Two tips. I remove the full-size leather wheel and reinstall and use the leather profile wheel to sharpen each tooth and gullet. Secondly, I color each gullet and tooth with Magic Marker to ensure I don’t miss any teeth and have achieved the proper angle for each tooth and gullet.

3:30 - I frequently tell customers that if you're going to cut themselves on a knife after I've sharpened it, odds are it'll be the serrated one. They're always the ones that catch me.
