    Maybe it's a southern thing; I don't know, but we like to take canned salmon and make a Salmon Stew with it. It's a simple recipe but so delicious on those cold nights. I peel and dice up several nice size potatoes and boil them until tender and then drain them. In a pot I will add the cooked potatoes, 2 cans of salmon, a stick of butter, salt and pepper, and then fill up pot with milk. Heat this all up until hot; stirring occasionally so the milk won't burn. Once it's ready to serve up in bowls, we then like to take saltine crackers and then crumble them up and put over our stew in our bowls. Like I said, it's simple, but it's so tasty. I can't even image how good it would be with fresh caught salmon.

      Southerner here as well. We grew up on this recipe, only we didn't put potatoes in it and we added evaporated milk or heavy cream (whichever we had on hand) before finishing it off with regular milk. Made our oyster stew the same way.

      @@ASimpleLifeHomesteading So, yours was just salmon and the milk/cream? I've never heard of if made this way; that's interesting. Everyone I know that makes it puts potatoes, but that's not a lot of people. Even though I live in the South there is still a lot of people here that have never heard of it or have never tried it. Oyster stew is made the same way, too. We love it, my husband will also add cheese to his. LOL But we love adding hot sauce to it. Looking forward to cooler weather to make it.

    Eric and Ariel, we are big proponents that YT is at its best when information is shared for learning, rather than just entertainment. Of course you have both, but these episodes where you share some knowledge and ideas make this literally our favorite homesteading channel.       You can do it, give it a try and you'll never look back. It's really super easy and so worth the trouble. I've been canning all day, kidney bean, great northerns, and beef stew. When I don't have the time I use these to put a healthy home cooked meal on the table in under 30 mins.

      I'm a scared of them person too. 😄 However, I got a Carey Electric pressure canner a few years back and have been canning up a storm. It's something you might want to check out. It was an easy way for me to get going and learn what I like to can. They have built in fail-safes so it can't over pressure and will shut down if something goes wrong. They do small batches... 4Q or 5P, and can run up to a full 15 lbs so you can use them even at high altitude. They aren't cheap, but they also have browning, slow cooking and open cooking features so they replace several appliances. That was a big space saver for me with a small kitchen. Also, you can do any Instapot recipe in them. This year I have a big standard Presto, and I'm at least pulling my big-girl pants out of the closet. We'll see how they fit😬 Daunting! LOL But I'm still loving my Carey for when I get a few extra pounds of meat on sale... a pint is a pound, so if I find a sweet deal on chicken or something, I drag home five extra pounds and do a 5 pint Carey load. I also double batch things like beans, chilis, soups and stews and run those for grab and go meals.

      I didn't have anyone in the family to show me how to pressure can but I just read everything and watch RoseRed on you tube. She is a retired scientist and goes into detail on how to safely put up food.

      @@kellyhawes9293, she is a good teacher. I also follow her too. She is still working full time as a pprofessor. But here is where I go for flavor and from the heart of their canning. They love to eat and love to test out all sorts of flavors. The first thing I made of theirs was their mustards. So good!

    My absolute favorite way to eat canned salmon is in a cream cheese dip. Whip 8 oz of cream cheese, add 1 tbs of lemon juice, 6 oz salmon, garlic salt, garlic powder, black pepper, salt to taste, and fresh chives. Mix it all up, form it into a ball... and top it with crushed pecans. Pair with your favorite crackers and it makes the absolute best dip ever.

    My husband and I do canning together. We enjoy working together and its always fun to see what we come up with. Some stuff we love, some we throw away, but being together is the best part. Oh, and we are 73 and 70 yrs. lots of canning over 50 years. Maybe our marriage as been good cause we can together. 😀

    I learn so much and really feel gratitude I found your channel.
    Learning how to prepare meals with preserved food (especially expensive proteins) with simple recipes
    helps to justify buying in bulk at Costco meat, fish, poultry dept.
    Especially for those financially struggling: loss of jobs, young families, single parents, welfare, soc. Security....

    Recipe idea:
    Try salmon quesadillas! Top tortillas with canned salmon, green chilies, Monterey Jack, green onions, sautéed peppers and onions… fry up and serve with yogurt/sour cream and any of your amazing salsas/kimchis!

    I love that you made a point to check the manual for your specific pressure canner. So many people on many of my Facebook groups are always asking how long to process different foods, I tried for so long not to comment but eventually I started telling them to please check their manuals.     My mom makes salmon ball every year for Thanksgiving and Christmas. It was her mother's recipe. It's 1 large can salmon, 1/4-1/2tsp liquid smoke(you probably won't need as your salmon is already smoked) 2tbsp finely minced onion, 8oz room temp cream cheese, 1tsp lemon juice, 1tsp horseradish, 1/4 tsp salt.
    Mix all together day before serving, form into ball and wrap in plastic. Place in fridge overnight and enjoy next day with crackers(Ritz are the best).

      Right that's about the same time I started watching them it's very cool all the things that they do and the amazing things they never fight and seem to like the same thing out of life. If I and my Husband we're younger it could have been something we would have done but I'm 63 and he is 72 and neither of us like the cold plus you have to go through Canada and we don't want to declare our gun's we are 1% bikers living in Arizona.

