be staying far away! And my fire pit is buried by plywood! 😁 But I do plan of keeping everything “extra”! For what I paid for these upgrades, I’ll be collecting loose nails all around for later use! I was planning on putting something on the shelving like a ridge lip but since everything kind of sticks out (sometimes a lot) I think a bungee cord would be a better option. One pesky earthquake and I could lose a tidy sum of money!😳 Send me the drawings! I have not settled on anything other than it has to have a roof and walls! Most likely will build a sauna/shower under it. Thank you Mike! 😁

    I watch your videos in awe. You are such a unique & interesting person. I would never ask about specific numbers but to do this I'd think you'd have to be financially well off to a certain degree...not to mention quite healthy. I can't imagine how much planning this would've required to get going, not to mention the thinking ahead for your needs from day to day. Would you say you're quite good at planning & anticipating what your needs will be? Im sure with time it probably becomes easier.

      Ahh well thank you kindly young Padawan! Wealthy? No. I wish! But remember I had to sell my house in Colorado to buy this property and I also knew to save enough to get a new roof. Many of the additional projects that are being done had to be paid as they were completed. It is a struggle to pay for everything and still plan for the firewood delivery and the 1-2 big grocery hauls I will need to do to get ready for winter. All of this so far has been based on necessity mostly. The cabin roof would not have survived another winter. Stronger front door in case of bears. And of course the firewood and food. All the other projects will get done based on necessity and I predict this will all take a 3-5 years to complete. Unless my CZcams channel explodes! LOL! Thank you so much!

    Re: pantry tour and shelving support. When you showed how the shelves fit I thought you said "...either they weren't cut to size, or there was a lot of drinkage... " and I started laughing because I've spent a lot of time around men with chain saws and robust "drinkage." Oh... SHRINKAGE.

      LMAO! A gal with a chainsaw would have made it fit perfectly BUT would have taken a lot longer to get it done! 🤣 And there sure could have been some drinkage involved! But hey! At least it works and the shelves are fairly even at that! 😁Drinkage had to be involved with the spray foam chicken coop though 😜

      I'll have to keep an eye out for the coop - but what do chickens know - as long as the foam keep out critters.

      @@itsgettingold I showed it in Episode 24. Basically all the structures on my property in that video. I’m pretty sure I would not have used a chainsaw for that project though. You just don’t get do overs on a support beam!

    Keenia is such a sweetheart. That sandwich looks great and I don't think my chip and marmite sandwiches can compete.

      I have heard of marmite but have never tried it. Now I am curious 🤔 And yeah that roof has to go! It could have made it another year or two but the heavy snow load made for some interesting nights at the cabin! 😳 Once the roof is replaced I will have a bunch of extra bowls and pots in the kitchen! 🤣 And Kenai is a sweetheart and a cuddler! Oh and he snores really loud too! LOL Thank you!

    Well my first encounter w/ your channel. I too would be in your situation. But alas my wife's health is not good. So we live on a large island on the Great lakes in MI. There's probably 30 other houses. CROWDED. We are 70 years of age but I could sell the house, boats etc., and move to Alaska. So instead I'll watch you as you progress in your dream.     At first I was worried that your contractor was going to need a boat to haul in your materials. I was noticing yesterday that the ground is thawing in some places and absorbing the melt. That means less sloshing.

    I have never had Banh Mi, never flown,and get few weekends off from work, but I have had Braunschweiger! I know all too well about being recharged by nature.       Hello Charles! I am very excited to get this roof replaced!The craziness I went though this past winter (which I will talk about in a future video) in some cases where actually scary. 😜I think the roof (as is) would completely collapse in another 2-3 years. Since this is my first spring in Alaska it was good to see where all the water pools so I can try and fix that next spring. Almost could have kayaked down the drive! 🤣That sandwich sounds really yummy! I would have sat down and joined you and your gramps for sure! 😁 Thank you Charles!

    Yup, I am definitely still at the "Spending all my time dreaming" part of my life. It's a part that seems to be endless. The sandwich did look very good though, especially with those peppers and pork!       Hey Colin there is nothing wrong with dreaming whatever life you are wanting to do, just take that leap! It’s so worth it! The sandwich was awesome! Verified by Kenai 😜 I am very excited to get this roof done and some other projects! So many projects, so little time! Supposedly the roofer says he will be able to replace the roof in sections! The three main ridge beams are still in good shape. Either way there will be a time when I will be working on my computer and be able to see blue sky above me! 🤣

    Awesome to see the change. The sandwich looked amazing!! I'm pescatarian and love Vietnamese food also. I'd make this sandwich but use beets instead. I've made a video or two on my beet sandwiches. If you're interested just type in beet sandwich in my video section. I will say this, I hadn't start pickling yet at the time but the pickles would add so much to them.

      Isn't that view incredible? Once the roof has been replaced I wont get to see that view from up high until next year when the balcony gets put in. The solitude is why I chose this life though.     Yes I totally understand why you just loooove your cabin. It’s lovely & cosy. You have picked an excellent spot. The views are to die for. Melting snow creating swimming pools! WOW what a driveway, just beautiful. Must be so relaxing to walk down. You have done good. I feel the same, dreaming my life away it seems. I travel a lot and have had similar thinking like you. “Ooh that place looks good. Would love to live there”.

      You know I can spend almost an entire flight just looking out the window and wonder. I am so glad I found this little spot of perfect! I can deal with the temporary swimming pools and even the mosquitoes but not so much neighbors or traffic! 🤣 I do enjoy the walk down my driveway. I have to be armed to do it but once the trees start to leaf up that walk (or drive) is so peaceful! Sometimes I have to pinch myself! 😜 Kenai is Scottish. He finally told me. I refused to buy him a kilt though! As for the strange noises, I do still hear them. Many fantastic commenters have explained some of the noises and I agree with them. I actually like the noises I can’t explain too. Nothing is scary just interesting. Now the orbs of light that I see in the trees at night are still baffling. Thank you Bernadette! 😁

      Thank you Lisa! My area of Alaska gets more than its share of rain and it is spring. My fear is obviously heavy rains while my roof is being replaced.😳 The Banh Mi sandwich is absolutely delicious though! 😁

He does not like the cold does he?! 🤣 Maybe we will have to start a channel for Thor and Kenai! 🤣 I do wonder what it will be like to be working on my computer and look straight up and see open sky! 😜 I’m really anxious for this to be done! But I don’t have to tell you or Jenny that! 😁 Looks like you two will be done this summer!

    That looks delicious.
    I've been doing an open faced sandwich....
    Slice of French bread, garlic confit, mushrooms ( pre fried in olive oil/ butter combo with salt and pepper) then topped with grated cheese and baked.
    I ended up with 22lbs of garlic so I made garlic oil, garlic confit, toum, and a lifetime supply of garlic powder....I'm thinking that I should have made more confit and toum .
    Well there's always this year's harvest and I won't need garlic powder, lol.
    Happy to see that your roof will be fixed soon, I'm going to need to replace mine ( thankfully only the shingles) next year.
    This year I'm replacing all the boards on my deck.....very thankful that my dad was a carpenter and taught me to do both.

      WOW that’s sounds yummy! You made a lot of good stuff with the garlic though! I used to use garlic on everything! Then found that I may be allergic ☹ I still can’t resist it sometimes though and just cook with it and accept the reaction! Just tastes so good though! I’ve seen shingle replacement get done in one day in Colorado! Amazing how fast they can reshingle a roof these days. Replacing deck boards is fun but only after you get the old ones off 🤣 Such a great feeling to sit on a new deck though! Not sure why 🤔
