Chencu (éé) is Chinese black vinegar, which is the key element of the dressing. Ban (æ) means to stir and mix. Bocai (è è) is spinach and Huangsheng (è±ç) is peanut. So, the name is pretty straightforward; it just tells you the main ingredients. The funny thing is that most Chinese people donât eat salad, but this is an exception which says a lot.
đ„ąPRINTABLE RECIPE - soupeduprecipes.com/spinach-s...
INGREDIENTS
455 grams (1lb) of spinach
a drizzle of vegetable oil to blanch the spinach
2 eggs
1/3 cup of raw peanut
2 tsp of oil to roast the peanut
2 cloves of garlic
1/4 tsp of salt
1/4 tsp of sugar
1 tsp of sesame oil (Amazon Link - geni.us/roasted-sesame-oil)
1.5 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
1 tbsp of Chinese black vinegar (Amazon Link -geni.us/chinese-black-vinegar)
1 tbsp of hot chili oil
2 pieces of Thai birds eye chili, diced
INSTRUCTIONS
Bring some water to a boil. Drizzle in some vegetable oil. Add the spinach and blanch for 20 seconds. Transfer the spinach into an ice bath to stop the cooking process. Squeeze out the moisture and put it in a big mixing bowl. Set it aside.
Add a 2 tsp of oil to the wok and roast the peanuts over medium-low heat for a few minutes. Take out the peanuts and let them cool completely. Do not mix the peanut into the wet salad while it is still hot, otherwise, it will lose the crunch immediately.
Crack 2 eggs and whisk them really well until you donât see any obvious egg white.
We will use the same wok to make an egg pancake. Turn the heat to high and heat the wok until it is smoking hot. There is some peanut skin left in there; just use a paper towel to clean it up and wipe off the excess oil as well.
Once the wok is hot, turn off the heat. Tilt the wok and pour in the egg from the side. Slowly swirl it around to cover the whole bottom. Use the rest of the heat to cook the egg. Take the egg wrapper out of the wok and cut it into 1/3 of an ich thick strips. Set it aside.
To make the dressing, press 2 cloves of garlic through a garlic presser. Add 1/4 tsp of salt and 1/4 tsp sugar. Use a spoon to mix and press the garlic until it becomes a sticky paste. Add 1 tsp of sesame oil. Continue to mix until well combined. Then, follow up with 1.5 tbsp of soy sauce and 1 tbsp of Chinese black vinegar. Optionally, add some diced Thai bird's eye chili and 1 tbsp of hot chili oil to spice it up.
Combine the peanuts, spinach, and dressing thoroughly. Then mix in the egg the last. If you mix the egg in too early, it will absorb all the seasonings and leave no flavor for the spinach.
Serve it as a side dish or eat it on its own.

Love how you explain all of your recipes and methods. Keep up the great work, Mandy!
Dishes like this at our Chinese restaurant look so complicated when they come to the table, but you make it look so easy watching you do it. Even I could make this!
Thanks for the tip about spinach. Helpful information.
Thank you for educating us about how to get the MOST nutrients from spinach. Every person really NEEDS to know these things.
â€
I didnât know that eating raw spinach could be bad. I have been eating it raw at times as a salad as well as cooked with other ingredients to create a dish. I havenât experienced any adverse effects so far. Thanks for the info.
everybody is different and it also depends on the amount.
Itâs not bad but rather you will not be getting as many nutrients from it as you would if you cooked it. But you still benefit from eating it raw rather than having no spinach at all
Cooking just makes it easier for your body to digest the nutrients. It's said that cooking vegetables causes them to lose nutritional value, which is true, but vegetable don't loose all their nutrients through cooking. You absorb more nutrients if cooked than if raw so it's more optimal to cook. Just don't overcook.
@@SoupedUpRecipes the only way to really lower the oxalate is to boil it as you do. And the oxalate stays in the water.
I have calcium oxalate kidney stones so I donât eat spinach.
I hadnât heard that cooked spinach increases nutrient absorption, but I have seen that oxalic acid can cause kidney stones. Donât want one of those!
This was amazing! Thank you so much!!!

In my country (Greece) we never eat raw spinach. Blanched or fully cooked or in a pie. The only raw green we eat is lettuce and rocket. I didn't know it was harmful though. Thank you Mandy.

You make such delicious food!
Definitely eat spinach raw sometimes. It's good to eat a mix of both raw and cooked spinach because they both have benefits.
Hello from Daytona Beach, Florida. I enjoy your videos and have learned many good tips. Thanks.

