- Creamy Spicy Chickpea Sandwich

You will need 3 cups of cooked chickpeas (homemade or canned). I recommend homemade for better texture and taste.
For homemade, soak 8 ounces of dried garbanzos/chickpeas in a bowl covered with plenty of water, in the refrigerator for 24 hours. Drain well. Place the soaked chickpeas in the Instant Pot with 3 cups of water. Cook on high pressure for 18 minutes. Allow to naturally release. Add ½ teaspoon kosher salt after they’re cooked, if desired. On the stovetop, cooked the soaked chickpeas with 3 cups of water in a 4-5 quart pot. Bring to a boil, reduce to simmer and cook for about 1 hours, or until tender. Some dried chickpeas will take longer than others. Once the chickpeas are tender, measure out 3 cups of chickpeas and drain them. If using canned chickpeas, rinse and drain well.
Cashew Cream
Soak ½ cup raw cashews in 2 cups of water for at least 30 minutes.
Drain well. Add the drained cashews and ½ cup clean water to a high-speed blender. Process until very smooth. Place in a bowl and set aside.
Chickpea Sandwich Spread
3 cups cooked chickpeas
1 celery rib, diced
¼ cup chopped red onion
2 tablespoon sweet and spicy pickles, chopped
2 tablespoons pickled jalapeno peppers (candied or regular)
Or 2 tablespoons green olives, chopped
2 tablespoons chopped fresh cilantro
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon lemon juice
½ teaspoon tamari (optional)
Spices
½ teaspoon garlic powder
Pinch of black salt (Kala Namak) or more to taste
Dash of turmeric
Dash of paprika
Salt and freshly ground pepper to taste
Dash of cayenne pepper
Place the chickpeas in a large, flat bottomed bowl. Mash with a potato masher. Add the chopped vegetables, vinegar, mustard, lemon juice, tamari and spices. Mix well. Add ¼ cup or cashew cream. Taste and add more if you want it creamier. You may have some left over. Adjust spices with more freshly ground pepper and other spices, as desired. Serve on toasted whole grain bread with lettuce, tomatoes, red onions and sliced avocado.
Other options:
Curry powder
Fresh Jax Tofu Scramble Seasoning blend or other seasoning blends you enjoy
Roasted red bell pepper
Southwestern spices such as cumin and chile powder along with some chopped Hatch green chiles instead of pickles

One of my favorite sandwiches!!
I have started sprouting my chickpeas which taste better. But when I can’t, I find the Trader Joe brand very soft and creamy. I can’t wait to try this recipe. Thank you.
I also like Trader Joe's brand of chickpeas. They're the only brand I've found that makes soft chickpeas that are good for hummus or anything that requires the bean to be smashed. I do use the harder canned chickpeas in soups and stews where their firmness is appreciated. Truthfully though, nothing beats making your own. (waiting for my new 3 qt IP to arrive. My little girl bit the dust. She was such a little workhorse)
I love this so much, I could just eat it by the bowlful. I love it on a sandwich of sourdough bread with some roasted jarred, red bell pepper. Wonderful!

yes, leave out the cashew cream and use some of the chickpeas, processed in the blender with a little water to make a puree. Use about 1/2 cup chickpeas and 1/2 cup water.
What could I substitute if I don’t like jalapeño peppers
