  • SPICY BEANCURD-BEANSPROUT STIR FRY

    Ingredients:
    2 small tauhu (beancurd)
    Ikan bilis stock cube
    Mix of fresh prawns and squids
    Handful of cleaned taugeh (beansprout)
    Handful of spring onions (cut lengthwise)
    Red-Green cili padi (slit partially)
    Fresh lime (optional)
    Chilli flakes
    Oyster sauce
    Salt to taste
    Oil for cooking
    Ingredients to be coarsely mashed. Use a mortar-pestle/food processor
    (A)
    2-3 red fresh chillies
    7-8 red cili padi
    5-6 green cili padi
    6 cloves of garlic
    6 shallots
    1 inch toasted belacan
    Steps:
    Deep fry the beancurd. Set it aside, then smash it with a fork.
    In the same hot oil, fry the (A) ingredients except the toasted belacan.
    Once cool, use a mortar-pestle/food processor to coarsely mash it together with the belacan and little salt.
    Heat up some oil in a pan, add in the (A), the prawns, squids, little oyster sauce, 1 tbsp water and fry, 2 minutes.
    Then, add in the fried crumbled beancurd and beansprouts.
    Mix everything together, squeeze ½ lime, taste for seasoning.
    Lastly, add in the spring onions and slit chillies.
    Turn off the flame. Have this simple yet delicious comfort food with hot rice and enjoy!
