This is a traditional Shanghai rice recipe, and it can be a healthy, flavorful foundation to pair with any meal. If you have been serving Chinese food with plain white rice, this is something new for you to try.
INGREDIENTS
300g / 1.5 cups of jasmine rice (Amazon Link - geni.us/jasmine-rice)
480g / 2 cups of water
227g / 0.5 lb of boy choy or choy sum, diced
113g / 4 oz of Jinhua ham or bacon, diced
1.5 tbsp of minced garlic
1/4 tsp of salt or to taste
1/2 tsp of black pepper or to taste
Replacement Tips:
Jinhua ham is a special cured meat from Jin Hua, Zhe Jiang province. It was listed as a tribute from Song Dynasty to Qing Dynasty. You can use Italian Prosciutto as a replacement because they taste similar. I also tried bacon, and it turned out delicious.
Pork lard can be replaced with your preferred cooking oil.
INSTRUCTIONS
Finely dice the vegetable and separate the stem and the leaves because they take a different amount of time to cook. You can use any green leafy vegetables with a crunchy stem to give the rice a nice texture, such as baby bok choy, Chinese broccoli, and choy sum.
Finely dice the Jinhua ham.
Wash the rice several times to remove the impurities and excess starch. Drain it thoroughly so you don’t mess up the water ratio.
Add the rice and water to a saucepan and bring it to a boil over high heat. This only takes just a few minutes. Don’t go away because if you forget the time, it will overflow.
Once the rice is simmering, put on the lid and continue to cook the rice over low heat for another 18 minutes.
Heat a wok over high heat. Add the pork lark and Jinhua ham and saute for 2 minutes. If using bacon as a replacement, please skip the pork lard, as you will get lots of fat.
Add minced garlic and the diced choy sum stem. Stir for a couple of minutes.
Add the choy sum leaves and continue to stir until the volume decreases.
Season it with some salt and black pepper to taste. Every brand of ham has different sodium levels; please taste to adjust the saltiness.

For those who want to used a western smoked ham instead of thick cut bacon, you can always pre-boil or presoak (several times) the cheap ham. This should help lessen the salinity and smokiness in western ham that can be a bit too much in the final product. It's nice to buy cheap ham at the end of the season, but it can be very strong. Precut chunks before freezing, and soak/boil it before use in future dishes. It makes it more mild but still a great texture and smoky-salty taste for dishes.

I don’t know that most Americans want easy recipes; my friends and I are all passionate home cooks and we’re quite happy to make complicated recipes when we have time.
I think Mandy understands that not everyone has access to Chinese ingredients and so she suggests appropriate substitutions whenever possible. If there’s no substitute, she’ll try to link to an online store that may have it. She does the same thing when looking out for vegetarians; if there’s a way to make a recipe without the meat component, she’ll include that in her recipes. If the meat is required, she will say that up front and say it’s not a dish that can be made meatless. She’s just trying her best to be inclusive, and I definitely appreciate that.
This is similar to how my ukranian family makes rice, especially for filling cabbage rolls. Bacon or ham, mushrooms, onions, etc. What ever you prefer that day.

Asian produce is becoming available in mainstream American grocery stores and are quite popular, at least in my area. In addition, online seed stores and nurseries sell countless types of Asian greens either as seeds or young plants. I grew shiso, bok choi, choi sum, Thai basil, and garlic chives in pots on my deck. I have limited space but I got creative with my gardening this year. I totally understand that gardening is not for everyone, though, but I thought I’d mention the availability of inexpensive seeds from online sources.

What about spam as a replacement?
My grandma cooked the rice along with all the rest of the ingredients, the green leafy would come out yellowish color, but providing a different kind of aroma. I heard these days, people like to see green instead of yellowish leaves, therefore the rice and the rest are cooked separately. I am glad I found the substitute of JinHua ham. Like your channel, it is relaxing and comforting to watch your videos and learned a lot.

If you're lazy like me and own a rice cooker, you can also skip the wok frying step entirely. Throw the cut veggies and cut pork right on top of the rice in the rice cooker and cook like normal. I add maybe a quarter cup to half cup more water than normally but it'll depend on your meat if you use dried ham/sausage compared to bacon/spam.

When I lived in Shanghai one of my favorite quick things to get from the restaurant next to my house was this rice, eggs with tomato or braised pork. Delicious.

would American "country ham" work for a replacement Mandy?
I think even Chicken fillet, sausage, bacon, spam will work as long you use green leaf vegetables.
No salt in the water when you boil the rice?
no salt because the ham is salty already
Do you think red or green cabbage would work in this dish?
If you can't get any Chinese leafy vegetables, Green or Red cabbage would work, but I reccomend using Chinese leafy vegetables if possible. You could also use kale or Swiss Chard if those are available.
I would love to know how Chinese restaurants get that Unique flavor to their rice and what kind of rice they use 😊? I bought light soy sauce but still can’t get the flavor right.

Rice cooker isn't traditional cooking tool in Asia, it's modern invention. My house didn't use rice cooker before 1996. I was born in 1989.
