- Old Fashioned Porcupine Meatballs in tomato sauce make a delicious and economical family meal. This recipe has been popular since the Great Depression when it was developed by using staple ingredients of ground beef and rice. These meatballs are super easy and hearty!
Porcupine Meatballs
Ingredients
1 pound ground beef
1/2 cup uncooked white rice
1/2 cup water
1/3 cup finely chopped onion
1/2 tsp garlic powder
2 (8 oz.) cans tomato sauce
2 Tbsp brown sugar
2 tsp worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
Instructions
In a mixing bowl combine ground beef, rice, water, onion, garlic powder, and salt. Mix until everything is well combined. Form into balls and place in a 9 x 13 baking dish. In a separate bowl combine tomato sauce, brown sugar, worcestershire sauce, pinch of salt, pepper, and stir. Pour over meatballs. Cover with aluminum foil and bake in a 350 degree oven for 1 hour.

I make them with 1 or 2 pounds of ground beef, 1 cup-ish uncooked basmati rice, an egg, and a ton wercercercercershireireshirercercershire sauce.
Oh, and don’t forget the tomato sauce!
I also use a pressure cooker because that’s what I have on hand. I put the worcershiretercershireircerrershireshheruiree sauce in the balls and the sauce.
We also have them with rice!

I make these, but instead of water, I add a can of diced or crushed tomatoes to the meat. It adds just a little bit extra to it.
My college roommate used to make these and I wanted to make them for my kids. I followed your directions but the rice did not cook out. I think more liquid needed to be added otherwise the rice comes our crunchy and uncooked.

Ah yes... the ol' salt, pepper, garlic powder, Worcestershire & onion combo that made practically everything in the 80s.
Good for a dose of nostalgia, I suppose, but I have grown-up tastes now. I'll have to try a curried version of these someday.

Long grain rice is what my grandmother's recipe calls for. Hope that helps!

Mashed potatoes is what I like to eat with them.

I’ve never made them on the stove top but I remember my grandmother making them in pressure cooker on top of stove.
