Grits with cheese, ham and perculator coffee in your billy can - backpacking food recipe

  • Hey guys! Its been a while since I made a video so I though I'd delve right into one of my favorite outdoor breakfasts: (Dutch) grits with parmesan cheese and ham. Such a wonderful easy recipe for both breakfast, lunch and dinner in the outdoors.
    If any of you can tell me the difference between US grits and NL grits, that would be great! As I mention in the video, its a bit unclear to me :)
    I also show my current cooking kit consisting of a snow peak pot, custom lid and a solo stove lite inside and a small dog bowl serving plate. I brought along some fine coffee and a mocha set to enjoy a good strong cup of coffee along my grits.
    Here's the recipe:
    - instant grits, about 30-40 gr. depending on your brand.
    - powdered milk for about 400 ml of milk.
    - chicken broth cube
    - parmesan cheese
    - spam
    - a little butter (optional)

    It is too bad that you are not posting new videos as I really enjoy your style and knowledge. My wife is the main cook in our family but I am slowly starting to enjoy camp cooking more myself. In the past my camp cooking style was almost always simple, quick and mostly from a can or a box. However As I said earlier, I am beginning to enjoy the cooking process more than I have in the past and the cooking and the meals is becoming one of the highlights of any outdoor trip. Camp cooking is changing for me from the status of "necessity" to more of a pleasure. Thanks for your great videos. I just wish you were still actively uploading new content as well.

    I'm going to have to try this. I love grits for trail meals.
    Here is a somewhat similar recipe I found years ago that I use often:
    Bacon Polenta
    1/2 cup instant polenta
    2 Tbsp shelf-stable bacon
    1/2 Tbsp dried onion flakes
    2 tsp butter powder
    1 tsp chicken or vegetable broth powder
    1/4 tsp paprika
    2 packets Parmesan cheese
    At home: Combine everything, except the Parmesan, into a quart size freezer zip lock bag.
    Budget hack: I use the butter flavored instant grit packets.
    On the trail: Bring 1 1/2 cups of water to a boil. Add the polenta and simmer until cooked and creamy. Top with the Parmesan cheese.
    Makes 1 serving

    An older post. I s'pose I've been making dutch grits all this time. I use milk, half and half, or heavy cream, whichever I seem to have an abundance of or closer to expiration date. I use powdered chicken bullion, parmesan, white pepper, and a knob of butter. I do know with the cream you have to use some real low heat, that stuff plops everywhere otherwise. Here in the southern US grits are almost a staple, but a lot just cook em and add butter. To bland like that IMO. I have been known to pull out the pocket rocket, the stanley pot, a water bottle, and the instant cheesy grits(or bacon flavored) for break at work. Can cook enough for me and my buddy in about 3 minutes. Great when we want a quick hot meal and stuck outside all day. Just found your channel, I agree with Lonnie. You seem to have a great attitude and very personable. Hope you have faired well during the pandemic. TC and ATB, Cris.

      Thank! Its actually a Moka pot, works just a little different from a perculator. Great coffee though.

    Here in the states we call that cream of wheat and our grits are made from corn. That looks really good and I'm really enjoying your channel.

    Hey I would suggest that you buy a small stand to hold your camera. It will make filming easy any you can use two hand to prepare the food

      ezel1954 Heya! Ja, klopt! In het filmpje gebruik ik gewoon griesmeel die je ook voor pudding of pap koopt (dr oetker). Wil perfect!

      Hoi Cees, in de description staat het recept, maar komt neer op:
      30 tot 40 gram griesmeel combineren met poedermelk en water voor ongeveer 400-500 ml melk. (beetje afhankelijk van hoe dik je je griesmeelpap lekker vind.) Groetjes, John
