My Aunt's Microwave Peanut Brittle | Made with only 6 ingredients!

- My aunt has been making this microwave peanut brittle for as long as she’s had a microwave. They are a popular gift during the holidays and she makes them for family and parishioners at her church.
I’ve always want to make them and I finally got the recipe from here. A few things to note about this, though, is that every microwave is different. The times I list here may not be the same for your microwave. So, your first or second batch may not be perfect. But, once you have the timing down for your microwave, you’ll be making batch after batch for family and friends.
Also, because this is a quick recipe, measure out all of your ingredients first and have them ready as the microwave completes each cycle.
Peanut Brittle Recipe
Ingredients
1 cu Granulated Sugar
1/2 cu Light Corn Syrup
1 1/2 cu Unsalted Dry Roasted Peanuts
2 tbl Butter
1 1/2 tsp Vanilla Extract
1 tsp Baking Soda
Additional tools
Microwave Oven Safe Bowl (about 1 1/2 quart size)
Metal Spoon
Canola Oil Spray
9”x13” Baking Sheet
Well padded oven mitts or thick kitchen towel
Method
Prepare pan by spraying it with canola oil spray and set aside. Spray the spoon you’ll be working with as well.
Mix sugar and corn syrup together in microwave safe bowl. Microwave high for 5 minutes. Add the dry roasted peanuts and stir to combine. Microwave for 2 minutes.
Stir in the butter and vanilla. Microwave for 1 minute longer.
Remove bowl and add baking soda. Mixture will foam a bit. Stir quickly and then pour into a prepared baking sheet. Spread mixture out to corners and smooth out evenly.
Let mixture cool completely and harden for at least 30 minutes or longer. Once cool, break into pieces and store in a plastic bag. - Jak na to + styl
Wayne, I saw you when you did this the VERY FIRST TIME on WMAQ Chicago, and you know how long ago that was. I lost my copy of the recipe over the course of time, and moves, and now I'm living in Texas. But fortunately, I was able to find it just by Googling Wayne's Microwave Peanut Brittle! And it's still as delicious was the very first time I tried it! Thank you so much!

He could eat all the contents of the box before anyone else could get one piece. I can't wait to make this peanut brittle and share it with his wife, 4 grown children and his twin sister. I use a quart Pyrex measuring cup with a handle and w wooden spoon (both can be used in the microwave). I just leave the wooden spoon in the Pyrex measuring cup while cooking.

I made it and it turned out great. The one thing I learned was to warm the oiled sheet pan in the oven and you will have more time to spread the mixture.

This recipe sounds perfect for me. I love Peanut Brittle but I can no longer stand for a long time at the stove stirring anything. I have a compression fracture in my back that prohibits me from doing many things in the kitchen I would like to still be able to do. This is one of those. THANK YOU so very much. Very first time making peanut brittle. Of course I went straight to Pinterest to see what I could find. Well I looked, I found, I made!! Flop!! You probably didn't get your first batch hot enough. It has to reach 310 degrees, which is called "hard-crack stage"

Is it as good as “Sees” candies peanut brittle? It’s mostly butter. It’s the best I’ve ever tasted in any state or country.

Be REALLY SURE about the Microwave Strength or Wattage and the time. I believe this is the right time. If you get it too hot it will ruin. Not hot enough and it will edible but soft. Overall it is extremely easy to make this way. Thanks Friend.

Love your presentation. I have a 900 watt oven. do I need to adjust the minutes for cooking time?
Thank you, Nancy. I wish I was good at all the variations of microwaves. But, I haven't tested the recipe in a 900 watts. I think it will take a bit longer...but it may have to be a bit of experimentation on your part to get the optimal time.
So I used your recipe and it turned out great! Me being me said hey I will make a double batch. Well it turned out like peanut taffy, tasted good but chewy not brittle. Well heck if I have chewy peanuts why not make peanut chews so I dipped the cut squares into melted chocolate and voila awesome chocolate covered peanut chews. See I didn't actually screw up I intended that all along. Yeah sure that's it. Give it a try they were really good.

I use raw peanuts in the thin skin. I don’t like it too well. Would like to try your recipe. Can you tell me wattage of your microwave?

I wouldn't advise doing a double batch. The timing doesn't translate well and the consistency isn't right. It's better to just make two or the original size.

What "Watt's" is your Microwave? Microwaves have different Watts that can change the time.

Don’t get me wrong I love your recipe but I think my microwave is too powerful for it that long it goes a dark brown almost burnt
I love your recipe, but what is the wattage of your microwave oven? I wasn't successful in making it the first time on the stove top, so I'm going to try the microwave method.
My microwave is rather basic. It's 1.2 cubic feet and 1100 Watts.

Yes! I've never tried a double batch. The sugar has to reach a certain temp and with a double batch it probably takes longer (but I'm not sure wha that timing would be).
Where can you get corn syrup in the UK? My supermarket dosen't stock it.
I'm not positive, but I did find this online: In the UK golden syrup is the closest substitute and is a refined sugar syrup made from sugar cane. It is more viscous than corn syrup and it can be used as a substitute for corn syrup in most recipes. However if a large quantity of the syrup is used, such as for a pecan pie, you may find that the filling is a little more chewy when made with golden syrup.
I also read you can buy it online in the UK.

Yes. I’ve only used salted. Unsalted is good, though, I guess, if you’re trying to watch your salt intake. 🙂

Do you mean the canola oil spray? You can use other oil sprays (but olive oil would leave a bit of an aftertaste that wouldn't compliment the flavor). If you mean the "corn syrup" you can't replace that with something else...that and the sugar reach a high temperature and that is a critical part of the process.
