Don’t think all Italian Americans are proud like this most don’t speak Italian nor know authentic dishes
My family are Norwegian Americans and eat that same fish, but we have a grunt for that phrase instead of using a sign, which really just demonstrates that we’ve assimilated to the best of our ability 😂

I worked for an Italian family at their restaurant for 25 years. This dish was one of my favorite all-time pasta dishes
He could do a cooking show. Where he teaches like he does here, but also ones where he is learning how to cook things. That with some fun banter and I think the show could be pretty good.

So I work at an Italian restaurant and we served this dish recently. It was by and far the most popular and most loved pasta on our menu. It was super fun watching this! Any man would be lucky to have you cook this for him 💜

As a pasta lover - and someone who has heard all his life he'd marry an italian (I'm Portuguese) because of it - THANK YOU for showing me how to make my absolute favorite pasta. It's so simple, yet makes my mouth water the most. Been to Rome last month and I ate Amatriciana for every meal (gotta taste 'em all!).

A perfect video. A great pasta dish. Wonderful to watch. Matteo explains the ingredients and preparation elements of the dish calmly and succinctly. There’s no clown cooking as in some other people’s Italian food cooking videos. Matteo’s recipe is absolutely the essential Pasta all’Amatriciana. For those reading this, remember to turn the heat off under the pot before adding the Pecorino Romano cheese.

Okay. So I made your pasta all' amatriciana for dinner yesterday. Let me just say OMG.
The Italian market near me didn't have guanciale. They said they normally do but they were out. Whatevs. So they suggested pancetta instead. I said it's not the same, and they thought I was going all Karen on them, but I was just repeating what you said. So I got pancetta. I used Mutti, and I used bucatini because that's what I read was traditional. I did forget peperoncino, but the sun still rose this morning. And of course, I got the pecorino romano. It was to die for. I usually cook a big meal on Sundays, but I'm not well and needed something simple but special, and this...this was amazing. Thank you for sharing and showing

Let me begin this little post with the fact that I absolutely adore you. I think you’re the funniest person to hit the stand-up comedy stage in years OK I’m 73 years old and I’ve seen a lot of stand-up comics or wanna be stand-up comics and they’re not and I don’t like stand-up comedy and then I ran across you and you are just amazing and on top of that you are half Italian or a lot of talion. You speak Italian it is amazing perfecto I love to watch you cook. You are an amazing cook, so you are like a man of many talents you paint you saying, you are funny, you are Italian you go to Italy you have friends in Italy people that owned restaurants, Italian restaurants you with the finest foods over there the best wines when you’re home you with the best ingredients and then I see that your pasta americiana (I think that’s correct spelling I’m not sure) OK, so you have all of these amazing ingredients that you use the best cheese, the best sauce, the best butter if it calls for it you mix it very delicately and you have the water. Just write you add your different seasonings and then you add what you call Wine O my God, where is it that you learned to put that kind of crap wine that says fake wine on it that you get in the grocery store when you cook you are not supposed to cook with wine that you would not drink so the rule is, if it would go in your mouth and you would enjoy drinking it then you use it in your food and recipes. I am extremely surprised that you did that, but other than that I would like very much for you to please answer me back and tell me how to spell guanchalle. So if you would, please allow me the honor truly the honor of you telling me you had a spell that word so that I know how to spell her to get it because I plan on following all your recipes and copy them down and writing them into my recipe book and making all of them around the holidays. You are an absolute marvel. I love when you speak Italian. It is the most beautiful language in the world and I love when you go to Italy. It makes me so jealous I wish I could go. My Neapolitan nonna always used Pecorino that she would grate with a old hand-cranked mill that she would clamp to the table. But most Americans get that shelf-stable canned “parmasan” cheese 🤮 made by that national brand. I buy my own wedge of Pecorino and grate as needed. I’ll definitely try this recipe!!
