I spent half of this just trying to figure out where Country X was so I could see how they were doing, which definitely gave me some headache. Africa's the worst headache culprit though; Eurasia looks pretty okay but something about Africa just seems wrong. Maybe because it has a more distinct shape, getting some uncanny valley thrown in there?

This would be an interesting scenario if all factors are taken into account. Changes I would expect are as follows:
1. Without the gulf stream, Europe suffers a sudden ice age it never gets out of, leaving the continent's growth stunted and a famine begins, perhaps leading to a more prevalent Protestantism.
2. Since south becomes north and vice versa, winter and summer are switched leading to either a sudden double harvest or long lack of food in China, depending on date.
3. Animals, especially non-avian migratory animals, experience sudden decline as their instincts lead them to empty sea instead of summer land, causing extinction and more human famine.
4. I would expect as Europe and south America experience decline, the equatorial regions find themselves a safe haven where farming capabilities remain unchanged and empires form from them

You should check out my EU4 mod Fall of the Empire, it changes alot but primarily it gets harder the more you blob, plus some RNG factors can kill empires.

Next to the date in the top right there is a little eyeball icon iirc click that and you'll find this time-lapse mode.

You should definitely do a timelapse with a mod where all provinces are uncolonized besides country capitals at the start of the game.
