INGREDIENTS
- 2 cups sugar
- 2 cups raw peanuts
- 2 tbsp unsalted butter
- 1 cup white corn syrup
- 1/2 cup hot water
- 1 tsp vanilla extract
- 2 tsp baking soda
INSTRUCTIONS
- Combine the sugar, corn syrup, and hot water in a 4-quart heavy bottom kettle. Place over medium-high heat and bring to a boil. Continue to cook and bring it to a temperature of 250°F. Use a candy thermometer to check the temperature. I like using a high-quality instant-read thermometer, but a good candy thermometer fitted on your kettle will work as well.
- Once at 250°F, add in raw peanuts and unsalted butter. Raw peanuts are a must with this recipe as they have a longer cooking time at high heat. Once the peanuts are added, stir the mixture continuously so no peanuts scorch on the bottom. Bring mixture up to 310°F.
- Once at 310°F, remove from heat and add vanilla and soda. The mixture will foam and grow so make sure to stir constantly to completely incorporate.
- Working quickly, pour into prepared 10×15 pan. To keep the brittle light and airy, do not spread or flatten the mixture. Instead, let it flow freely.
- Place in a cool area and leave until completely cooled, about 2-3 hours.
- Once cooled, break into pieces as preferred. - Jak na to + styl
I have made your Brittle for Christmas the last 3 years. My family loves it
You made me a hero in my household. The kids love it, thank you for the recipe!
I just made peanut brittle for the first time using your recipe/ video, Kaleb. Everyone that has eaten it said its the best they have ever had!! Thanks again for making me look like I know what I'm doing. 😂😂 You make this all seem so easy. Merry Christmas! 🎄☃️🎄
I like how loyal you are to your mom and grandmother. So sweet.
Your videos are great. You have great poise, and you're easy to listen to.
Absolutely love the airy texture in this peanut brittle! I made it last year and will make it again for my aunt who loves it .
Kaleb, thank you! Finally someone who makes peanut brittle the correct way. I make this every year and give as gifts.
Made your recipe last Christmas and I received dozens of compliments. Mainly because of how easy it was to bite into and chew. People can have peanut brittle without breaking a tooth. I will be making this again this Christmas. Thanks for sharing your grandma’s recipe!
Our senior center loved this🎉
I enjoyed seeing you rub butter onto the pan. It brings back good memories from my mother and Grandmother ❤️😳
*I love Jesus! God bless you always!*
Made this for the first time.
My family went crazy over this. Thank you for everything you do ⚘
I'm from Montreal and have seen many of your videos, have enjoyed all of them but I have to say you seem so much more confident and comfortable in making them . You've come a long way and that should make you proud. Good work. Great recipes. Wishing you and you family a safe and happy christmas.
I love that you tell why you do things the way you do them. Many people tell us what to do but don't let us know why we should do it. Knowing why it has to be done shows us that we should not skip that step when we are in a hurry.
I asked my wife to make this yesterday and dear lord they are delicious! Thank you for sharing!
Just made this and it’s absolutely fool proof! Thank you!! I’ve watched so many videos of this and you are the only one on point!! 💃💃💃🙏
I've made your Brittle 3 times, tonight I'm suprising my sister with some . I've made your toffee and Carmel. Thank you for sharing. Your amazing!!!
Love the way you explain your recipes! Thank you for sharing 🥰
Just found your channel and loving it. What I am finding is that you took the time to not only learn from your Grandma and mom, you made sure you had the recipes. My Mamaw has passed, I made many things in her kitchen and learned much while in the garden with her...but recipes...they seem to have disappeared in the family shuffle. So finding these gems takes me back to my Mamaw with the recipes I need to share with the family. Thank you!
I can’t wait to make this for my sister for Christmas 😍 it is her favorite candy/treat
Wow!! Another sensational quick, easy and delish recipe. Thank you xx.
This is EXACTLY how my husband and I make it! We LOVE it!
Looks amazing. Can’t wait to try it!
I’ve made this super easy recipe twice, first time it came out perfect. Second time not so much. I needed a new candy thermometer, so now I have one and going to make it again. Thanks for such an easy and delish recipe to make. Liz
Just poured this out and it looks and smells amazing! Can’t wait! Thanks, Kaleb!
That’s a great looking brittle. Thanks for the special clues to not spread the hot ingredients. I like the thickness too. I want some now!!!
I am from sta Rosa Laguna I am watching you tube channel to teach how to cook peanut brittle.i like peanut brittle And salted peanut thank you so much
I have used your recipe and not spreading once poured. It is by far the best brittle ever! I make it in the holidays and through out the year because I love brittle.
