    I have been plant based for about six years now. This is the first time I have come across a simple shopping list that actually uses real and simple foods, most of which I already use. I have actually made a potato soup using potatoes and plant milk. It was actually yummy! I'm going to try that with purple potatoes next. With broccoli and cauliflower, I like to make nuggets. I make my own breading to cover and bake. Better than chicken nuggets! I also use riced cauliflower in my ground 'meat', with super finely chopped mushrooms, ground walnuts, tomato paste, and finely chopped onion. I have used carrots and celery in stir-fry, with onion, bell peppers, eggplant, and this little green squash that comes from Mexico and sometimes Costa Rica. Sometimes I add super firm tofu. I have so many different way to fix beans. I like a variety. The hard one to find in this area is red lentil. I may need to go online for that. I use a variety of squash, just not zucchini or yellow squash. Those make me nauseous and I lose my appetite. Pureed pumpkin goes into my chili. I use a ton of bell peppers in a variety of colors.I love to make smoothies with spinach and kale. Blueberries make a purple smoothie and blackberries make a pink smoothie. I enjoy a variety of whole grains, and again may need to find some of them online. I use a lot of tomatoes. so many different ways to use them. Love my berries, bananas, apples, fresh mandarin oranges, pears, black grapes (gets removed from the stems and put into freezer), melons, etc. I make my own veggie stock from veggie cuttings and peels. That way I know what is in it and not all that extra stuff that is not needed. I process ground walnuts with dates and make into walnut/date balls and put them into the freezer. Nice when I need something sweet with a touch of fat. Cashews I usually use for making some of my cheeses. For some unknown reason I'm thinking of red cabbage soup with tofu and fire-roasted corn and some jackfruit. Haven't tried this yet. Hope it tastes good when I make it. Don't know what seasons to use yet. I have problems being able to tolerate chili peppers, so I usually use cumin powder and chili powder. Thank you for sharing this list. Looks like I rambled on again.

      @@Karrdeh I mix together whole wheat flour, plant milk, a mix of water and ground flax seeds for the egg substitute, and whatever seasoning I feel like using at the time. I make enough to cover the cauliflower and broccoli bites. Place on a parchment lined baking pan and bake at about 350 for about 20 to 45 minutes, depending on whether I used raw or precooked veggies. Let cool a few minutes so as not to burn yourself eating the yummyness.

    I know that you said if you but farro you don’t eat it but here is my suggestion. Buy Trader Joe’s Farro which cooks in the same amount of time as quinoa. The mix quinoa and farro together and use them in your nourish bowl or grain bowl. The combination is much much satisfying and delicious than straight quinoa.

    Chestnuts are one of my all-time favourite foods, I grew up in Italy where it's easy to buy dried chestnuts, I live in London now so I'm thinking of buying a dehydrator to dry them. Chestnuts are not just good for roasting, try boiling them for about an hour (less if they're smaller) and scooping the flesh out with a spoon, so good! You can also microwave them (score them first) if you're in a hurry or buy chestnuts vacuum-packed.
    I can't even start my day without a big cantaloupe melon + watermelon salad, an essential even on the coldest winter mornings, it hydrates me after a night's sleep and this is just the start of a big fruit-based breakfast. Also frozen berries, so good for you!

      Most of them can be used instead of rice. Faro & millet work well. Millet is especially bland in flavor, so it works in a lot of meals. Quinoa, barley, & buckwheat have a more distinct flavor so it's a little harder to switch with rice, but given the right recipe, they taste so good.

    You are right about canned white beans - it is impossible to find them without salt. So I cook up a large batch in the instant pot and then freeze them until I need them.
    And the veggies I use in almost every recipe (onions, celery, carrots, peppers, zucchini, cabbage, etc.) I slice/dice/chop them all up in the food processor, and then freeze them. Makes meal prep MUCH quicker. I have large freezer bags full of each veggie, ready to just toss into the pot.

    It's really easy to prepare a butternut squash, just cut in half lengthwise, scoop out the seeds and microwave. No need to peel.
    For flavour, I love oil-free sundried tomatoes and also sundried veggies from Lidl in the UK, part of their Italian week that they have a few times a year, I just stock up and they last forever, very low cal too

  • @luluandmeow
    @luluandmeow Před 2 měsíci

    Kabocha squashes are a staple whenever they're in season, otherwise sweet potatoes are amazing and I don't need to add salt to these, unlike ordinary potatoes that I always need to salt. To stay slim I microwave riced cauliflower and eat it with my favourite sauce instead of pasta. I buy a lot of frozen veggies: Brussels sprouts, spinach, broccoli, green beans. Chopped tomatoes, garlic and red onions, fresh basil and/or other herbs are a staple too. Mushrooms are amazing and very low cal: enoki mushrooms are a fantastic substitute for pasta at a fraction of the calories.

    I'm sorry... your kid's school doesn't allow nuts... like at all?
    I get that their likely trying to keep kids safe... but that sounds pretty over the top to me.

      Too many kids have nut allergies these days. This is not unusual.

      Typically that’s only if there are children at the school with a life threatening allergy. If not they allow nuts.
