How to Eat More Beans
In this video I made Rancho Gordo Mayocoba beans using the stove top method and My Best Hummus using canned chickpeas.
Hummus
1 can garbanzo beans(chickpeas), drained (save the liquid)
2 cloves garlic, chopped
1/4 cup your favorite tahini
3 tablespoons freshly squeezed lemon juice
salt to taste
Process in food processor. Add liquid as needed. Season with paprika.
Stove Top Rancho Gordo Method
Sort and rinse beans, looking for pieces of debris.
Soak the beans in cool water, about 2 inches above the beans. Soak for 4-6 hours. Don’t soak longer or they will split apart. If you see them splitting apart after a couple hours, stop soaking them. You can also cook them unsoaked.
In a 12-inch skillet, or 6-quart Dutch oven, saute some finely chopped onions (about ½ cup), a rib of celery, chopped, one carrot, chopped, and a crushed or minced garlic clove. Add a little water if they start to stick. Cook for 3-4 minutes. Add the drained beans to the 6 quart cooking pot and cover the with a couple inches of water. Add the sauteed vegetables. Bring to a boil and boil for 10-15 minutes. Reduce to a gentle simmer and cover with a lid, leaving it slightly ajar. When the beans are almost done, usually after 1 ½ - 2 hours, add salt, if desired. I usually add ½ teaspoon of salt for each ½ pound of dried beans. Be sure to check on the beans from time to time and add boiling water if the water level gets too low. Uncover the beans for the final 15 minutes to allow the broth to evaporate some and develop great flavor.

Cooking beans:
1 pound of dry beans makes 6 cups of cooked beans. For the daily dozen, three ½ cup servings are recommended each day.
From How Not To Die--Beans include:
Beans, canned or prepared from dry
Black beans, black-eyed peas, butter beans, cannellini beans, chickpeas, edamame, English peas, great northern beans, kidney beans, lentils, miso, navy beans, pinto beans, small red beans, split peas, tempeh, tofu
Serving size:
¼ cup of hummus or bean dip
½ cup cooked beans, split peas, lentils, tofu or tempeh
1 cup of fresh peas
On your cooking day make:
A simple pot of beans, either in the Instant Pot or stovetop
If you’re cooking for one or two you can make 8 ounces of dried beans at a time instead of a pound. You’ll have about 3 cups of cooked beans. Use your freshly cooked beans until you run out and then use canned beans.
Day 1: Eat the beans with a grain, such as brown rice or quinoa, farro, etc. or a potato
Day 2: Make a bean recipe such as chili, soup, enchiladas, tacos, bean burgers, baked beans
Day 3: Use the same beans to make summer beans and grain plate
Day 4: Mash the beans to make tacos or tostadas, or enchiladas, bean dip
Day 5: Rinse the beans and use to top a salad, freeze any leftover beans in ½ cup portions
Ways to use beans:
Mung Bean “Egg” for breakfast
Bean dips made with any bean, processed in the food processor with lemon or lime juice, spices and water, tahini (just a little)
Bean salads with summer vegetables-tomatoes, onions, herbs
Hummus with carrots/cucumbers for a snack
Air fried chickpeas for topping salads or as a snack
MISO SOUP
TOFU
Black bean brownies
Edamame for snacks (Costco sells individual serving bags)

I am 64 years old and I’ve been plant-based since 2013. I ate meat, cheese and eggs and all the rest. I always felt crappy (I thought it was normal), but once I went Plant based, I felt tremendous! No more gut issues! No more pain! I feel better today than I did in my 20s!

Trying to eat more beans now at 78. Grew up eating lots of purple hull peas, butter bean 15:08 s & greens. My initial efforts caused lots of indigestion. Learned about Low Fodmap to help ease back into the diet. I think many long time bean eaters forget the pain they cause. Once a day is a better start & I love beans! My daughter sends me some Rancho Gordo from time to time.
Keeping beans separate from soups too add 1/2 cup as desired.
Still eating some beef, pork & eggs to ease the change to more greens, beans, onions, mushrooms, berries & seeds.
Julia - I was never a fan of Lima beans either until I had stewed limas/butter beans. I was blown away! Sauté a mirepoix, add garlic and tomatoes (a can of diced, or your choice). Add veggie bouillon (I make the frozen via Kathy Hester), a tablespoon of tomato paste, herbs of choice (oregano, basil, etc) and a cup of water or broth. Simmer until you feel it is done. Can add a bay leaf if you want. It’s better the next day. Serve with rice or noodles or crusty whole grain bread, and enjoy.

