I made this last night. Is your grandmother the secret creator of butterfingers!? It's delicious and it's legit like eating the inside of a butterfinger but with nuts.
So I just learned this and thought I would share - If using raw peanuts add them at the beginning, so they cook along with the sugar mixture. If fact, by doing so, you'll flavor the sugar mixture, giving everything a nice peanut flavor. If you are not using raw peanuts, then add them when the mixture is at 240 degrees. You then proceed as normal with the recipe. Hope that helps, 😊

I like the asian version of peanut brittle: just hugely up the percentage of peanuts to sugar and skip the horrible baking soda. Skinned peanuts are best and some of the peanut oil softly crisps the sugar brittle along with the butter. Add sesame seed if you like. Cut while warm into peanut bars stuck together with caramelized sugar (and butter).

It's easy but you must have a candy thermometer. And if it's something like divinity, it won't set up in humidity.
