Eat More Salad
Chef Julia Dunaway
Salad greens (spring mix, lettuce, washed and dried)
Keep the lettuce in the box it came in or a salad spinner container, if using a head of lettuce)
½ head red cabbage (shredded on the straight blade of a mandoline)
1 red or orange bell pepper (sliced in matchstick pieces by hand)
3 large carrots (shredded with a box grater)
1 hot house cucumber (sliced with the julienne blade of the mandoine)
Store the above in a large shallow container with a lid.
1 red onion (sliced with the straight blade of the mandoline)
1 box cherry tomatoes (slice when ready to eat the salad)
Store the onions in a separate container with a lid. Store the tomatoes in the container they came it, but wash and dry them well.
When ready to eat a salad, add a couple handfuls of lettuce, some of the cabbage, bell peppers, carrots, cucumbers, onions and tomatoes. Add salad dressing. Choose any of the optional toppings.
Optional toppings
Chopped walnuts or other nuts
Organic raisins or other dried fruit
Fresh or pickled jalapenos
Pickled beets
½ cup canned or homecooked beans or chickpeas or edamame
Tofu cubes or crumbles
½ cup grains such as brown rice, quinoa, farro
Chopped fruit such as apples, or berries
Cashew Lemon Dressing
This is one of my favorite dressings. I keep 2 tablespoon portions in individual portion cups in the freezer to take with me to restaurants or use at home.
1 cup raw cashews, soaked for at least 30 minutes or longer
½ cup water
3 tablespoons fresh lemon juice
½ teaspoon low sodium soy sauce
¼ teaspoon salt (optional)
¼ teaspoon garlic powder
¼ teaspoon onion powder
Pinch of cayenne pepper (optional)
Blend in high speed blender until silky smooth.

So nice that you popped up in my feed today, always looking for more WFPB folks! I prep my salad vegs like this, too, and I add a paper towel on top before putting the lid on. It absorbs any excess moisture and seems to help them last longer, just replace it every few days when it feels damp. Now heading off to watch some more of your vids! No but sometimes I do.
I actually make a lettuce/kale/greens salad with carrots and cabbage in it. I food prep my other veggies in separate containers so I can have them other ways. This lasts 4-5 days. I use a container with a loose fitting lid or one that Hausa vent on it. That way when I’m pressed for time it’s a 1 minute job. I also prep dressing. I actually prep every veggie I store in the fridge I bring home so it can be consumed when your standing at the fridge wondering what to eat. Lettuce will keep for days. Where can you find the gloves? I have a mandolin that I don't use as often as I would like because It really got me a few times.
I recently found your channel and my husband and I are enjoying the recipes the we have tried. Do you have any tips on how to better roast veggies in the oven, without oil, so that they cook properly?
Yes, add some veggie broth, a little tahini or aquafaba and some spices and mix with the veggies. Also with some veggies, blanching them in water for 5 minutes helps a lot. Especially for potatoes.
