Ingredients:
For the Meatballs
1 pound lean ground beef
1⁄2 cup long grain rice
3 cloves chopped garlic
1⁄2 small chopped onion
1⁄2 cup water
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
Making the Sauce
15 ounces tomato sauce
1 cup water
2 tablespoons Worcestershire sauce
2 tablespoons sugar
2 tablespoons chopped parsley for garnish
Additional Notes:
Feel free to customize the seasonings in the meatball mixture according to your taste preferences. You can add herbs like parsley, oregano, or basil for extra flavor.
For a healthier twist, you can use lean ground turkey or chicken instead of beef.
To ensure the meatballs hold their shape while cooking, it's essential to thoroughly mix the meat mixture and allow it to rest for a few minutes before shaping them.
If you prefer a spicier tomato sauce, you can add a pinch of red pepper flakes or a dash of hot sauce to give it a kick.
Serve the Penny Pincher Porcupine Meatballs over cooked pasta, rice, or with a side of crusty bread for a complete and satisfying meal.
This recipe is perfect for meal prep or batch cooking. You can make a large batch of meatballs and freeze them for later use. Just thaw them in the refrigerator overnight before reheating.
Feel free to garnish the dish with grated Parmesan cheese and fresh herbs for an extra touch of flavor and presentation.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the microwave or on the stovetop for a quick and delicious meal.
Don't be afraid to experiment with different ingredients or add vegetables like bell peppers or spinach to the sauce for added nutrition and flavor.

Oh my goodness, my Mom would make this all the time. She was from the depression era. I think she used tomato soup and served it with fusilli pasta, We loved it as kids . Yes we did call them porcupines. 🍽
Yes, it’s an old recipe. Love old recipes. Something about them. You can use soup, I just find the water and tomato sauce cheaper.
@@TheCooknShare and tastes better too
So easy to make, that's what I love about your recipes.
Hi Mita. They are really easy. Thanks so much.
Sorry, Dave!! I'm an hour late, it's already 8:29am... But; my Nonna, and parents always made this!!! We now make this over pasta. Or in Italian meatball soup. Great recipe!!!
Shame on you being late. LOL. That’s okay. Yes, old but so good. The recipe I mean. Great over pasta or mashed. Thanks and have a super day my friend.
i used to make these when i was a new wife. it was cheap and so good. my husband walked by and saw the video and said "why don't you make that anymore." i honestly don't know why i stopped. they're so tasty.
LOL. Kind of like getting caught. They are good. Hope you make them and you guys enjoy.
Oh my! I remember making these for my family as I was raising my children. They are so delicious, and so versatile thank you for this recipe. I definitely will make those and and excited to have them again.
Yes, so easy and inexpensive. I find anyway, Lynne. Hope you enjoy again. Let us know.
One of my faves
Mine too. Thanks so much.
This is my 17 year old sons favorite meal!

Oh yummy Dave they do look delish. Thank you
They are good, Wendy. Hope you give them a try.
Fantastic and easy and delicious! I made this 3 times last month. ❤
It is really. So glad you enjoyed.
Quick and to the point, Nice Job. The only thing I would add is some fresh cut carrot sticks, about 1/3 and inch long and as thin as you can get them.
Thanks so much. Love the idea of carrots. Hope you try it.
This is a Keeper!
This is 'Eat this over the stove' good!
Thank you for another great one!
It is really a keeper. Love that saying. LOL. Hope you whip a batch up and enjoy.

It is today's supper!
Have a funfood day/weekend!
Nice recipe Dave!!! Tyfs God bless you
Thanks. It was so good. Hope you give them a try.
Made this recipe today. Kids and husband approved. Served it with mashed potatoes and salad.
Enjoyed having leftovers. Great way to stretch one pound of ground beef. Used two pounds yesterday to make burgers and only had one little patty leftover versus 10 mestballs leftover! 😳
Yum. Sounds so good with mashed and salad. Great job. So glad to hear everybody enjoyed. Keep cooking and thanks for the comment.
Sounds good to me too I'm going to start a porcupine trend on this end 😁 my friend you never dissapoint. 🎉 enjoy the rest of your day
LOL. I think it would be a good trend. Hope you try the meatballs my friend. Hope all is well there and have a great day.
Tried this for dinner last night. SO GOOD! The only swap I did was ground turkey for the beef. This is going in the rotation...
Fantastic. Love to hear feedback like that. Keep cooking and commenting.
I use this recipe to stuff peppers and tomatoes.
Great idea. Thanks for the tip.
I have never add rice to my meatballs. Time to give it a try
It is really good, Siew. Hope you try it and enjoy.
these are REALLY good with mushroom soup instead of tomato sauce
I agree. Hope you try it and enjoy.
Dave, very nice recipe, I've never heard of that dish/recipe nor have I eaten them, but yes on us & the girls as we like meatballs. You will like this, since I have never heard of this dish & being from Kentucky, I thought you were going to make the meatballs out of porcupine meat, lol , seriously, because we eat a lot of things that city folks don't eat , I've probably eaten every meat here except we do not eat skunks( a given) birds of prey ie: hawks, owls , falcons, or scavenger birds like buzzards etc...keep your stick on the ice pal
Hey Steve. Actually, I never thought of people thinking that. That might be the case though. Good point. I know different wild meats are eaten. I've had bear and beaver, rabbit, etc. But I've never had porcupine. Maybe at the lodge. LOL. Us country boys forget things like that. See you at the next meeting.
@TheCooknShare Dave, I agree, & I have had all the meat you just mentioned. Odd fact, the best marinade for black bear is coke cola, that brand only as it tenderizes the meat & adds a little sweetness, & bear meat is already a little sweet, 24 hr marinade on that, see you at the lodge pal
I agree, Steve. Coke is best. It does really break down the meat. Let's try this at the lodge.
Love these "pork-u-pine" meat balls.
They were so good. Hope you give them a try.
That sure looks good. I also heard that porcupine meatballs are a Metis dish. Cheers, Dave! 👍🏻👍🏻✌️🇨🇦
Oh really. I didn’t know that. Interesting. You have a great day too, Dwayne.
Looks like a yummy variation of the Oklahoma onion burger. Born out of the depression.
Kind of yes. I have to make up an Oklahoma burger. Great idea. I might film it. Thanks for the comment.
Yes this looks very yummy 😊. What could you have with it ? Thanks for sharing 😁
It sure is yummy, Maggie. I would have mashed and some beans or a salad. Hope you enjoy.
Looks good. Love your voice.
Thanks so much. They were really good. Hope you give them a try.
@@TheCooknShare I will and thank you for the recipe.
Your recipe looks so good!! This might sound like a silly question 🙋 but, can you use frozen meatballs? I find cooking difficult, I have CP. I was going to take some meatballs, add some BBQ sauce..some seasonings, Mrs. Dash, soya sauce, & some rice 🍚 but, you dish looks so delicious!! 👍 👍 I really want to try this..❤💕
😍
Yes of course! I think that sounds good. Great ideas. Let me know how they turn out.
Ok, so..I added the spices, seasons..some ketchup, garlic powder..soya sauce..some cinnamon.
So, I basically ended up with BBQ meatballs. I had a side dish of chicken flavored rice and a salad..it was bad..but, I really am going to try and make your Porcupine meatballs
What other alternative product should I use other than Worcestershire? Is soy sauce fine?
Yes, I would use soy sauce. Hope you enjoy.
So about the rice. When you add that into your meat is it cooked or not cooked at that point?
Hi Dale. It’s uncooked. You can add cooked, but it might be a bit mushy. Hope this helps.