I can't wait to try this. I will have to use almonds because I don't eat peanuts, but I cannot imagine that will take away from the great flavor this must have. Thank you for the great ideas!!
Oxalic Acid is what makes Rhubarb Leaves toxic. It is also used to clean/flush Vehicle Radiators.
This looks awesome, I'm adding it to my "Must Make Recipes" I might sub in Cashews...maybe

you know, plants and animals have been at chemical war fare for the entirely of evolution. Plants produce toxins to keep animals from eating them. This is why we have liver enzymes that detoxify the toxins. Our live have what is known as the P-450 cytochrome enzyme system. Doctors have to take this into account when prescribing certain meds. The liver metabolizes these chemicals to get rid of them from the body. So, medicines get metabolized by these liver enzymes. There is a lot involved, but to simplify things: medicines get metabolized by the liver to clear them out of the body (the body treats these medicines as a foreign particle and tries to clear it out). The most well known example of this chemical warfare between plants and animals may be Grapefruit. Grape fruit slows down the liver in its function, so that if a patient drinks a glass of grapefruit every morning, for example, then the doctor has to lower the dose of certain medications such as anti-depressants. If you don't believe me, you can look up grapefruit and meidcations interactions. TLDR: plants produce toxins to keep animals from eating them. If you think eating raw plants is a good thing, you don't understand evolution and its interplay between different species of plants and animals. LOL
Oooo, great timing! My spinach is really exploding in the garden now. While we do eat lots of spinach from garden to cooking, I am wondering if the spinach we blanch and freeze would work for this recipe? I love this recipe. I feel like it will be a great addition to the days where your appetite is low or for when you are looking to surprise your taste buds. Thank you Mandy!
THANKS :)
You are incredible!
Great video.
I had some spinach in the fridge, & had no idea what to cook with it so it wouldnât go bad! I used this video as an idea as to what I could make with ingredients I had.
I cooked spinach, made the egg , and just added minced garlic, red chili, & soy sauce. Not exact recipe but it was still delicious. Thanks for the idea Mandy!!!
Thank you for this public service announcement. It's a common misconception that raw spinach is healthier. Too much oxalic acid can also cause kidney stones, which are extremely painful. Many greens are high in oxalates. This can be looked up. BTW, this recipe looks great, as usual. đ
Nice job đđ»
Looks delicious
Thank you.
Can I put this in the fridge and use it later? Is it still good
Ayurveda too specifically states to stay away from fully raw stuff especially if oneâs digestion is not super strong. Same goes with spouts. Spinach always should be well cooked.
MulÈumim!
Thank you Mandy! I appreciate your mentioning the oxalates in raw spinach! I can't eat it as I'm really sensitive to it and it upsets my stomach. Love this recipe đ