@@crystalrussell3979celery, onion and carrot cut very small and water sautéd. It’s usually cooked in olive oil and is the European “start point” for most recipes. In each culture there is a slight variation ( Asian has chopped peppers and not carrots ) Italians add tomatoes next. Very tasty
When I was on a cruise to Denmark, Ireland and Scotland, every morning there were beans served for breakfast. Same thing in Nairobi and Kenya , Africa. I loved it!

I have a couple more ideas of eating more beans/legumes. 1) make your own lentil bread (google it) 2) make your own Greek soy yogurt (again, google it) and there is actually a 3) strain the yogurt so it is like a soft cream cheese and spread it on your lentil bread topped with everything seasoning. Yum!

I started eating more beans this year. I am not strict , thinking I have to eat 3 servings. But I do love beans and discovered rancho Gordon this past year. Love them! This week I’ve been eating butter beans. Our stores don’t have them though.

I've been cooking beans in my instant pot day one. I soak some of them and add all my goodies in it, cook on high 18 to 20 minutes. Just a few hrs to soak. These people who write these books make it hard for people, so they don't want to cook. I use my pot a lot. I always cook from scratch. Always have. I'm 73.

You certainly have done your share of marketing for them in the WFPB space. I’ve appreciated hearing about all these varieties of beans. I now prep my beans the RG method that you have demonstrated.

I guess people find it difficult to change, but I would never cook any of my beans or lentils in a regular pot again, after switching to an electric pressure cooker nearly ten years ago.. By now, I know exactly how long to cook each variety. That switch by itself made me eat a lot more beans. I always soak them. If I want the bean skins intact, I add 1 TBSP (avocado) oil and 1 tsp salt to the soaking water. Or if I make hummus or mushy peas, I add 1 tsp of baking soda to it, which makes the chickpeas softer. Of course I drain and rinse the soaking water off before cooking the beans in just enough clean water to cover them.
Would you be willing to share your timetable for pressure cooking soaked beans?
BORINNNNG. Get to the point.
@@sallycrouse9475 Soaking 8-24 hours with water change every 8. The pressure cooking has too many variables. I live at 4100 feet, which can easily make a 10+ minute difference to i.e. coastal areas. I work with a 3 qt (Instant) pot, which can take longer than a larger one. And usually I prefer my beans slightly overcooked. The age of your dried legumes can also make a difference. My cooking times fall between about 25 (beluga lentils) and 50 (larger hard beans) minutes. So, you really need to make your own spreadsheet based on your own altitude, equipment and preferences. However, once you have it, you will be good to go. NEVER do I have to clean burned beans or lentils, or clean my stove, nor do I have to babysit my pot. When it is finished, I would recommend letting the pressure release naturally.

That sandwich is good with roasted vegetables, too. Zucchini, mushrooms, eggplant. Also, keep a kettle of water at a slight simmer and you have hot water to add if your cooking beans run low.

I love beans and have no problem whatsoever getting in three servings per day. I purchase Organic beans from Azure Standard in Oregon in 25 pound bags. They're always fresh and delicious. I batch prep and freeze them in two- cup containers.

You soak beans to remove phytates and make them more digestible. It isn't about convenience--thats just a side benefit. Put a T. of vinegar, whey or lemon juice in the water with the beans as they soak to help remove phytates. so you wouldnt want to use the bean water to eat. maybe for garden/plants.
Try making a chili omelet with you mung bean omelet. I know it’s really good with an egg omelet.

Beans absolutely have to be cooked in a pressure cooker to eliminate the lectins or they will destroy the gut. Also being aware of oxalates is essential.

So I’ve had 4 resections so each time I lost Small intestines due of Chrons. Beans give me terrible/Painful bloating. I’ve tried all those things to make it better and it really doesn’t help. Any tips
Soak one part dry beans overnight in 3 parts water with one teaspoon of sodium bicarbonate. Next morning rinse the soaked beans and bring them to boil 3 times; after each boil discard the water and rinse the beans. After the third boil and rinse, cook the beans until tender. This method remove most of the soluble fibre that causes bloating.
I also change the water & re rinse the beans every 2 hrs when I put them to soak.& while they are cooking I skim the white froth that comes to the surface & I find this helps a lot .
🎉 try adding a piece of kombu seaweed to the raw beans & water.
Also....look up info or look into getting some aloe vera gel or juice,it's supposed to be very healing for the gut.

I put some cannelloni beans on my salmon salad. It gassed me up so badly. I took a digestive enzyme and it didn’t help.
Sometimes it takes a while for your body to adjust to beans. Maybe a few weeks of eating them often.
