    Chencu (陈醋) is Chinese black vinegar, which is the key element of the dressing. Ban (拌) means to stir and mix. Bocai (菠菜) is spinach and Huangsheng (花生) is peanut. So, the name is pretty straightforward; it just tells you the main ingredients. The funny thing is that most Chinese people don’t eat salad, but this is an exception which says a lot.

    INGREDIENTS
    455 grams (1lb) of spinach
    a drizzle of vegetable oil to blanch the spinach
    2 eggs
    1/3 cup of raw peanut
    2 tsp of oil to roast the peanut
    2 cloves of garlic
    1/4 tsp of salt
    1/4 tsp of sugar
    1 tsp of sesame oil (Amazon Link - geni.us/roasted-sesame-oil)
    1.5 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
    1 tbsp of Chinese black vinegar (Amazon Link -geni.us/chinese-black-vinegar)
    1 tbsp of hot chili oil
    2 pieces of Thai birds eye chili, diced
    INSTRUCTIONS
    Bring some water to a boil. Drizzle in some vegetable oil. Add the spinach and blanch for 20 seconds. Transfer the spinach into an ice bath to stop the cooking process. Squeeze out the moisture and put it in a big mixing bowl. Set it aside.
    Add a 2 tsp of oil to the wok and roast the peanuts over medium-low heat for a few minutes. Take out the peanuts and let them cool completely. Do not mix the peanut into the wet salad while it is still hot, otherwise, it will lose the crunch immediately.
    Crack 2 eggs and whisk them really well until you don’t see any obvious egg white.
    We will use the same wok to make an egg pancake. Turn the heat to high and heat the wok until it is smoking hot. There is some peanut skin left in there; just use a paper towel to clean it up and wipe off the excess oil as well.
    Once the wok is hot, turn off the heat. Tilt the wok and pour in the egg from the side. Slowly swirl it around to cover the whole bottom. Use the rest of the heat to cook the egg. Take the egg wrapper out of the wok and cut it into 1/3 of an ich thick strips. Set it aside.
    To make the dressing, press 2 cloves of garlic through a garlic presser. Add 1/4 tsp of salt and 1/4 tsp sugar. Use a spoon to mix and press the garlic until it becomes a sticky paste. Add 1 tsp of sesame oil. Continue to mix until well combined. Then, follow up with 1.5 tbsp of soy sauce and 1 tbsp of Chinese black vinegar. Optionally, add some diced Thai bird's eye chili and 1 tbsp of hot chili oil to spice it up.
    Combine the peanuts, spinach, and dressing thoroughly. Then mix in the egg the last. If you mix the egg in too early, it will absorb all the seasonings and leave no flavor for the spinach.
    Serve it as a side dish or eat it on its own.

    I didn’t know that eating raw spinach could be bad. I have been eating it raw at times as a salad as well as cooked with other ingredients to create a dish. I haven’t experienced any adverse effects so far. Thanks for the info.

      It’s not bad but rather you will not be getting as many nutrients from it as you would if you cooked it. But you still benefit from eating it raw rather than having no spinach at all

      Cooking just makes it easier for your body to digest the nutrients. It's said that cooking vegetables causes them to lose nutritional value, which is true, but vegetable don't loose all their nutrients through cooking. You absorb more nutrients if cooked than if raw so it's more optimal to cook. Just don't overcook.

      @@SoupedUpRecipes the only way to really lower the oxalate is to boil it as you do. And the oxalate stays in the water.
      I have calcium oxalate kidney stones so I don’t eat spinach.

      I hadn’t heard that cooked spinach increases nutrient absorption, but I have seen that oxalic acid can cause kidney stones. Don’t want one of those!

    In my country (Greece) we never eat raw spinach. Blanched or fully cooked or in a pie. The only raw green we eat is lettuce and rocket. I didn't know it was harmful though. Thank you Mandy.

If you don't believe me, you can look up grapefruit and meidcations interactions. TLDR: plants produce toxins to keep animals from eating them. If you think eating raw plants is a good thing, you don't understand evolution and its interplay between different species of plants and animals. LOL

    I had some spinach in the fridge, & had no idea what to cook with it so it wouldn’t go bad! I used this video as an idea as to what I could make with ingredients I had.
    I cooked spinach, made the egg , and just added minced garlic, red chili, & soy sauce. Not exact recipe but it was still delicious. Thanks for the idea Mandy!!!

    Thank you for this public service announcement. It's a common misconception that raw spinach is healthier. Too much oxalic acid can also cause kidney stones, which are extremely painful. Many greens are high in oxalates. This can be looked up. BTW, this recipe looks great, as usual. 😁

    Ayurveda too specifically states to stay away from fully raw stuff especially if one’s digestion is not super strong. Same goes with spouts. Spinach always should be well cooked.