I thought it would be harder to make. I just started making Christmas candy last year and now I love learning new candy recipes. I’m going to try this.
Yum, yum, yum, just made , cooled enough to let me crack a corner, rockin your recipes this Christmas.
I love your videos how you explain everything I'm going to make these for sure thank you.
Just made this because you said I can! It’s cooling and looks so good. Thank you for encouraging someone like me. Made your toffee yesterday. It is a great recipe-so good! Thank you for all your videos. Merry Christmas and Happy New Year everyone 🎈
Just made this again for this years Christmas candy bowl and as usual it turned out perfect. Even with me forgetting the butter until I saw it still sitting on the countertop after I had already poured it out onto my candy mat 😆
Thanks for sharing this with us!
Just made it and it was extremely easy!!! Just waiting for it to cool!!! I can’t wait to try
By far the best recipe! It is always a pleasure to watch your videos. My first batch turned out exactly as yours. Thank you so much for your thorough tutorial and secret tips. 😋
I love this recipe! I have made 5 batches in the last 8 weeks. Everyone Loves it! Thank you and your Granma for sharing :)
I tried a microwave recipe and burned the peanut brittle. It's after Christmas now but my son keeps asking if I made the peanut brittle! Going to make your grandma's recipe tomorrow. Thanks for sharing.💙
Best brittle recipe I've ever made! Thank you!
That's beautiful!
Thank you for sharing your Grandma's peanut brittle recipe. I've made it 3 times and it is delish. Can't wait for Christmas do I can give pretty gift boxes of this treasure to those I care about. It is wonderful and your video was so much fun to watch and "do". Keep 'em comin'. 😊😊🤗
Finally made this yesterday and it turned out great...I can't believe I waited so long to try it!
First video to see of yours as a recommendation from Laura at Garden Answer, but I went straight to this! ❤️ I cannot wait to try!! You make it seem so doable and I’ve never tried to make peanut brittle or toffee before...definitely will!
I made it, and It came out soooo good the best I ever made, I am so excited. It’s so true what he says it comes out airy not hard.
Merry Christmas! I’m a new fan. I just love your personality. You are very entertaining, articulate, and well versed. Thank you
Just like my peanut brittle; love it. My grandmother was a great cook. Both grandmothers were great cooks and passed it along to the girls, but my paternal gran was a great cookie, cakes, and candy maker too. I haven't made this for a long time; my husband loved my cooking & baking. My oldest sis great in the kitchen but youngest suck at it. Anyway thank you for sharing your beloved recipe.
I am so going to make this!! Thanks for sharing😍
Thank you so much for this
O made it! my first time ever making Peanut Btittle. and it turned out perfect. My husbands favorite candy. Thank you so much, Merry Christmas
Looks so good!!!!
Awesome video! I'm going to try making this!
I like this recipe I will try it. Thank you for explaining this & that so it will come out good !
Love your recipe for brittle. Amazing.
Thank you for explaining not to spread the brittle. I have always been told to spread and stretch it. Doing it your way made the perfect texture not hard to bite at all!
This is the recipe I’ve been looking for! Blessings
Greetings from Wyoming. I think I can make that brittle. Thank you for sharing. Love your videos.
Thank you for sharing❤
Thanks for the recipe kind sir
Yes sir! This recipe is a must make. 😋
Made my first peanut brittle today. The best it's was easy and fool proof. . Thank you for the recipe😘
*Making it right this very moment!!!!*
Only substitute here is raw, semi toasted, pecans!
_Crossing my fingers_
*God Bless, and thank you!*
This was my dad's favorite! My mom made it at Christmas to please him.
His mom had moved on to Divinity, which he thought nasty. My grandmother refused to make Divinity when we were there. I was frustrated at 8, to not get to learn it. I never understood until I watched a video. Candy making can be dangerous with children near the kitchen.
I made toffee and sent it out this year, now it is time to learn brittle. Thankyou for making it possible!
I made you recipe and it turned out GREAT! I've tried making brittle before this, but it didn't go well. Thank you for making it easy and fun.
Thank you for this wonderful recipe. I just made this and......It is awesome, I love it. I will keep on making it with your Grandma's and Mom's recipe. Merry Christmas and Happy New Year.
I made this recipe and it is fabulous. Thank you for sharing
As another follow-up a year later, for those without a candy thermometer, the first boil takes about 5 to 6 minutes on high heat to reach 210F, then an additional 10 minutes on high heat after adding the peanuts and butter. It seems like a long time, but anything less than 10 minutes will result in a chewy caramel-like result, not the crunchy brittle that you want.
