In certain parts of the US, we call that feeling of overeating the "Itis"

There's lots of really good but not well known Korean restaurants in Arakawa-ku in Tokyo. It used to be the main Korea Town before Shin-Okubo blew up and is still a little more old-school than the more touristy experience in Shin-Okubo.

Preferring Korean BBQ in LA over Korea actually makes sense. LA's Koreatown has the biggest population of Koreans outside of Korea itself, so the Korean food scene there is generally authentic. The USA is a huge country whereas Korea is a small nation (that's been divided in half). So there's more space in America to raise cattle and build bigger restaurants. That's probably why you tend to have more options in a LA restaurant than a Korea restaurant.
Also, my understanding is that modern Korean BBQ really originated in the US, not Korea. Because Korea used to be a pretty poor country and it was very difficult to get meat, especially during the Korean War. But when Korean immigrants moved to the US, they suddenly had access to all kinds of different, affordable ingredients, particularly meat. So I think the modern Korean BBQ boom really started in the US.

It's the type of soda used for the marinate. Sprite/7up is my favorite.

I won't really say Hongdae is the best place to have food. They do have a good variety of 'good' restaurants but there are many other good places in Seoul to have Korean Fried Chicken, Korean BBQ, etc.
The main reason I think why the 'limited cuts' issue happened is because there are a lot of specialized Korean BBQ restaruants here - to have more diverse cuts you have to find the place that DO serve different cuts.
If we're talking about the animals themselves, Korea's main meat source is pork, chicken, and beef - others are quite hard to find as a tourist, coming for the first time.
I do wish they give Seoul another chance - but to a different part of seoul, just because the 'touristy' cities do have quite a bit of tourist traps indeed.

When I go to all you can eat bbq, I make sure to eat other things like rice because it also keeps my palette cleansed from all the fat from meat. But I prefer yakiniku because their meats tend to be focused more on marinade while kbbq in America their meat tends to be just plain unless you do spicy.

From experience, not all kbbq place in Korea serve all meat types (i.e. many specialise in pork or beef) hence the "limited variety"

Went to a pub where they do a 1kg steak challenge. Eat it in 20 minutes it's half price. No thanks. Biggest steak I can handle is about 350g. The Yank in our party did it tho', but even he regretted it. Said he was constipated for a week. :)

I feel like a trash human after eating a big bowl of ramen but I don’t feel as bad when I eat nothing but meat and veg at kbbq
I reckon it’s because there is so much that goes in just one bowl of ramen
Kbbq isn’t as complex and harsh on you? I mean it’s just meat for godsakes.

The meat sweats is usually followed by the meat sh*ts... it's overwhelming for the body to digest, & beef & pork are greasy. If I eat more than a palm size of meat I throw up... I think it's crazy to like the meat sweats!! ughhhh
