Here's a comforting tip: the way you are holding the whisk causes you to unnecessarily lift your shoulder, which can lead to pain in the shoulder and wrist. Instead, hold whisk with palm facing up for less stress and easier movements. (Worked in a B&B for 20+ years. Cooking can injure you.) Be that as it may, love the food, love the comedy, and love the biceps!!

Matteo, I saw your show at the Palais in Melbourne🇦🇺 last Friday night.
It was brilliant, you had the entire sold out crowd of nearly 3,000 laughing out loud from beginning to end. Having comedian Rhys Nicholson open for you was great too as he's really funny as well.
For anyone considering seeing Matteo... Book your tickets! I won't include any spoilers, I'll just say it was absolutely hilarious, great value. My friend and I were laughing all the way home about various jokes and stories in his show. Cheers for a truly hilarious and entertaining night.

Brioche for French toast is a goated move
Those eggs are magnificent! I like to cook up the excess custard from French toast and kind of eat it on top of the toast, like a sweet omelet.
You cracked the code. In Burgundy people do just what you do, they also threw apples in the mix and call it a "sanciaux nivernais". Maybe you have French ancestry down the line, and your French ancestors from Burgundy were guiding you all along through this culinary experience...

Loved it. Yes, when Ina Garten premiered her show those many years ago, I was hooked. She helped me figure out how to plan the meal so I’m not still cooking when the guests arrive. My husband and I herer in Columbus, ohio love all your cooking stuff (and your new husband )!

We always do french toast after christmas with the left over panettone, it's not a structurally sound as brioche but it's good esp for my mangia-cake side of the family
Here on Brazil, we have a type of bread called "pão francês", which literal translation could be "french bread", so every time I read on a novel (*cough* fanfic *cough*) "[whoever] made french toast", I always imagined that bread and got so confused, like... "how can you make bread so fast without proper equipment?". I'm embarassed now that I just didn't look it up.
This looked SO good! Sort of sad that I had to watch while I eat my salad, hahah.
I make eggs like that too! They *are* really good. I've been meaning to learn how to best season them. I usually just put salt, but I want to try putting some chopped onions too, maybe garlic? It just keeps slipping my mind though...
You usually have to get it dried but the herb Chervil is really good with any kind of egg dish. French toast is amazing! You have to try it. Just don't rush it. Give bread time to soak up the eggs, then cook on low heat so it cooks all the way through. I like it with fruit compote, or jelly.
Like a lot of American breakfast food, French toast is often eaten sweet, either adding maple syrup or powdered sugar or fruit such as strawberries or maybe whipped cream. I suppose it could be made into something savory, but in the US, it is sweet. Now, the French toast "custard" doesn't have to be sweet. It can be just eggs, so salt can be added. I've never heard of onions and garlic, but give it a try! Eat it any way you want.
I add caramelised onions to my scrambled eggs. I caramelise it only with dry white wine, no sugar, low heat and patience.

Yeah; LIKED everything! I still make Bisquick pancakes, but I season it differently for a variety of tastes. Been a while though. I too like my scrambled eggs creamy, so I'll have to try this too. Love the creation of simple food fit for a king. Great job! Keep creating!
Also, the way my mum used to make scrambled eggs was to mix eggs with about 2 cups of milk and then heat in a saucepan with the lid on until set. It would come out in a solid form - almost like a baked custard. Sooooo nice.

Ha, nice. About a decade ago I got REALLY into making french toast (after watching a certain Metalocalypse episode) and eventually got it down to the point where I could make the perfect french toast: crispy on the outside, chewy on the inside, gooey at center. The choice of bread will determine a variety of factors, most importantly being the texture of the bread mixed with custard, and in my opinion, the yeastier the bread, the better (brioche is made with a CRAP TON of butter; I'd go for sourdough because the sour adds an extra layer of flavor and the dough itself is quite resilient to change). The method begins with stale bread - I usually take all the slices of bread I want and lay them on a pan with grill and dump them in the refrigerator so both sides of each slice of bread gets the moisture pulled out of it. Leave it overnight in the refrigerator, or better yet 24-36 hours, then make the custard. I forget the measurements, but it was the basic deal: eggs, vanilla, sugar, salt, heavy cream. I preferred churning the eggs with sugar, salt, and vanilla until they became frothy (usually about 5 minutes of heavy whisking) before stirring in the heavy cream. Butter the skillet, dip the stale bread in custard + fry, etc.

This is how I make my eggs! Well almost, I don't add the salt until halfway through, and the butter I melt with the eggs as they slowly cook. Reminds me of making risotto. Great video! I want french toast now!

You can pop the French toast into a 350F oven for 5-10 minutes after browning both sides to finish setting the custard and free up space and attention for making eggs, etc (also good for larger batches) time-coordinated breakfasts be upon ye 🙏🙏

I think denature is the word you were looking for. When you cook eggs, you denature the protein.

I've been making my eggs like this for years and it is for sure my favorite way.
I make my eggs almost the same, but I don't mix them ahead of time. I just dump the eggs in the pan and stir constantly over low heat. I also put the butter in cold and let it emulsify in the eggs as they cook. So, so decadent!
People so often overcook scrambled eggs that they stand in a rigid clump in a pool of clear liquid - urgh. Matteo’s are perfect - smooth and creamy.
