Using my Tormek T-4 to Sharpen Kitchen Knives

  • With Thanksgiving only a few days away I thought I'd do a video on how I use my Tormek T-4 to sharpen all of my Kitchen Knives!! I know this is not a machine that a ton of people have, but I've been using this for years and love it, so I thought I'd share!!

      thanks so much ... learning how to use this machine has been a steeper learning curve than I thought it would be, but it's so great once you get over the hump

      I HIGHLY recommend this unit, yeah it can be pricey to get all of the guides, but it's so worth the price as long as you use it enough to get your money's worth out of it!! Thanks so much for the comment!

    For a 20 degree, set at 10 degrees. There are 2 angles being cut

    Nice job, especially since you do not use your "T" regularly. I am a 20+ year veteran with a T-7 ( big and green) and most every jig on offer and some I have made. Congratulations.

    Tip. Don’t set angle on angle finder. Leave it a little lose so when you set it on the knife the needle jumps to the angle you are set at now. Raise or lower the bar and watch the needle move

    Don’t pull back on the blade handle . Raise the handle. Does a much better job on the tip

    I have Tormek T-4 and all the jigs (except the ones for woodturning), but I have found that the quickest and easiest way for me is just to sharpen my knives by free hand. I have no problem doing that, because for years I have used japanese wet stones free hand to sharpen all my knives and tools. The result is just as impressive as with the jigs.

      @@thugbodiandw8864 Function wise, there is no difference. It is the duty cycle that differs. T4 has 30 min work/ 60 min rest work cycle, while T8 can work around the clock. The wheels on T4 are 200 mm, while on T8 are 250 mm and you have more options. It depends on your needs.

      @@sethplate7176 30 min constant pressure work, you do not have that constant pressure on the stone when you are sharpening, you can use the T4 for 2 to 3 hours without any problem.

    Have the chef bundle ? Also how sharp scan you Get these? I test buy if a 20 degree angle can shave hair are you Getting that level of share from your Tornek T-4

      I'm not sure what you mean by the Chef Bundle.... but to answer your question about how sharp can I get them, personally I have never taken them to the point I could shave, but I know for a fact it's possible to do it.

    Hi,Does the angle master gives total angle of edge or half of it.Does the tool give bevel angle or edge angle?

      Thanks so much for the comment and the questions unfortunately I am by no means an expert on the Tormek system and would have to direct you to their website for detailed questions like that. My best guess would be it’s the total angle and the edge angle cause this system was not designed specifically for knives but rather for chisels and Single edge tools!! but that’s just a guess!!

      It's the one sided angle. At 20° on both sides the knife ended up with a 40° edge. It's a good angle for most EDC knives and kitchen knives for harder tasks (like bones). For the chef knive, I would try 30° total or less. I'd try lowering the angle to fond the sweet spot between cutting performance and edge retention.

    One thing I'd recommend is when sharpening the tip of the knife, lift the handle away from you. Does this make sense?
    Also make sure your putting a bit of extra time into the heel, it gets the smallest amount of time on the stone so requires a bit more time!

      @@BigLousWorkshop yeah definitely, I'm using the T8, I've been hand sharpening for years now. I'm finding a pretty steep learning curve!

    Do all them jigs /knife holders come with the tormek?

      Sadly no, most places sell Tormek Bundles that have one or a few of the jigs included with the machine. But they are usually sold individually.

      LOL same way X-Box, Nintendo, and Playstation expects people to use theirs without including any games!! The Tormek may come with just the standard knife jig, but I honestly don't remember, I bought mine as a bundle that came with several jigs, and I've added to it over the years. They probably rationalize it by claiming that everyone will use the machine differently so they did not put any wasted jigs in with the base unit, or something like that. I agree it's very lame, but I cannot argue with the efficiency of the machine!!

      oh I'm aware... I dont do enough sharpening to justify the cost of a diamond wheel!!

    questions: 1. how long did you resurface the stone for you didnt tell anyone..
    2. im assuming you have to measure the dia as it wears down to set the mm on the gauge, how did you do it?.
    3..how high is your husky table?
    4. paper or tomato test would be great

      Answers:
      1. 45 seconds to a minute, the directions are well laid out in the manual
      2. yes, there is a ruler printed on the side of the machine housing by the stone that is a quick reference for monitoring the size of the stone to made adjustments to the gauge as it wears down.
      3. Oooohhh... good question... I had to go measure it... it's 32in high!
      4. LOL LOL... Trust me... they're sharp!! Paper tests are more about the skill of the wielder than the sharpness of the blade! And I did not have any tomatoes!!

      @@timherringbone2801 That was my plan, but I have not, as yet, had the chance to. But the machine can certainly be used in a portable fashion.

      I prefer this over belt sanders. Cools down the blade while sharpening. Not heat up the blade. Next week on my upcoming paycheck. Will definitely order this on amazon. Unless someone knows where i can buy this for a cheaper price?

    You need to keep the wheel moving when there’s water in there. Or else it will become Unbalanced. It could become dangerous to operate

      Yes, you're right, I would never leave it just sitting in the water for more than a short time, however you only really need to worry about that for the first like 5 to 10 minutes after you've added the water... once the stone absorbs enough to become saturated it's fine, at least for the few minutes that you're changing jigs and set ups.

    Get rid of the jig. Unnecessary, time consuming when sharpening multiple sized knives, and unless adjusted to a t, will fuck up your edges.
