I already love chickpea salad but will have to try it with hearts of palm. Canned chickpeas used to upset my system but i learned to rinse and remove the outer shell which helps to make my system digest them alot better.

Hi! I actually make my own mayo sometimes but Hellmann’s makes a vegan option. I’m trying to avoid overly processed foods so I use it rarely. As for chick peas I find that the store brands work just fine. I think I get the most aquafaba from Goya, but they can be quite a bit more than the store brands. For HOP lately I’ve been buying them from BJs. Sorry but I don’t know the brand name I just get the double pack so I can also add them to salads, etc

A little bit of tahini may work too. It has a mild flavor but you need to determine if it will work with whatever you’re using the mayo for. Dr. Monique’s Vegan Mayo 1 package silken tofu 1 tablespoon apple cider vinegar Juice from 1 lemon 1 teaspoon kosher salt, more to taste 2-3 garlic cloves, minced 1 tablespoons aquafaba 3 tablespoons coconut oil 1 tablespoon arrowroot starch Combine all ingredients in a blender and process 2-3 times. Place in jar with air right lid and refrigerate for at least 10 minutes.
Artichokes are a wonderful substitute! Hearts of palm have a very mild flavor similar to artichokes so you should be good. I would just be sure to maybe process them a bit before you add the other ingredients so they can break down to the desired texture.
I would love to try this but i am in the UK so may struggle to find Hear of Palms. Is there a substitute that you feel could work? An extra question…. Did I you make your vegan mayonnaise using the aqua faba? I make it all the time and it is fabulous! Best regards

Also, you can make your own aquafaba by first soaking and draining your beans, then cooking them in fresh water. That is the juice you can use after cooling.
