Caramel Corn using the microwave

  • Caramel Corn-Microwave
    1 c brown sugar
    1 stick butter
    ¼ c white corn syrup (or can use sorghum)
    ½ t salt
    ½ t baking soda
    1 cup nuts (optional)
    About 4 quarts popped corn
    1 large brown paper grocery bag with about 2 inches cut of the top
    Pop the corn and remove as many uncooked kernels as possible.
    Place popped corn into the brown paper bag.
    Combine all ingredients except baking soda and popped corn. Cook in a 1 ½ quart pan. Bring to boil and boil 2 minutes on high. Remove from heat and add baking soda (watch it because it will foam up). Pour over popped corn that has been placed in a brown grocery bag. Stir and shake well (be careful, it is extremely hot). Fold bag over twice at top. Cook in microwave (I use 70% power on my microwave) for 1 ½ minutes. Take out, shake, and cook for another 1 ½ minutes. Remove from microwave, shake again, and pour onto a large cookie sheet, spread out and cool.
    Note: can add nuts to popped corn before adding cooked mixture.
    Peanut Brittle

    Note: a black iron skillet works well for this recipe
    Generously butter a large cooking sheet with high sides.
    In large skillet or pan mix: sugar, water, salt & syrup and cook about 10 minutes (or to 250 degrees). Add raw peanuts & stir constantly. Cook until peanuts are toasty brown, about 8-10 minutes (or 300 degrees), add butter. Remove from heat & add baking soda & vanilla. Stir quickly & thoroughly. Pour at once onto the buttered cookie sheet. Do not spread with spoon, instead with 2 forks lift & pull peanut mixture into a rectangle about 14X12. Cool, break into pieces.

    When microwaves became the “new” kitchen appliance in the early 80s, a dear friend gave me the recipe to make peanut brittle and caramel corn in it. It has been my go to for many years and never disappoints!

    I was tickled to find this Carmel corn recipe! Thank you so much. My dad made peanut brittle every year for folks at church. He was known for his homemade ice cream and peanut brittle, but he made in the peanut brittle in the microwave. It's very simple to do that way. Thanks again.

I made my first brittle last week, I’m 70 yo😳, and had always thought brittle was extremely hard to make. I did it in the microwave, made peanut and pecan brittle and it’s delicious.     I make this from my aunt and uncle's recipe. It is soooo good. I make my caramel sauce in the microwave. Just melt the brown sugar, corn syrup and butter in the microwave for two minutes. Take it out and stir it. Return to microwave for 2 more minutes. Take out and add baking soda. This gives it the volume.

    I just made my mother-in-law’s peanut brittle recipe, she has gone to be with the Lord now, it is made in the microwave. It just didn’t have that rich caramel color and it is very sticky. So I found your recipe made it and it is wonderful, I poured it on a cookie sheet with parchment paper and I didn’t to clean it. Thank you for posting your recipe.

    I bake and make candy for a living nowadays and I do my peanut brittle in the microwave it's quicker it's less mess it's delicious and it's just as good as what I used to make in my cast iron skillet. :-) merry Christmas and happy holidays :-)

    Stumbled upon this video and must say I loved the energy you have. I will have to try these out! Does it have to be a brown bag for the popcorn or can it be a bowl or something?

      I have never tried it with a bowl, but as long as it is microwave safe, it should work. Just watch it very closely to make sure it doesn't burn

    For people with peanut allergies. We used mini pretzels, or chow mein noodles, coconut, could not find mini pretzel so broke up regular ones. Before it cools added m&m, and recesses pieces. Finally a peanut brittle for people with allergies

    Microwave peanut brittle takes 7 min. Is delicious ! And quick. I never butter pan, just breaks up fine.

    It’s easier to put the popcorn into the pot after u made the caramel. Then pour into the bag. It coats better too.

      Collard Valley Cooks has a microwave version of peanut brittle and takes 10 minutes to cook plus about 5 minutes prep/assembly...I just made some - it's rich, buttery, and delicious 😉👍🏻

      You can bake it in the oven, but it takes longer. Preheat oven to 250 degrees F. Place popcorn on large flat pan. Pour prepared syrup over popcorn. Stir quickly. Bake about 40 minutes, stirring occassionally.

      My latest microwave is 1,000 watts. However over the years, I have used several different microwaves to make this recipe and have had to adjust the time according to the microwave. Hope this helps

      Raw Spanish Peanuts have a higher oil content than other peanuts and have a strong bold nutty flavor when roasted.

    I'm terrified of caramel. I am creation's worst caramel making lady ever to make caramel. I made it perfectly the first time for bread popcorn, then waited too long until my next attempt. Now each subsequent try has turned to crystal or failed to harden.
    Would the corn syrup change anything?

    I have made this recipe a couple of times. Mine always turns out gritty and dry. What am I doing wrong? The texture is almost like seafoam candy, if you know what I mean.
