    Description of video & Ingredients:
    In this video Barry shows you how to make some homemade peanut brittle using just caster sugar and peanuts. This makes a fantastic homemade gift and can is really quite easy if you are patient with it.
    Ingredients used - 300g caster sugar 150g unsalted peanuts.
    You could use salted nuts or a pinch of salt for an added kick.

    I used unsalted, but you could use salted or add a pinch of salt into the sugar once broken down with the nuts. Pretzels would be brilliant

    Amazing stuff Jen so glad you are doing it - haha as long as you didn't burn the sugar that's why it's best to do it on a low heat, you'll be a master at it and open your own sweet shop in no time

    put some melted chocolate on top once the brittle has set then leave the chocolate to cool, it tastes so good!

    Just finished making this with almonds. "Take your time" is right. We are just waiting now for it to cool. The pot is cooling and popping, very hot!

    Start with less sugar when first doing it to get your technique down - low heat is the most important bit

    I've always wanted to learn how to make peanut brittle. If I my ask, what can I use if I don't have corn syrup ?can you skip it all together?

    About the hob cover, did you use the oven that night? The heat on the oven takes two to three times more to cool completely. If the cover was down, the heat would be enough to cause the glass to expand, and "shrink" as it cooled down, creating a breaking point and, in a way, exploding. It happened to me once. If you use the oven at night, specially if it was on for a long period, do not put the cover down until the next day.

    Thanks for the video. Any tips as to why my batches (done 2) seem to go hard really quick and I can hardly spread the nuts around as its setting almost as soon as I add the nuts to the pan and even more so as I pore it onto my greaseproof paper?.

      It will probably keep a very long time since both peanuts and sugar usually don't get rancid

    I was out til late making a giant marshmallow - didn't get in til 11pm or so but Mrs Barry used the cooker around 9pm, this didn't shatter til 3am though. Definitely some expansion / shrink thing surely. Cheers