    Always informational and interesting. Delicious nutritious eating. I’m picky so I don’t make all your recipes but I’ve made a few, and let me tell you-easy and delicious. Here in Amherst, Mass there is a large Asian population and two of my neighbors hear me and my wok, (and sometimes see smoke from my open windows) and smell the delicious aroma coming from my kitchen window. They think it’s funny that I try to cook like them But! They’ve seen my food and were impressed! Lol. I Do love your wok Mandy. It seasons back up right away if I take off The Shine. I love your Blue and white classic chopsticks too. The gold band makes it quite elegant. I’m afraid I’ll break them in time so I’m very happy to get the set of 10.     I have a question, I find a taste of toasted sesame oil to be a burnt flavor that doesn’t agree with me and this is with just a few drops, much less a full teaspoon. Is there sesame oil available that isn’t toast? I have yet to find any in the local stores.

    I love fresh spinach so much that I grow it hydroponically in my basement. Every 3-4 days, I trim some leaves off and I have a never ending supply of fresh spinach. My absolute favorite way to eat spinach is sooo simple. I save bacon drippings (sub oil of your choice, mine is BACON!) I put a teaspoon of the bacon grease in a pan and heat to melting. Toss in a big handful of fresh spinach leaves and sautĂ© just until they go dark green. Don’t cook too long! Then I add salt, pepper and scramble in one egg. Add a little shredded cheddar cheese and put it all on a soft taco shell. Tasty breakfast wrap that I probably have 3-4 times a week. 👍

    Several vegetables and greens are toxic when eaten raw due to high oxalic acid levels - taro, nettles, rhubarb leaves, etc.

      Well I thought it was me, and a select few people that knew about using nettles for cooking.
      My dad told me a story about when he was a child his grandmother would make some meals and my dad thought it was spinach in them. When he went back to Germany to visit family his grandmother told him it was nettles she would use. It surprised him LOL.

      @@daniel.lopresti Nice! One of my friends lives in Belgium too. I know here in the US dating all the way back to the colonial days where people would make what we call "Spring Soup" where they would use a variety wild greens growing in the area to make a soup and if it grew in your area nettles would be added as part of the ingredients to the soup as well.
      I remember when I visited my family in Germany like 30ish years ago and that's when I found out about nettles had a few bad encounters with them as well.

    While I've enjoyed crunching into a good salad time to time, I feel like I've noticed far more food recalls being about leafy, fresh (and usually left uncooked) vegetables, especially spinach. Not to mention I'm always watching baby spinach spoil into a green mush in my fridge, too, but the raw veg hype is strong in my house ;_; So, in cook-your-spinach solidarity, I gave this recipe a shot. AND I SUCKED IT DOWN IN SECONDS. Absolutely scrumptious! It was loaded with all the flavors and textures, and so well-balanced. I enjoyed the essence of black vinegar in this so much as well. It might not be an aesthetically attractive recipe for the average YT viewer, but I actually cook recipes from videos, this one is a LIKE direct from my taste buds.

    As someone prone to kidney stones, I usually avoid spinach. I didn't know the oxalic acid was reduced by cooking it. Thank you for this! Now I will have the occasional spinach dish, starting with this! ❀

      I agree... I had to stop eating spinach since I'm also prone to Kidney stones... Calcium oxalate stones to be exact... And I was eating a lot of raw spinach in my green smoothies... Had to stop since I formed a 7mm kidney stone in my left kidney last year and had to get laser surgery to break it up... I'm scared to even cook spinach... I just stopped eating it period... Kidney stones are too painful for međŸ˜«

      Depending on how sensitive you are still be careful. Cooking does decrease the levels but still fairly high amounts tgere

    If you eat a lot of beans, it actually counteracts the acids and makes it easier to absorb iron, so if you really like Raw spinach, just eat dome beans!

    Where I’m from the prevalent spinach has a lower amount of oxalates, and so its fine to eat it raw- in reasonable amounts of course.

    Also, oils can help carry nutrients and flavor. Or so I'm told.

    Several different points of view on this
actually it’s best if you eat it both ways
sometimes raw sometimes cooked. You get different important nutrients from eating it either way. I’ve been eating it raw in salads for years without any adverse effects
and add it to smoothies, sautĂ© it in butter and garlic for a taste treat as well.

    Not sure if it is well known, We normally don't eat spinach with tofu, i.e. you have either one in your meal, do not have both in the same meal because it is possible that they may form stones in your bodies.
