Ingredients for Heartbreaker Nut Brittle:
3 cups nuts (blistered peanuts, raw almonds, macadamia, walnuts)
2 cups granulated sugar
1 1/2 cups water
1/2 teaspoon salt
2 TBSP butter
1 teaspoon vanilla
1/4 teaspoon baking soda

I don't think it's a lie - just a different technique :) Some people say you shouldn't stir it at all while it's boiling because it messes with the sugar crystals. There is a lot of feel to making candy -- especially if you aren't using a thermometer. Thanks for the great question!

They use palm sugar to make something similar in Indonesia. It tastes sweet and a little bit savory at the same time. :)

I have been making regular peanut brittle at Christmas time for about ....not telling how many years or I will give my age away! Anyway, now that I am working diligently at not using corn syrup until I see it marked NON GMO, I wanted to see if there were recipes for making brittle using just sugar. I did a google and there you were! Thank you!
Here is the recipe from her site........
Ingredients for Heartbreaker Nut Brittle:
3 cups nuts (blistered peanuts, raw almonds, macadamia, walnuts)
2 cups granulated sugar
1 1/2 cups water
1/2 teaspoon salt
2 TBSP butter
1 teaspoon vanilla
1/4 teaspoon baking soda
NOTES:
Makes about 5 cups brittle. Have all of the ingredients and equipment prepared before beginning. Once the sugar changes color you will need to act quickly. It’s also important to have even heat when you’re making candy. Use a heavy saucepan if possible. If you question your pan or your heating SOURCE, you can put your saucepan into a cast iron skillet to help distribute the heat.

You'd think it would be a disaster - I did too - but hot water dissolves the sugar right away. Like hot water on ice cubes ;)

I'm kind of wondering "how much of a pain" is it to clean the pan and spoon after this. Do you just soak them overnight to melt all the sugar?

Good question - not at all. Wash them with soap and hot water. The hot water dissolves the sugar right away. :)

On good tip is to not use metal utensils when working with hot sugar as the sugar will crystalize on the metal. :-)
