      So far I learn a lot from this video of making my own caramel popcorn. I actually starting my own popcorn business but still lack of presentation. Maybe you can make other video of how to achieve perfect ball mushroom

      So there are several techniques to making the perfect mushroom ball of popcorn. We still use oil in popping our popcorn, but many experts rely on commercial hot air poppers. The problem with them is generally the cost which can be 20x more than traditional poppers. Make sure you purchase really high quality mushroom popcorn - I think it really makes a difference here.

    Would love to know the ratio of lecithin to oil and if you are using liquid or powder lecithin. The video was very interesting and informative. Thank you

      We only use liquid lecithin in confectionery (our sister baking company uses the powder form!). It is not much of a ratio as it is more of a micro percentage of the total batch.

    Dan,
    Do you have a suggested ratio of ingredients for making a good caramel like the one in the video, for coating popcorn for home use? Looks like brown sugar, water, butter, glucose (maybe as a powder mixed with water or as part of a corn syrup)? Any suggestions would be greatly appreciated.
