We really enjoyed this as a dinner served with Kale Salad. I absolutely love eggplant and usually grill it outside in the summer. It was much easier to control roasting a batch rather than burning on a grill . Thank you for helping me make a perfect crispy caramelized new favorite.

I have to get some egg plants and try this recipe as it sounds like the one my grandmother use to use and I have been cooking them except we did it on the stove top and battered them in egg whites.
This looks really good, I love eggplant and usually bar-b-que 1/2" to 3/4" slices coated in french dressing like cooking steaks. This will be something new and tasty.

I made this & it was simple and delicious- I had leftovers so I mixed with (chopped) baked onion, cherry tomatoes, parmigiano cheese & (a little) plain yogurt with a splash of dry ranch dressing... WOW ❣ An eggplant parm salad I can eat HOT OR COLD! Terrific.

I used your recipe to give a crunchy to the eggplants dipping in eggs and coated with Japanese breadcrumbs the crunchy turned out very good

I love eggplant almost anyway it’s prepared this is so good this way, For me there’s no salt and nothing tomato I have to find or make other sauces if sny.and other seasoning’s for my CLD diet.
