  • EGGPLANT PARMIGIANA INGREDIENTS:
    3 large Eggplant
    ½ Tbsp Black Pepper
    1 Tbsp Salt
    1 cups All Purpose Flour add Salt & Pepper, as needed enough to coat eggplant slices
    5 extra large Eggs
    ½ cup Vegetable Oil
    1 lb shredded Mozzarella
    1 cup grated Pecorino Romano Cheese
    Chopped Fresh Parsley
    Sliced Provolone Cheese (optional)
    Sauce/Gravy:
    ½ Onion
    3 cloves Garlic
    3 Tbsp Olive Oil
    2 qts Crushed Plum Tomatoes
    4-6 Fresh Basil Leaves
    1 tsp Oregano
    ½ tsp Black Pepper
    1 Tbsp Salt

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera?
    Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
    Does Gina read the comments?

    Everyone who has a grandparent that can cook some amazing dish, please record it like this for other people and future generations. This is genuinely valuable knowledge that shouldn't be lost to time. Even if you come from some culture or country that you think no one has heard of, record their recipes!!

    Old style cooking by a woman who grew up in Italy. There are as many sauce recipes and methods as there are Italian women :-D . Way back when no one paid attention to how much salt was used....they salted everything. Before she talked about her grandma singing I knew that's how she must have grown up - the women in the kitchen all cooking together and learning from the previous generation. So different than now - no one learns from their mother or grandmother which is a sad thing. I'd give anything just to have my grandmother's recipes let alone videos of how she did things.

    I'm not Italian but I love Italian food. Someone should make a business that allows a family to rent an Italian Grand Mother for a day. I would definitely rent you.       My name is Giussepina. I just want to tell you I discovered your CZcams channel about a week ago and I just want to tell you that I love watching you cook. I stood by my Nonna's side in the kitchen from the time I was three years old. She taught me everything I know. It was amazing to watch her in the kitchen. She only had one arm she lost the other in an accident as a child and instead of letting it destroy her life she used it to make great meals for her family and Friends and blessed many people who are hungry or unfortunate. I have her name so I'm very proud to be her granddaughter. It was nothing short of miraculous how she was able to work in the kitchen she was very independent and very proud. My favorite dish was her pasta con piselli. There are some dishes that I did not get to learn to make from her such as her lentils and arancini .I just want to thank you for bringing us ( your viewers) into your home and for sharing your Love of Cooking with the world.     Thank you so much for this wonderfully detailed recipe. Our Mom and her Family immigrated from Scotland to the United States in 1925. They lived in an Italian-Jewish neighborhood in New Jersey. Mom always said that those wonderful Ladies taught them how to cook! Eggplant parmesan was one of Mom's signature dishes and one that she was most proud of!!     Those who make fun of this wonderful lady and chef are behaving childish and immature and need to grow up. This lady is an Italian with an accent and is joyfully when she cooks and sings, and should be applauded for her hard work and efforts on her channel.     Thank you! So many ways! First for the recipe, No one can understand why a Polish/American woman adores eggplant parmesan! I ask for it once a year and they think I'm nuts! Secondly, you remind me of how both my grandmothers cooked. By taste and touch. And I had no problem understanding you. I grew up with family who constantly struggled with English. And lastly, I worked in a nursing home and would talk to women (mostly Ethnic) about food. You gave me joy thinking of all their faces light up when we talked about their special dinners or desserts they made. Don't stop. You inspire more people than you can imagine. 🌹🌹🌹

    OMG Mama Gina reminds me of my mother and grandmother. So wonderful to see this video. Sometimes it did make me laugh by reminding me of those memories I had with my mother and grandmother. My mother didn’t sing like Mama Gina but she could sing and did when she cooked. Such great memories brought back to now.

      @@TheFigaro666 it takes the water out, and softens it. Trust me it will not be sallty, because it goes away with the water. Some eggplant is bitter a bit sometimes, and the salt takes away the bitterness as well. if you like eggplant, you will love this recipe.

