- My Best Hummus
8 ounces of dried garbanzo beans(chickpeas) or 1 1/4 cups
I order mine from Rancho Gordo.
Soak the garbanzo beans in plenty of water, in the refrigerator 24 hours for any of the cooking methods.
PREFERRED METHOD:
I get the best results from the Instant Pot. Add 8 ounces of soaked garbanzo beans and just enough water to cover them by 1/2 inch. Cook at high pressure for 18 minutes and allow it to naturally release. Drain the garbanzo beans but save the cooking liquid for use later to thin the hummus.
For the stovetop: Cook on the stove top by draining the water, adding fresh water to cover by 3 inches. to a boil, reduce to simmer and cook covered for about an hour or until tender. I use Rancho Gordo garbanzo beans and they are done in an hour, however some types may take up to 3 hours. At around 20 minutes or when mostly done but not too soft, remove a few chickpeas to use as a garnish.
Hummus
4 cups cooked garbanzo beans(chickpeas)
Made from scratch garbanzo beans(chickpeas) make a big difference and taste incredible, get silkier and have better flavor but you can use canned garbanzo beans if you don't have time to cook them. 4 cups is about 2 cans, drained and rinsed.
3 cloves garlic, chopped
1/3 cup your favorite tahini (I use Soom Tahini. Link to my Amazon store below)
3-4 tablespoons freshly squeezed lemon juice
salt to taste
I use a food processor for hummus rather than a blender. It simply works better.
Add the drained chickpeas to the food processor, along with the tahini and lemon juice. Process with 1/4 cup chickpea cooking liquid to start and add more only if needed for silky smooth texture. I used about 1/2 cup chickpea cooking liquid. Add the reserved whole chickpeas for garnish, a sprinkle of cayenne pepper. Serve with chopped fresh cilantro or parsley.
Also try other spices such as Za'atar, Chili powder
Add roasted vegetables such as roasted jalapeno peppers, roasted garlic (place a whole garlic head in foil and bake at 400 degrees for 40-45 minutes, squeeze out the garlic)
Half cooked edamame and half chickpeas, topped with sesame seeds
Other variations:
Spicy Red Bell Pepper Hummus
Add 1/2 cup roasted red bell peppers, drained and 1 teaspoon Sriracha or other hot sauce
Curry Hummus
3-4 cups cooked garbanzo beans/chickpeas
3 tablespoons tahini
2 tablespoons lime juice or lemon juice
1 teaspoon curry powder or more to taste
1/4 teaspoon cumin
1/4 teaspoon ginger
pinch of red chili flakes
pinch of turmeric
salt to taste
1 tablespoon pickled jalapenos
1/4 cup soaked cashews, drained (soak raw cashews in water for 30 minutes or more)
Process ingredients above in food processor.

I can’t wait to begin soaking my chickpeas today. My daughter and I love hummus and eat it with just about anything. I love taking a wrap, spreading a base of hummus, adding my favorite veggies, and then roll it up burrito style. It’s one of my lunchtime favorites in the middle of a busy homeschool day.

I make mine almost the same way but I peel my chickpeas after cooking them. It’s a little time consuming but now I can’t make it any other way.
What kind and where do you find that Sriracha?

I really enjoy your videos Julia. I only have a Little Oscar food processor (2 cup capacity) was wondering if you could recommend the processor you used . no, but that sounds really good! I have some homemade sweet and spicy pickles I made this summer that would probably be great! I'll try that next time.
Store bought tahini has oil
Why do you soak first?
Pre-soaking beans starts the softening process because if you have to cook long enough to finally get them soft, they end up mushy and grainy. Really interesting enzyme science I don’t remember - Google it! 😊
When u soak overnight, why do u put in fridge?
Because I’m soaking for 24 hours.
I also cook my chickpeas in the pressure cooker, but don't always have luck cooking other beans the same way. Do you have luck cooking beans, like white, black, etc., in the instant pot?
The only beans that seem to be ok in the Instant Pot are black beans and pinto beans, at 45 minutes. I usually cook all my beans (and almost all are Rancho Gordo beans) on the stove top using the method I show in the Beans video here on CZcams.