    If I was still a student, I would argue for getting credit for watching your "how to" videos, they are so good. It's amazing how many meals you canned today from your catch.     My son lives in southwest Michigan by the lake. I live in Arkansas and go for visits often. We catch coho salmon and take it to a local processor to smoke. One time we made salmon dips, we called it a dip off. Who can make the best dip? Cream cheese, smoked salmon, and anything else. He edged me out with a cream cheese, salmon, roasted red pepper, garlic, parsley, sesame seeds, secret spices haha. You get the idea. Try dips!

    I make salmon patties. I start by sauteing diced onions, garlic, red bell pepper with olive oil. Then I add old bay seasoning, dill, egg, corn meal, and salt and pepper into the salmon. I also make a homemade tartar sauce to go on top. Yum and very delish.

    Another great video. I've watched your previous canning videos but your instructions tonight were clear, concise, and accurate. Sorry you has a couple of failures but seeing those in reality is so much better than reading a manual. You guys are a great team too!     Very good that you went over all the safety items. I have canned venison and it was delicious but followed directions. Thanks, Ariel, for the tip on the vinegar to help reduce the fogging on glass cans.

    Have you experimented with actually soaking the wood chunks? We do that to both create more smoke but also cooling the temp.

    back in the day 90's I had a friend Joe Pepetti that had a fishing boat and every year he would go up north to fish for lots of salmon. All the boats would follow he and his brothers boat and fish where they fished. He wold send the fish home and he would make pickled salmon that would knock your socks off. I miss Joe....miss the pickled salmon. I think I will give it a go!

    That looks so good. My favorite is salmon balls. Same as patties but roll them into balls. Serve with teriyaki sauce, or Alfredo, or tarter. I use dried mash potato flakes, egg, onion and celery. Also, roll the outside in dried mashed potato flakes for extra crispy.

    Wash the entire jar in warm soapy water, especially the canner with the broken jar. Your jars won’t be so cloudy. They will be beautiful. Good job.

    I have a way to evenly lawyer the salt and sugar. By a hand squeeze sifter, like you use for flower. You will hear a nice even layer with a couple of squeezes.

    I love watching you prepare food to be self reliant. Why not mix the salt and sugar together then sprinkle it using just one container. That way there's no guessing on even distribution. Just a thought.

    Salmon spread one can canned salmon drain mash up ad mayo little mustard salt pepper sweet or dill Pickle a little onion mix slather onto a sailor boy cracker. A Sunday afternoon favorite at home.

    If you haven't yet, you have to try it on pizza with whatever fresh veggies you like. I do it with home jarred tuna in oil that I jar with lemon, and I mix the oil with fresh garlic paste to season the crust.

    I used to use vinegar in my canner but when it started causing the lids to rust, I stopped using it like that. If I want them to be clear, I will wash the jars before I use them in the dishwasher with some vinegar added. When you go to open a jar of garden goodness, you don't want to have to struggle with a lid that is rusted on...

      I believe the white film that can develop on jars is due to the minerals in the water. But good to know about the possibility of rusting bands. Thanks!

      I usually just wipe the jars with water and a tiny bit of vinegar after I can them to avoid the rusting.

    This is the best smoked and canned one I have seen. I really like that you did both fillets and chunks. It is that time of the year, so far we've got jams, jellies, pickles, mustard pickles, salsa, and sauce done. Now it is on to tuna, with salmon to follow. Been one of the best years of harvests that I have seen in the PNW.

    just curious, since I am assuming it gets pretty cold at night in Alaska - were you not concerned about letting the jars sit outside overnight after coming out of the pressure canners? I thought drastic temperature changes could cause issues with sealing. Your very detailed instructions will be very helpful to new canners out there - I have 25 pounds of ground beef to process tonight, but won't be doing it outside :)

    French Canadian salmon pie mashed potato just 2,fork mashed no liquid 2 jars of salmon 6 pats of butter ,salted herbs ,then make a pie two crusts,ohhh leave the liquid of the salmon dont drain it

    My brother used to guide salmon and steelhead fishing trips on northern California and southern Oregon rivers. Some of his customers just wanted pictures..... Either way every thanksgiving or Christmas he would bring a paper grocery bag all oily and easily halfway full of smoked fish fillets sliced about half the width of yours. I can tell just by looking at those smoked fillets you did it perfectly!! OMG I'm hungry for smoked salmon now!!!

    I know most people toss the lids after opening a jar and using the contents but I was taught to wash the jar and lid after using the contents, flip the lid over and screwing on a band to keep the empty jar clean until next canning season. I admire your education regarding your process. My parents grew up during the Great Depression and many of their canning skills were learned at that time. One of my uncles used to smoke the salmon filets and without canning, they were kept in the unheated attic in cloth bags (maybe cotton pillow cases). Prior to eating, he would remove a filet and the meat would peel from the skin in thin sheets. Have you ever prepared fish that way? Regrettably, he died before I could learn all elements of his process and my mom didn’t know.
