Turkish Red Lentil Koftas | Mercimek köftesi | Easy Meal For Hot Days
If you have been wanting to try different foods, I highly suggest giving these Turkish Lentil Koftas a go. They are great for parties, very easy and inexpensive to prepare and loved by all. In Turkey these are called Mercimek köftesi or lentil köfte. They are traditionally eaten with lettuce and a squeeze of lemon juice. The recipe is pretty straightforward and I know will all love it.

Ingredients you need
1 cup red lentil cook in a small pot with 2 cups water
2 cups cooked millet
Salt to taste
1 tsp Paprika
3/4 tsp red chili powder
1 onion, chopped
1/3 cup parsley, chopped
1/3 cup mint, chopped
1/2 cup, chopped green onion (just the green part)
1 tbsp tomato paste
1 tsp pomegranate molasses (optional)
2 tsp ground cumin
Lemon wedges to serve

𝐓𝐨 𝐜𝐨𝐨𝐤 𝐦𝐢𝐥𝐥𝐞𝐭, put 3/4 cup millet in a frying pan over medium heat. Toast, stirring often until you hear popping and smell a fragrant, toasty aroma, for 5-6 minutes.
Meanwhile bring 1 1/2 cup water to a boil in a pot or kettle.
Lower the heat and slowly add hot water. Since the pan is hot the water will splutter a bit so be careful. Stir in salt and bring it to boil. Cover and reduce the heat, simmer for 15-20 minutes. Remove from heat. Keep it covered and let stand for 10-15 minutes before fluffing with a fork. It can be made 1 day in advance up to this step. Refrigerate until ready to use.

    Hi...just saw this today...but u know thyroid patients can't have soy or corn...so what could we substitute for these?

      I don’t know where you got this information. I am a thyroid patient but with physical activity and healthy balanced eating my thyroid dose has been reduced from what it was 20 years ago. You can eat everything in moderation.

      Thank you! Actually I used to cook in a traditional pressure cooker but the plus of having instant pot is that I can cook without having to keep an eye on the stove when I am away.

    Hi, can just steam the daal longer say 1hr 15’mins on high , and skip the sauté part?

      The saute mode on low is used to thicken daal. This is a technique that is used in Punjabi cooking. You don't have to pressure cook for longer time. The daal softens in 45 minutes and you can skip saute part if you are ok with the texture.

    Can u give a recipe for gluten free flour that doesn't contain soy or corn?...thyroid patients can't have soy, corn, gluten, dairy, tapioca etc.

      Who said thyroid patients can not have soy, corn, gluten, dairy, tapioca? I am on thyroid pill for the last 20 years. In the beginning the dose was higher but with exercise and healthy eating the dosage got lowered.
