Serendipity Cocktail from Existing Conditions w Clarified Tomato, Passion Fruit & Grapefruit Pearls

  • Serendipity is a savory zero proof cocktail from Existing Conditions in NYC (Dave Arnold, Don Lee & Greg Boehm's beloved bar which is unfortunately now closed permanently due to the pandemic) that changed my whole mind for the better about non alcoholic cocktails ...and agar powder. It is truly a game changer.
    This was just one of those drinks I couldn’t get out of my mind since the last time I had it. A savory non alcoholic cocktail is quite unusual to find. One would not typically think to combine the flavors of tomato, passionfruit and grapefruit, but they all work so beautifully together. While I didn’t get it perfect, i still very much enjoyed the final product, as well as the process of making it. It was fun learning how to effectively use agar for different purposes in clarification as well as the grapefruit pearls. Agar is so much fun :)
    My take on EC’s Serendipity:
    1.5oz clarified tomato juice
    1.5oz clarified passion fruit juice
    Grapefruit twist (expressed)
    Garnish: Grapefruit pearls inside a passionfruit half
    Mix and serve over a large ice cube. Express Grapefruit twist and gently float the garnish on top.

    Hi, i'm impressed with your channel, your recipes are amazing. I would like to ask you how do you choose which clarification techquine to use? when should i use milk punch or agar agar or just filtration tomato puree? why did you use this specific method here? I hope you can answer! Cheers!

    • @TheWeePearl
      @TheWeePearl  Před rokem +2

      Hello and thank you! I always consider the constitution of the liquid in clarifying, like in tomato juice, it’s too much pulp to milk clarify, so I used this boiling method. I also consider allergens and the theme of the drink. If I’m making something vegan, I’ll stay away from milk and try to use an alternative like coconut milk, or agar agar. This cocktail is a recreation of one that I had and I wanted to stick to the ingredients listed on the menu. Since there was no mention of dairy, gelatin or nuts, I decided on these clarifying methods.
