My great grandmother would make this for me whenever I'd visit. When she passed all of her cookbooks were given away to other family. When I tried your recipe I finally got that magical taste again as if she made it herself . Thank you from the bottom of my heart.

As a child, growing up in Rio de Janeiro, Brazil, this was always, and still is my favorite candy.
Peanut brittle, also known as "Pé de Moléque", and something else called "Cocada", which is a similar sweet but instead of peanuts, you use fresh bits of coconut shredded in large pieces. Delicious!
The name "Pé de Moléque" could be roughly translated as "rascal's foot".
It was given its name in reference to a child's foot, especially that of a boy, who spend his days on the streets, walking bare footed over stones, which would develop several lumps and calluses.

Oh... Don't worry. We did it because we wanted to. I too used to run all over the place without shoes, or sandals, or anything else.
If I had a dollar for every time, playing ball with my friends on the street, I kicked the stones instead of the ball, and lost the tip of my toe or popped a nail while doing it, I would be a rich man.
I can't find the measurements for the brittle.
I didn't find corn syrup so I used glucose syrup instead. It can be found in almost any supermarket in Finland and seemed to work just fine. Made this as a Fathers day gift and it was delicious!

I make pecan brittle every year at Christmas for my sister brother in law and niece. I vacuum pack it and send it in the mail. I used the cookie sheets so the brittle is half as thick and baking soda. Soda makes it brittle, powder makes it toffee. While they are in the vacuum package my kin will slap it on the counter until the pieces are just right for them. and you don't lose the crumbs :D

Interesting-all the brittle recipes I’ve seen in the US specifically call for baking soda (bicarbonate of soda) and not baking powder. We also have three kinds of corn syrup: high fructose (not available at grocery stores, and probably unhealthy), light corn syrup, and dark corn syrup. For candy making we use light corn syrup. Old recipes may call for Karo syrup which is a brand name for light corn syrup. “Light” refers to the color, not the calories.

Yup in the the US it is baking soda not baking powder which is a combination of baking soda, cream of tartar and corn starch, plus Karo light corn syrup for best results.
Yeah, I noticed that too. The baking soda really makes it go haywire with the bubbling. It's like a candy volcano. Lol.

Having both your excellent books and made good use of them I was wondering if you had lans for a third with a cheese and butter theme! by the way I love the introduction of the QR"s, really great idea. I mention the butter because I can't find a video for it but remember it was hidden within one of the bread videos instead. Anyway thanks again mate.
I do have plans for book 3, but not cheese recipes, they are a bit above my head, although I am a retired chef, cheese making is more of a hobby, I don't feel qualified to write a book on the subject.

@@JohnKirkwoodProFoodHomemade well John your the chef,,, I've not seen a video for a lovely smooth Fudge on your channel yet that's why it's just a suggestion, I'm no chef,, but can cook, even though we all mess up now and then, I've made my own shortbread too, but I didn't use normal sugar or caster sugar,,,I used icing sugar yep, icing sugar,, plain all purpose flour, and pure butter and vanilla extract, a tesp ,,,,and it was very moreish just like you get in the shops, but much better, pale in color but I do like a little toasted color but not so it looks brown, it was realy good and went fast!!!! Then I was asked by one of my sons to make some more,, I put nuts in some chocolate chips, might try a little ginger next time. Another favourite of mine is rum babas, a ring donut soaked in a run and sugar liquor, and fresh whipped cream in the center of the donut sprinkled with plain chocolate gratings yummy,!!! I normally use captain Morgan spiced rum. Anyway I've gone on long enough take care my friend, and stay safe.🥯🍦🧁🍫🍧🥮🍱👍

Hey John! This takes me back too! The buttery taste of the brittle with those delicious nuts is just heavenly. If I'm not mistaken and it's been a few years since I made brittle, I think we always used baking "soda" in our recipe. Does baking powder make it more of a softer texture like I've seen people make that "honeycomb" candy? Great recipe, have a wonderful day my friend...Big ((Hugs)) and Love from Texas!! xx : )

Hi, It is tricky to make brittle being a diabitic, but possible. I have done it with stevia, and no syrup. The consistently and texture is different, but you get use to it uickly as it taste good. thanks Lazaro
