Matteo - THANK YOU for taking the garlic out! My Italian friends say that American Italians use WAY too much garlic and then leave whole chunks in the sauce, and stink up the whole dish (and their breath for several days.)

Just found you recently. Thank you so much for making me laugh, I've needed it lately💜. Just FYI, I know your are probably in a rental, but you can in just a few minutes flip your hinges on your frig, to make it open towards the kitchen. It is just a minor adjustment, but trust me, it will be life changing, not kidding. If you aren't handy, just CZcams it or ask a handy friend. Thanks again for all the laughter.

Oh my god I NEED to share a story. I watched this video and then my daughter had a sleepover with some friends and they wanted spaghetti for dinner. I made Mateo’s spaghetti with the really salted water and now these girls parents are texting me and asking for the pasta brand and recipe because their daughters came home and said it was the best spaghetti they’ve ever had. I laughed to tell them it’s just like Quarter of a cup or so of salt in the water 😂 That’s my “secret” recipe!

Nah, maybe it sound strange if you're from the south, but I think butter is ok =)
I'm Italian too, from Tuscany, and here all grandmas used to add a bit of butter to the pasta when they popped open a jar of homemade "pomarola" sauce to dress the pasta with.
And I think in the north of Italy it was tradition to make a fast sauce with tomato "passata" cooked with onions browned in butter.

Just made this today for the fam! Incredible recipe, never realized how creamy tomato sauce becomes when you add that bit of starchy water on top of the pasta before you mix it in the pot. Also adding a bit of water before and reducing it, never thought about reducing red sauce before this. I don't buy sauce with sugar in it but I usually go for pre-made with the flavour added already. Buying the jar of Mutti and adding the garlic, salt, basil and pepper flakes made it taste even better than jar bought. Super cheap solution. Very easy to make and highly recommended!

Possibly avoid metal utensils on nonstick pans, especially Nick stabbing the pot with a fork. Silicone or wood so it doesn’t damage the nonstick coating.
