- Eggplant Parmigiana has delicious layers of eggplant, fresh tomato sauce, basil, and melted cheese. There are variations of the dish that use bread crumbs and eggs, and everyone's family makes it slightly different. My mother shared with me her Eggplant Parmigiana recipe, which was taught to her by my Nonna Igea, her Mum. Although they may not be impressed, I did tweak it a little and in my opinion, made it even better. Hopefully, they would be proud if they tasted it!

My Italian mom is covert. I’ll make a nice sauce and she’ll casually say “it was good”. Then I’ll go for Sunday dinner and it’s MY SAUCE she made! We don’t discuss it all 😂.

Beautiful, this is my wife's favorite dish. The only thing I do instead of a colander . I use a baking sheet tray with a wire rack. After I salt the eggplant. 👍🏾👍🏾

I got a recipe 20 years ago from a wonderful Italian mother and this 98% the same. One of my favorites and definitely in my top 5.

The only changes that I prefer for my own is to use low moisture "scamorza", which is whole milk mozzarella that has a lower water content.
Also, coating the slices in an egg wash before coating with flour will.makeca better crispness.
Finally, adding some oregano to the sauce might be nice.

For extra crunchiness of eggplants, how do you feel about frying them like a German Schnitzle? Flour>Egg wash>breadcrumbs>pan. Very cute dance and amazing looking dish will try it.

I love mine with just pecorino cheese to lower the calories a bit but this is beautiful, well done! Tender eggplant and a savory cheesy tomato sauce can't be beat.

I make tomato sause with onion marmelades - slightly cooked onion cubes, they add that delightfull crisp.
And eggplants fully peeled, they are super tender

This is very different from what is served here in the Northeast US. Here eggplant parm is used as the filling for a submarine sandwich. I've never seen it served like lasagna. Looks delicious, I'm definitely going to try this.

Yeah, I'm definitely using parmesan. I want to like sheep and goat milk... But the flavor isn't quite right for me. I just have to stick with cow milk cheeses. But, I'm going to try the mixed cheese and breadcrumbs.
