- Spicy Chilli Prawns 🌶️🌶️🌶️

Ingredients:
Large prawns, deveined & cleaned (8-10 pcs)
2 lemongrass, crushed
5-6 cherry tomatoes, whole
3-4 fresh kaffir lime leaves
½ lime (juice)
1 heaped tsp raw/brown sugar
Any seasoning powder (mushroom powder)
Oyster sauce to taste
Salt to taste
Oil for cooking
Chilli paste: Boil a handful of dry chillies and 2-3 red cili padi for 5 minutes. Then, blend it to a thick paste.
Steps:
- Heat up some oil over medium low flame and fry the prawns until they turn pink. Then, set it aside.
- Remove the excess oil, just leave above 3 tbsp in the same wok.
- Now, sauté the chilli paste with the lemongrass, lime leaves, little salt, some oyster sauce, sugar and seasoning powder for 2-3 minutes. Once the oil begins to separate, add in the fried prawns. Taste for seasoning.
- Then, add in the tomatoes, cook for another minute. Squeeze in some lime juice. Simmer for 1 more minute over low heat, then turn off the flame. Serve with hot rice and enjoy 😊

Another fabulous, spicy dish, Su! And so fast! I think the key is the choice of chillies for the dish. Different chillies, different tastes.
