    Ingredients:
    16 oz can cocktail peanuts, a pinch of salt, 1 cup of light corn syrup, 2 cups of sugar, 1 tablespoon of vanilla flavor, 1 tablespoon of baking soda, 2 tablespoons of melted butter

    My little southern momma told me to never over work the finished brittle or you take all the air out of it, which helps to make it brittle.

    You can half this recipe; cook 1 cup sugar, 1/2 cup light karo syrup, and 1 - 1 1/2 cups spanish peanuts, stirred well, cook for 4 minutes on high, take out and stir, cook another 4 1/2 - 5 minutes. Take out - add 1 Tablespoon butter, 1 teaspoon vanilla and 1 1/2 teaspoons of baking soda, mix well, spread thin on well buttered sheet pan.

    We have made this so many times. Do NOT knock out all those wonderful bubbles the baking soda made!! Move as you pour…title the pan as needed.

    I've been making your microwave peanut brittle for a couple of months now. I just tried making it with brown sugar. It turned out just as good as with white sugar. Yummy!

    Get mama a silicon spatula it's a game changer. It can take very high temp and scrapes the bowl clean. It's also non stick naturally. Good tutorial, beautiful family made me miss my mom so much ❤.

    If you just pour it out and not stretch it (which breaks up all the tiny air bubbles), it's much easier to break, bite and chew!!! Just a little FYI!

    Any brittle sets up real fast so you got to work quickly to get it spread out or will be thick and not so easy to eat. It's supposed to shatter when you bite into it.

    I’ve never made brittle before, just poured it on the sheet about 15 minutes ago! My son said he loves peanut brittle but it’s too hard so he never eats it. I’m hoping this one changes his mind.

      Resist the urge to spread it out in the pan, the baking soda creates the tiny bubbles that make it fluffy instead of too hard, spreading it out destroys all the bubbles and it'll be hard as rock!
      Very nice adaptation to microwave, times will vary depending on your microwave! Temp should be 310 when you pour it!

    my microwave must be a higher power. I followed all the instructions but leaving it in 8 minutes each time and 3 min. my burnt. but I'll try it again

    I've made a couple of batches and I've watched several videos but you cook yours about twice as long as anybody else. I wonder what that does as far as the taste or the consistency of the peanut butter. Looks good. I saw that the places that do this commercially have a heated table that they work on when they pour it out so I'm going to try heating up my cookie sheet and see if I can spread it thinner since I put it outside to cool since it's winter.       She has double the recipe than other videos. I was also wondering about the difference in cook times. I see why here. You also have to watch the coloring as it cooks. If it starts to get too brown, you should probably stop cooking it and continue to the next step.

      @@ellakajfasz2569 One of the batches we did actually scorched a bit. I think I hadn't fully mixed it. Smelled burnt, was a dark brown. Was the favorite of all the batches. It had a really subtle smoky taste and was really good.

    I'm sorry I think the 8 x 2 min is too long. My mixture was burnt my microwavable glass dish broke when I placed it under the very hot water as I was instructed.

      Hi Nita! I'm sorry to hear of your experience with the peanut brittle. I don't know what went wrong in this case. What was shown on the video is how my mom makes her peanut brittle each and every time with no problem. After mom quickly spread the peanut mixture onto the baking pan, she put the bowl into a sink full of hot water as she usually does. She didn't let the bowl cool down at all. What I do know is microwaves and ovens vary because of the size and wattage. Again, I don't know what went wrong. My hope is that you are inspired to cook and continue to be a part of The Cart Pathway family. Thanks for watching Nita!

    Gotta make a double batch for Christmas so I'm making sure I have Mama's steps correct. You list a pinch of salt but I don't see where it's added in the process. Would I add it with the peanuts on the second 8 minutes or with the vanilla and butter for the 3 minute microwave?
    The family is VERY excited to know there'll be more for Christmas!

      Your peanut brittle is going to be a big hit with your friends and neighbors! After the brittle has cool completely, put it in a Ziploc bag. Mom stores her candy in the refrigerator, and I put mine in the pantry. It keeps well. Enjoy!

      @@kathyvaughn5546 Keep an eye on your mixture while it's in the microwave, to make sure it is not cooking too fast or too slow, (depending on your microwave). You don't want it to burn. Be careful when taking it out of the microwave because it is tremendously HOT. Mom has been making peanut brittle for years. I've never tried making it. Let me know how it turns out.     I never made brittle before I tried to make today but didn't come out my pecans burnt so I guess I have to put on for less time microwave is 1000 watts

    I cooked my candy at the time you noted, but it burned. I believe my microwave cooks hotter than yours so I will shorten the time and watch for the browning of the sugar. If all goes well, I will to remember to resend an update. I believe that should work.

This is just a suggestion to make sure the peanut brittle doesn't stick to the parchment paper, use a nonstick cooking spray but use lightly. Let me know how it turn out. Thanks for watching!

    Something else you can do is put another silpat or parchment paper over the top and use a rolling pin to roll it out flat quickly. :-) I am stealing Mama's technique of the microwave. :-)

    The baking soda does one thing: adds bubble's to make a crisp, easy bite. If you use 1/2 the amount, and DON'T smash it down it will be just as easily snap-able without ever being cement-teeth breaking- and can never be chewy, the first 8min boil solved that to the hard-crack stage. Otherwise, GREAT RECIPE! (I also half corn strip and add 1/2 stick of butter for flavor).

    I see everybody making peanut brittle with dry roasted peanuts. The problem is those have onion and garlic flavor on the outside! SMH
