    Ingredients
    ¼ cup (60 mL) water
    1 ½ cup (340 g) sugar
    ½ cup (125 mL) white corn syrup
    2 Tbsp (30 g) unsalted butter
    1 tsp (5 g) baking soda
    1 tsp (5 mL) vanilla extract
    1 ½ cup (205 g) lightly toasted nuts, such as peanuts, cashews and/or pistachios
    1 pinch coarse sea salt
    Directions
    1. Line a baking tray with parchment paper and lightly grease it. Ready all the ingredients before you start cooking the sugar.
    2. Bring the water, sugar and corn syrup up to a boil over high heat and continue to boil, uncovered until it is a light amber colour and occasionally brushing down the sides of the pot with water. Remove the pot from the heat and immediately stir in the butter, baking soda and vanilla, taking care for the steam. Stir in the nuts and spread this on the prepared baking tray, spreading to disperse the nuts evenly. Sprinkle the brittle with sea salt and let cool completely to room temperature before cracking to eat or use as a dessert garnish.
    3. The brittle will keep in an airtight container for up to a week.

    This is the ONLY brittle recipe that has worked out 100% for me.
    I did mess up on the 3rd try only because I was trying to experiment to see if I could form a soft brittle.
    I was looking for my childhood favorite round, red, soft peanut candy.
    I love them and Boston Baked Beans candy.
    Abyhhoot, i fixes my peanut brittle by putting the messed up brittle back in a pot on the stove and stir stir stir until it is ar the right temperature as you would do in Mes Olsen's recipe.
    PS.
    I did play with another batch and added a little hot water and equal hot milk to the mixture on the stove, stir stir stir.
    I really don't remember how much water and at what time but the soft peanut candy was almost like the old fashion Peanut Patties 💕

    I used this recipe to make my first time ever brittle as a Christmas gift for my coworkers and it turned out exactly perfect as on video. I made 3 batches in a row and all came out perfectly delicious. It was risky to make it for the first time not knowing the taste but it came out with a great success. Thank you Anna for straight forward recipe with correct proportions.

    The mixture must reach 285 to 300F or your brittle won't set properly. For those who don't have a candy thermometer, you're looking at no less than a 10 minute boil on very high heat. If your brittle didn't set, it wasn't hot enough 😤

    In Indonesia, we call it ampyang. And instead of white sugar, we use coconut sugar. FYI.

    Could you use golden syrup in this? I had a friend send me some from the U.K. for a couple of recipes I wanted to try making. (I later found a recipe to make some at home, but have yet to try it.)

    Can that be made without the syrup? If not, can the light cornsyrup be replaced with glucose syrup?

    You boil the caramel to a certain tempreture or just to reach the Amber color.

      Islem Amouri it does have a certain temp. , but you actually don’t need a thermometer for caramel , just wait till it reaches this beautiful amber colour , and you’re all set .

    Put pans in warm oven , no need to butter them.
    Warm pans keep the brittle from sticking

    Great Flavor but what am I doing wrong? Mine is brittle and it breaks beautifully but when you chew it it could take your fillings out becasue it is so sticky...

      Yes corn syrup is bad for your health. You don't need corn syrup to make caramel. Just follow the rest of the instructions omitting the corn syrup.

    Okay great recipe I love it sm came out so tasty, but step three in the description is literally 10 steps and the last step is "put it in a container" I'm dying

    No, I dont trust this. I grew up in the south, around church ladies that made this constantly and it was the best brittle. The baking soda always went in right at the end. Never during cooking.

    Your recipe did not work. Brittle did not get hard!

      You did something wrong then, make sure your sugar gets hot enough

      I used her recipe for the first time ever making the brittle. Made 3 batches in a row with exact outcome as on video. You must have missed something. Sorry.
