Recipe:
4 Eggs (Wet Ingredient)
3 Cups Sugar (Wet Ingredient)
3 Cups Flour (Dry Ingredient)
1 1/2 Tsp Salt (Dry Ingredient)
2 Cups Of Canned Pumpkin (Wet Ingredient)
1 Cup Corn Oil (Wet Ingredient)
2/3 Cup Water (Wet Ingredient)
1 Tsp Nutmeg (Dry Ingredient)
1 1/2 Tsp Cinnamon (Dry Ingredient)
2 Tsp Baking Soda (Dry Ingredient)
Preheat Oven - 350
Mix Dry And Wet Ingredients Separately, Then Combine. Pour Into Greased And Floured Loaf Pans (Makes 2 Loafs). Bake At 350 For 1 Hour.

To be fair, white sugar technically isn't vegan either because they use pig fat to bleach it and make it white. You'd be shocked at all the different seemingly vegan things that are rendered non-vegan by human processing.
But I don't think he was delving this deeply into it. I suspect he just wasn't totally sure.

@@batmanpancake96 Oh ok this might be region specific. I'm in Australia, and we don't generally add vanilla to white chocolate. I'll have to see if I can find some vanilla flavoured white chocolate to try.

Nick! The reason you add sugar (dry) into eggs is the sugar fluffs up the eggs and helps a better rise.

You two crack me up! Looks like you had enough batter for two loaves. I have a cream cheese filling recipe that you can add for extra deliciousness: 4 oz softened cream cheese, 1 egg, 1/4 c sugar, 1/4 c flour, 1tsp vanilla. Mix together till smooth. Fill bread pan with 1/2 pumpkin batter, spread 1/2 of cream cheese mixture on top, add rest of pumpkin batter. Smooth pumpkin batter. Pour rest of cream cheese mixture in line down center of pan, use a toothpick to make decorative swirl pattern through filling. Bake as normal 350° 45 minutes-hour. 🎃

I learned to bake whilst working in a cafe as a teenager... pretty much everything was measured by eye, and always turned out tasty!

Matteo and Nick, another recipe you both might enjoy is Pumpkin Chocolate Chip Cookies. I got the recipe decades ago online and have made it for years and it's always a big hit. But make sure you always use semi sweet dark chocolate chips because I once used the milk chocolate chips and they were terrible. I tried looking online for the recipe I have and every one is different than mine, so instead of sharing a link, I'll just give it to you:
1 cup butter
1 1/2 cups sugar
1 egg
1 cup pumpkin puree
1 tsp real vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp salt
1 cup semi sweet chocolate chips
Preheat oven to 350F and lightly grease cookie sheet.
In large bowl, cream butter and sugar together until light and fluffy.
Beat in egg, pumpkin and vanilla.
In separate bowl, combine the dry ingredients; flour, baking powder, baking soda, salt, nutmeg, cinnamon, ginger and cloves.
Add dry ingredients to creamed mixture, mix well.
Add chocolate chips and mix in.
Drop by teaspoons onto well greased cookie sheet.
Bake at 350F for 10-12 minutes or until light brown.
Mateo is there anything you suck at? That pumpkin from fifth grade is flawless!
Post Script taking my daughter to her first comedy show (I’m a former recovering stand-up) was an extremely important night to me. Having front row to your show for my daughters 13 birthday is one of my top comedy experiences of my life. I saw George Carlin 11 times, Steven Wright 5, Paula Poundstone 7, Chris Rock 5, Joan Rivers…it’s a shorter list of whom I haven’t seen; Mateo you are one of the funniest stand-ups I have ever seen. You had a line fully around the block of the Paramount in Denver & I’ve never seen that in my entire life in Denver. You’ve made it baby!!
