Behind the dash is best. Get a gps that is powered by hard wire with a battery backup. Run the wire to where it looks stock. This means running it inside any lume, under factory installed zip ties, etc. As far as hiding the device you have to make sure you hide it in a spots that takes an extensive amount of work (that most would give up on doing) to get to it. Don't make it to where you can pull out the radio, or the tach, or behind the glove compartment door, and there it is. That's just making it way too damn easy. All my vehicles have a gps hidden on them that I personally installed. Will a sniffer find them? Oh I'm sure it will. But the average Joe and Jane don't have a device that sniffs these things out.
But If you wanted to be quick like last minute, hide an AirTag inside the headliner.
