  • Peanut brittle is so easy to make and incredibly delicious. It's a great recipe for any time of year, especially the Holidays. I usually make up a nice batch for Christmas.     I made this as a science project a million years ago...solid turning to liquid turning back to solid...it was the teacher's homework for us...lol (btw, we got extra credit for bringing in a sample for the teacher as proof...lol Great teacher he was!) I have since lost the recipe, and after digging for a long time, found it here! Thank you so much for not adding baking soda or corn syrup...am headed to the kitchen now to do a little science...lol

    warning: be sure not to cook it for too long, it will turn bitter.
    Once it turning light brown, pour peanut immediately and pour it out

      it takes 5-7minute to turn brown. So it depends on the type of pot you use

    Help please. I have tried to make this three times. I end up with a thick white granulated mess. What am I doing wrong?

      I had the same problem. You might be using a pot that's too small. I had to keep adding water when it kept turning granular until I turned the heat all the way up, but it worked out in the end.

      Scratch that. I figured out a much better way. Use a 1 qt pot (with a pan Underneath if your pot is thin).
      1 cup sugar
      2 tbsp water
      1 tsp lemon juice
      Let boil and caramelize. If you're worried about the liquidy consistency spread very thin tiny test pieces on some aluminum or something to see if it hardens. Do the test pieces before caramelizes and as you go along.

      Make sure you are not adding too much water. Leave the mixture, stirring regularly until you can see it turning golden brown, however long that takes. It simply isn't cooking for long enough. That can vary, depending on the pot you use.

    I'm thinking about making some right now. You make it look so easy. I wonder if it matters what type of pot or pan you melt the sugar and water in? And when do you put the vanilla in? I'm thinking about adding bacon. So I have to factor in the bacon when do I put it in. And maybe chocolate chips how that affected.

      I've always used a pot. You could use a pan, but it might be a bit wide. I would add the extract in with the peanuts. Same with the bacon. Not sure about the chocolate though. I would add it with the rest if you want to try it. Let us know how you make out as I'm curious. Hope this helps.

    i would recommend adding about two table spoons of butter because i had trouble with it then added the butter and it came out a lot better

    I tried the recipe today used granulated sugar couldnt get it to caramelise, mixture just went back to sugar,tried caster sugar got same result.What did I do wrong??

      TheCooknShare I did the exact way you said, even made sure I used Domino sugar, an hr and half goes by...it never caramelized. I totally wanted to not to have to use Carole Syrup. All that sugar is enough. Disappointed, but I'll figure something out!! Have a great Holiday!!

    My dad used to make toffees the same way but he added peppermint extract to give more flaver. You should try that next time you make peanut brittle.

    I tried this recipe (I doubled the mixture) used heavy stainless pan, on a med to low heat. Got it to the bubbling but it didn’t caramelised 😭😔

    Not trying to drive you crazy. I'm just truly trying to help. You seem like a very nice guy, also trying to help us "candy lovers" of peanut brittle out, but at the same time, I think by accident you left one ingredient out or you totally have a certain technique that us ladies don't have. Don't forget we ladies like being precise. know every detail. Anyway, I found out on another channel that you should stir constantly and No water needed. Don't worry about the clumps of suger just throw those out and basically stir in the peanuts until well mixed. Although, she didn't add vanilla and butter. Definitely about to experiment at 4:44am, cause my family's party is today. Totally riding on God's strength now. Dealing with hospitals, shopping, last minute everything at this point. But you know, Our God is Awesome!!! He gives us strength outside our own understanding. I got this!! Ok..Hope that vital information helps us all out.     Sugar liquifies over heat so water is not needed. Traditional peanut brittle is made with baking soda. Unless the peanuts are salted, adding salt is an essential component in the recipe.

    I’ve tried this 3 times and for some reason my sugar doesn’t ever start to brown.. it just gets really thick like cement 😢

      It's really tricky. Keep the heat low to start with. Sometimes I lift it on and off the heat. Hope this helps.

      No, you can't use only honey. If you have a recipe that calls for sugar and corn syrup, you can substitute the honey for the corn syrup. Honey has to much water in it to cook down and caramelize like it's supposed to.

      You're right. We tried and it didn't work. But I wonder why the peanut brittle we made was moist and didn't look good when wrapped in plastic. I think it has something to do with the duration of cooling time. Am I right gargois1? Can you help me with this TheCooknShare? Thanks in advance!

      Yes, too much moisture indicates that you didn't cook it long enough. Part of the process is to evaporate as much of the moisture out as you can. Do you have a candy thermometer? if not, please get one. They are not expensive and will take so much of the guesswork out of candy making.

    This is not actually peanut brittle if you can see through the brittle. That is what it's called crocante in Italy. The reason being that this is not peanut brittle is that it is missing the baking soda to make it opaque lighter in texture this is more of just to see through boiled sugar with peanuts in it , crocante. Many people may prefer this however those with Dentures need to stay away unless you take a small piece and suck on it because it's not very chewable it is like glass but much thicker. If you've never had or seen peanut brittle this is not the recipe I would use. Look for a recipe with baking soda. Then you will be making peanut brittle for those who have had crocante and prefer that which is usually made with almonds or pine nuts you can make what you wish if you've had peanut brittle before. Peanut brittle is a many many generations old recipe for Holiday times and I think everybody should learn how to make it and learn the flavor as it is so lovely! :-)

    This turns out more like one expects on a lollipop with peanuts than a brittle. I think there is missing something, maybe butter or whatever.

      If you add butter that would make it a peanut toffee. This is peanut brittle as it is brittle. Its in the name really.

    This recipe has failed me 3 times and I'm so frustrated. I can't get ANY
    peanut brittle recipe to work, not just this one, so clearly it's my fault. In this recipe, the sugar never turns brown. Ever. I tried a slightly higher heat, but that doesn't help. Eventually it goes back to being crystals again and makes a mess out of my pot. What am I doing wrong?

      Hi. The real important trick is that low and slow 5 minute simmer. Then give it a stir and let it simmer for an additional 5 minutes. At that point it should begin to turn brown. Also make sure you're using white granulated sugar. Let us know how it comes out. Also if you cook it too long, the sugar will go back to crystals again. I know it''s tricky.

      I'm using white granulated sugar. I've tried it again, but it doesn't brown. I also tried Mark Bittman's recipe twice, and had a bit better luck. His is the same as yours, except he calls for 2 cups of sugar, medium heat. Someone just told me that stirring is what recrystalizes the sugar (which eventually re-melts, and that's how I made the Bittman recipe). Your recipe has failed me a total of 4 times. It simply NEVER turns brown. It foams and bubbles, and then turns back into crystals, and then burns. All 4 times. I also tried 2 different recipes that call for corn syrup, and water. But those were swimming pools. I'm determined to succeed, but this yours just isn't working for me at all.
