I like that you use the stems aswell. I also do that with things like broccoli or cauliflower. Dice the stem and add it earlier. (Or snack the cauliflower stem raw while cooking 😁)

Water spinach is delicious, and I wish it were more readily available in western grocery stores near me. I have to go to my local HMart to get it, which isn’t far, but it means I come home with about 47,900 other delicious items only found there. If my local supermarket carried it, I would not be tempted to buy all those salads, fresh vegetables, pickles, and frozen goods.
LOL, I wish I have Hmart around. They have everything.
Oh, I know that feeling. We have an amazing Asian supermarket in town and if I need one of the many things they exclusively sell there I inevitably wind up standing in front of a wall of different kinds of sambal thinking: " don't do it, don't do it, don't do it" but I always do....😂

Is this the same as hollow vegetable? I love this dish. I haven't had it in a long time.
Indeed, if from the literal Mandarin translation 空心菜 (hollow heart vegetable), referring to the hollow stems. However, where i live, it's labelled "ong choy" (蕹菜) as it was probably the Cantonese growers that first introduced Asian vegetables to Australia, so our veggies all take on a Cantonese name in the shops! Whatever and however it's called, it's all delicious. 😀
