One of the last things I can remember my nana cooking for me is an eggplant sandwich. I did not like eggplant but I ate it. She was about 85 years old and I did not want to disappoint her. Well, it turns out I was wrong. I loved it. She never had the opportunity to make an eggplant sandwich for me again, but eggplant has become something I eat regularly combined with tomato sauce over pasta, in curries, and of course, as a sandwich.
Thank you so much for sharing this story with me! It's amazing how food can bring back memories and create new ones. I'm so glad you ended up enjoying eggplant after all 😊

Ciao! While grilling eggplant, it's a good idea to lightly brush the grill skillet with oil or to brush the eggplant slices themselves with a thin layer of oil. This helps prevent sticking and also adds a bit of flavor. However, you don't need to use excessive oil; a light coating will suffice. Enjoy your grilled eggplant! 🍆🇮🇹👨🍳

Sure thing! I love using 🇮🇹Aceto Balsamico di Modena IGP🍇 for the balsamic vinegar, and for olive oil, try 🌿Extra Virgin Olive Oil from Tuscany🌿. You can find them online easily! 😊👍

Wow, Vincenzo, you're getting famous on Uncle Roger's channel! Make egg fried rice next time. I think Uncle Roger's carbonara was pretty good, except for the MSG, which makes it not traditional, and I think it looked a bit dry. He should've used more pasta water.

Its very difficult to get quality eggplants, on most of them you see insect marks.
But anyways, you want to cook the eggplant to a such a level that it melts in your mouth, like cream.

Vincenzo made an amazing video 6 years ago but the way he prepared the rice wasnt like a risotto. i mean he didnt use butter and parmesan in the end and he boiled the risotto rice like any other existing rice. Well my question is arancine are made like the way vincenzo made them, or they are made from a classic risotto with the mantecatura stage at the end?
@@chrismp7387 As an Italian I can tell you that the way Vincenzo made them is already the right way. The classic Risotto with the “mantecatura” at the end, is made when you only make a classic Risotto. But for arancine it is not necessary.
we make eggplant with 'sambal' with a plate of warm rice... plus a sprinkling of fried onions on top