Third year making this and sending it to family, thank you for keeping this up. I lost my printout.
On my list to make!
You are adorable ..Thank you for the super amazing video..My favorite is the brittle also and I didn't know how to make it
Great video. You make this so fun with your enthusiasm I watched it twice, and saved it of course. I like the fluffy brittles like you, so I'm sure this brittle is sure to please. I'm going to add little pretzel balls to the mix. Actually you could add almost anything! Thank you so much! 😊
Mmmmm thank you so much
Yours is the only peanut brittle I make. Thanks for sharing this recipe.
Looks exactly like the brittle o love!!!!
I'm definitely gonna try this I love making candy !!
Going to make this AGAIN this year. Kaleb, your suggestion to not spread was perfect. Thank you so much. Delicious brittle 😁👍🏻👍🏻
Its so good!!!!!
it is perfect i loved it and so did my family > Thank you so much.
I’ve just made my second batch of this! The best texture ever! Thanks so much for the instructions ❤️
I have dry roasted peanuts 🥜 will that work
Or also i have cashews ❓
@@wendyrodriguez5375 you’ll have to use raw nuts because of such high heat, it might burn the dry roasted nuts. You can find raw peanuts in baking isle at stores. Hope that helps
Just picked up my raw peanuts. On to the brittle! Thanks for another great recipe.
Your peanut brittle looks so yummy and your kitchen is so beautiful 😊.
This is the recipe that made me subscribe to your channel years ago! 👍
Me too! This has been my go-to peanut brittle recipe for years now.
I wanted to make peanut brittle this year as I have never made it before, I looked at several
Recipes & I decided on yours because u made it look so easy, turned out wonderful. I had to
giggle when u were pouring it into the pan & u said do not touch it, do NOT touch it, Lol.
So i did not touch it, so light & airy, it’s a keeper for me. Now onto your other candy’s . My family
for the first time this year r not gathering together because of COVID-19 & I am delivering
food to each family & also along with that will be your candy goodies.
it's sound crispy 😍
Such a sweetie!
Made some tonight. Waiting for it to cool now. You have THE BEST channel! I found you when I needed a pickled beet recipe and I’ve been hooked on you ever since! 😁❤️ Also, I’d like to see who is behind the camera! 😉
You say dont touch it to spread it out. My grandmother always made hers in foil pie pans, then spun them to spread it out. It was perfect thickness, and as brittle/fluffy as could be.
I'm making this for Christmas ☃️🎄
I just made this with xyltol sugar. Fantastic
Thanks!
Looks just like my moms peanut brittle! Thanks!
Hello. I made my first peanut brittle! Thanks for sharing. Though I didn't use your recipe exactly, ( used dry roasted peanuts because couldn't find raw and 4 T butter, so I them added closer to 280 degrees so they would not burn) I used your tips. i.e., used a digital thermometer, constant stirring and watched for the change in color and paid close attention to the temperature. Most important after I poured in the pan I did not Touch it! Delicious , crisp and not too hard. Those I gave to enjoyed it.
mmm lov it my favorite
I just made mine and oh did i want to spread it lol .. but i needed another pan so i sprinkled Butterfinger sprinkles on it and oh my goodness it was great !!
Yummy.
Yummy!!!
I cannot believe you made this video a few years ago, instead of making this video a few days ago, as it looks like it was made today and it's Amazing!!!
The Look,The Color, And It looks sooo good until I can Almost Smell Just How Tasty it is in the pan before breaking it into pieces!!😂
You've really done an Amazing Job creating your Peanut Brittle!! 🙂😂😂🎉🎉
And....
You Are A Very Beautiful Man To Boot!!
I want to see More of You, Please!!!
T
Hooray!
"you don't want things to get sticky on your heavy-bottomed pan"....Got it.
By the way, I like it thick too and the butter helps it release so easily!!!!!!!
and after I get what I wanted, I wipe it off right after too!!! YEAHHH!!!
Lovely to do an it's raw peanut s to used
What brand of heavy bottom 4qt pan , thermometer and baking pan would you recommend. Ty.
Yummo! 😛 What exact thermometer do you use? Do you have an Amazon link for it? Thx!
Wanted to make some peanut brittle (I think the dalgona candy craze got to me), and came to this video to refresh my memory. TY for saying not to "pull" the brittle. To each their own, but it drives me nuts for the same reason you mention here. All that work for the fluffiness and air...and then it's flattened and hardened? No, no, no! LOL!! TYSM!
