Miataman, I enjoy your videos but when during episode 2 you unplugged the iac and the idle smoothed out it was obvious the iac was working and the ecu was trying to compensate for some anomalous input. I would have looked at ecu inputs and not started changing parts so fast. A good learning experience for us all and thanks for the videos.
My maf sensor simply broke. In search of the high idle i replaced the green temperature sensor, the Pcv valve including gasget, cas-O-ring. Cleaned the throttle body. In the end it was the airvalve at the air intake. Good fun to search and find solutions😉💪

Maybe water/coolant getting into intake manifold my Miata did that weird rev thing when I got caught in heavy heavy rain
not a MAF, its an AFM
On my 94 I've had really bad problems where the car will basically just cut off when I try to turn it on. My mechanic told me that the solution is to replace my engine wiring harnesses so I'm hoping that will work. The car will run with the MAF unplugged but if it's in then it just dies
Have you swapped in a different crank angle sensor yet?

I'm having almost the same issue! Did your solution work? My miata stalls out on a cold engine and I have to baby the throttle until the temperature gauge starts to rise up past the "C" and when the engine is warm and normal operating temperature. The car drives normal