Always informational and interesting. Delicious nutritious eating. Iâm picky so I donât make all your recipes but Iâve made a few, and let me tell you-easy and delicious. Here in Amherst, Mass there is a large Asian population and two of my neighbors hear me and my wok, (and sometimes see smoke from my open windows) and smell the delicious aroma coming from my kitchen window. They think itâs funny that I try to cook like them But! Theyâve seen my food and were impressed! Lol. I Do love your wok Mandy. It seasons back up right away if I take off The Shine. I love your Blue and white classic chopsticks too. The gold band makes it quite elegant. Iâm afraid Iâll break them in time so Iâm very happy to get the set of 10. Plus, Iâve been generous with my family by sharing a few pairs too. Great quality cookware. Thank you for sharing your amazing talents and personality.
Hi đ, where can I find hot chili oil? Thanks so much.
Mandy, I didn't know that about spinach. This salad looks delicious.
Although you are very young, I am always impressed by your culinary knowledge.
I really wonder who taught you so many things
Thanks so much for the sharing
Thank you, Mandy! I used raw spinach in my smoothies for about six months - guess what? I ended up with Kidney stones!! Love this recipe!
I heat it lightly, like put it in my pan with my eggs and bacon at the last minute, or on a plated dish right before serving.
This looks super ymmy and very low carb. Kind of want to try it now - this very minute. đ
Where did you get your wok? What brand and model. I really like it.
You can purchase the wok on my website - curatedkitchenware.com/products/carbon-steel-wok-with-flat-bottom
Thank you for your support.
Yep and thatâs why people who drink lots of raw green smoothies need to worry about high oxalic acid.
Thank you for that info, I donât need oxalic acid, many of us donât need it and for some reason I never thought about it. Unnecessary suffering.. nice recipe
I have a question, I find a taste of toasted sesame oil to be a burnt flavor that doesnât agree with me and this is with just a few drops, much less a full teaspoon. Is there sesame oil available that isnât toast? I have yet to find any in the local stores.
This is a beautiful salad đȘđȘđȘ do you have any Chinese BBQ recipes for meat đ that would be good paired with the salad.. looks delicious can't wait to try đ€€âŁïž
I love fresh spinach so much that I grow it hydroponically in my basement. Every 3-4 days, I trim some leaves off and I have a never ending supply of fresh spinach. My absolute favorite way to eat spinach is sooo simple. I save bacon drippings (sub oil of your choice, mine is BACON!) I put a teaspoon of the bacon grease in a pan and heat to melting. Toss in a big handful of fresh spinach leaves and sautĂ© just until they go dark green. Donât cook too long! Then I add salt, pepper and scramble in one egg. Add a little shredded cheddar cheese and put it all on a soft taco shell. Tasty breakfast wrap that I probably have 3-4 times a week. đ
Thank you for the Science of cooking spinach. I did not know that about spinach.
I was just looking at your wok on amazon, do you have to seasonnthe wok cos I'm terrible at this lol
The wok is pre-seasoned. You don't have to season it.
@@SoupedUpRecipes fantastic thanks so much đ
Hello Mandy
Really enjoying your cooking videos, so well done and informative, great work!
It would be very helpful if you could do one or a series of lessons on Chinese greens side dishes to go along with rice and meat dishes.
Steve (66) Manitoba
You could replace the egg pancake strips with some soaked dried tofu sheets as another protein option.
Several vegetables and greens are toxic when eaten raw due to high oxalic acid levels - taro, nettles, rhubarb leaves, etc.
Speaking of nettles, this recipe would probably be GREAT with nettles.
Well I thought it was me, and a select few people that knew about using nettles for cooking.
My dad told me a story about when he was a child his grandmother would make some meals and my dad thought it was spinach in them. When he went back to Germany to visit family his grandmother told him it was nettles she would use. It surprised him LOL.
@@JoeXTheXJuggalo1 Yeah, I live in Belgium currently and I know they make it into a soup here...tried it, actually not bad!
@@aoiahiru670 Good idea! I've been having trouble getting spinach lately, but I can definitely get nettles. I've made nettle soup before, but it never occurred to me to use it like that. Tysm
@@daniel.lopresti Nice! One of my friends lives in Belgium too. I know here in the US dating all the way back to the colonial days where people would make what we call "Spring Soup" where they would use a variety wild greens growing in the area to make a soup and if it grew in your area nettles would be added as part of the ingredients to the soup as well.
I remember when I visited my family in Germany like 30ish years ago and that's when I found out about nettles had a few bad encounters with them as well.
Just looking at that I can taste it lol.yumđ
Is "Chinese vinegar" the same as Zhejiang sauce ?? I loved that dipping sauce for dumplings !! â€ïž
yes, it is
Saludos desde Lima, PerĂș. Muy buena receta, muy original. Bye.
I must admit that I have been eating raw spinach in salads, smoothies, or just grab a handful. Thank you for this informationâŠâŠâŠćæĄäœ çéŁè
While I've enjoyed crunching into a good salad time to time, I feel like I've noticed far more food recalls being about leafy, fresh (and usually left uncooked) vegetables, especially spinach. Not to mention I'm always watching baby spinach spoil into a green mush in my fridge, too, but the raw veg hype is strong in my house ;_; So, in cook-your-spinach solidarity, I gave this recipe a shot. AND I SUCKED IT DOWN IN SECONDS. Absolutely scrumptious! It was loaded with all the flavors and textures, and so well-balanced. I enjoyed the essence of black vinegar in this so much as well. It might not be an aesthetically attractive recipe for the average YT viewer, but I actually cook recipes from videos, this one is a LIKE direct from my taste buds.
As someone prone to kidney stones, I usually avoid spinach. I didn't know the oxalic acid was reduced by cooking it. Thank you for this! Now I will have the occasional spinach dish, starting with this! â€ïž
I agree... I had to stop eating spinach since I'm also prone to Kidney stones... Calcium oxalate stones to be exact... And I was eating a lot of raw spinach in my green smoothies... Had to stop since I formed a 7mm kidney stone in my left kidney last year and had to get laser surgery to break it up... I'm scared to even cook spinach... I just stopped eating it period... Kidney stones are too painful for međ«
@@jsmooth2268 They are no picnic! Hate the things! Well, off to drink another glass of water đđ
Depending on how sensitive you are still be careful. Cooking does decrease the levels but still fairly high amounts tgere
If you eat a lot of beans, it actually counteracts the acids and makes it easier to absorb iron, so if you really like Raw spinach, just eat dome beans!
I think there are benefits to both raw and cooked no?
Where Iâm from the prevalent spinach has a lower amount of oxalates, and so its fine to eat it raw- in reasonable amounts of course.
Also, oils can help carry nutrients and flavor. Or so I'm told.
Several different points of view on thisâŠactually itâs best if you eat it both waysâŠsometimes raw sometimes cooked. You get different important nutrients from eating it either way. Iâve been eating it raw in salads for years without any adverse effectsâŠand add it to smoothies, sautĂ© it in butter and garlic for a taste treat as well.
Very very niceđđđ
Not sure if it is well known, We normally don't eat spinach with tofu, i.e. you have either one in your meal, do not have both in the same meal because it is possible that they may form stones in your bodies.
Great video! There is a slight skip in the video at 4:30, not sure if anyone else noticed or if itâs a problem but thought Iâd mention it in case it can be fixed.
Good eye! I will fix it later =)
