      Hi! I actually make my own mayo sometimes but Hellmann’s makes a vegan option. I’m trying to avoid overly processed foods so I use it rarely. As for chick peas I find that the store brands work just fine. I think I get the most aquafaba from Goya, but they can be quite a bit more than the store brands. For HOP lately I’ve been buying them from BJs. Sorry but I don’t know the brand name I just get the double pack so I can also add them to salads, etc

      I'd love to see your vegan mayo recipe. I don't do oil, so I wonder if you use tofu or what?

    • @physicianinthekitchen
      @physicianinthekitchen  Před 3 měsíci +1

      @@rochellepryor8974here you go. I’ll be doing a video soon showing how to make it. If you don’t use oil replace it with aquafaba. I admit I haven’t made it this way. A little bit of tahini may work too. It has a mild flavor but you need to determine if it will work with whatever you’re using the mayo for.
      Dr. Monique’s Vegan Mayo
      1 package silken tofu
      1 tablespoon apple cider vinegar
      Juice from 1 lemon
      1 teaspoon kosher salt, more to taste
      2-3 garlic cloves, minced
      1 tablespoons aquafaba
      3 tablespoons coconut oil
      1 tablespoon arrowroot starch
      Combine all ingredients in a blender and process 2-3 times.
      Place in jar with air right lid and refrigerate for at least 10 minutes.

    • @physicianinthekitchen
      @physicianinthekitchen  Před 3 měsíci

      Artichokes are a wonderful substitute! Hearts of palm have a very mild flavor similar to artichokes so you should be good. I would just be sure to maybe process them a bit before you add the other ingredients so they can break down to the desired texture.

    • @physicianinthekitchen
      @physicianinthekitchen  Před 3 měsíci

      @@johnblagrove5177hi there! Welcome! The term can be applied to any bean juice but is classically is associated with chickpeas. They have a very mild flavor as opposed to other beans which makes their juice ideal for using in other recipes. Also, you can make your own aquafaba by first soaking and draining your beans, then cooking them in fresh water. That is the juice you can use after cooling.

      This is literally stated in the description. it says Chickpea "tuna" salad plant based recipe series. this is very clear and does not generate misunderstanding or confusion. Plant based is foods derived from plants, rather than animal products. American vegan/plant based recipes often have the name of the item they are imitating in the description ie: vegan shredded "mozzarella" cheese.