    Love grandma, God bless her. My Sicilian family eliminates the soaking by peeling the eggplant but the results are the same. I just love hearing her talk. I miss the broken English of my grandma. Keep cooking and I'll keep watching. It makes me happy to hear her.

I. enjoy watching your videos and everything I have made has been so delicious; The only thing I do is cut the recipes in half to suit our family size which you can do very easy.     Grandmas are the same all over the world. I also watch videos of a grandma from India cooking for her grandchildren. Same love and pride in the details.

    love her singing. I'm Spanish but grew up with Italian neighbors and learned how to cook these dishes and even speak the language . They have an awesome culture.

    I have a recipe for this dish a friend gave me 40 yrs ago and is so similar to yours. The only difference is ricotta cheese. I was not able to watch my friends mother make it so I was delighted to watch you cook! And I love your accent and the love you have for your grandchildren is precious. ❤

    You remind me of my Grandma so much! She and Grandpa were born near Naples, Italy and came here before WW2. She measured spices, etc., like you, Grandma Gina. Much love

    This day in age and people changing continuously grandmothers aren't like they used to be some of them don't even know about a stove. I am ecstatic to see this woman making homemade lasagna from scratch! I used to watch my grandmother's! I love all the videos I watched so far! Please don't stop what your doing❤! God bless you👍🙏

    I dated an absolutely lovely Italian guy in my youth and spent many a time in Italy/Rome experiencing the Italian culture & daily life with his parents & family and although his parents couldn't speak any English we managed to communicate well using sign language. However, this Mama constantly wore her apron and I learnt lateron why this was, as during my stays she never left the kitchen, marinading, making fresh tomato sauces/passata (if that term actually exists) and generally preparing all sorts of meat & vegetable first, main and desert courses/meals for family on a daily basis which they all took time out of their busy schedules on a daily basis to go home, attend and enjoy the most well cooked, flavoursome Italian meals I have ever had the opportunity to experience in my life back then...with their family, catching-up on the days activitites sucesses and/or failures which whatever it was, it was amazing to be part of that kind of close knit family that in todays world is so very hard to find. Thank you so much for those times & experiences my Italian most loved friend forever, much love to you & your family always Xxx

    I love her. She is so very real how she loves her family and enjoys blessing them. My grandparents were from Sicily and Calabria. My parents were born in America. I miss my family. They have all passed. Watching Gina cook brings me back in time. I love her voice, her accent, her greetings and her blessings. Her family is so fortunate to have her. Keep her videos coming. Please don't change anything. It is so refreshing to have such a pure, unadulterated show. Thank You Gina

      Hi Sandra, I to made the same comments to Grandma Gina! And my grandparents were from Sicily and Calabria and my parents were born here in the US. They have all passed on now and miss them terribly but was left with Mama's recipes that I cherish but no one to cook for as I'm an only child and divorced how ironic....

    I LOVE LISTENING TO HER VOICE. SHE SO REMINDS ME SO MUCH OF MY GRANDMOTHER, AND I CAN'T GET ENOUGH OF HER BROKEN ENGLISH. SHE IS SO SWEET.
    THE FIRST TIME I WATCHED HER I MEANT TO WATCH THE RECIPE BUT I COULDN'T GET MY HEAD AROUND HER TRYING TO EXPLAIN, AND ACTUALLY UNDERSTANDING EVERY WORD SHE MEANT HAVING LIVED WITH MY GRANDMA. YES I HAD TO WATCH IT MORE THAN TWICE TO ACTUALLY PAY ATTENTION TO WHAT SHE WAS DOING LOL. I HAVE NOT TRIED IT YET BUT I AM GOING TO GET THE INGREDIENTS TOMORROW AND CAN'T WAIT TO TURN HER ON AGAIN AND HAVE HER GUIDE ME THROUGH. LOVE TO ALL THE GRANDMAS WE HAVE ALL HAD.
