    Chicken Rendang & Turmeric Rice
    (Hari Raya Special)

    Ingredients for the rice:
    1 cup long grain basmati rice (pre-soaked for 30 minutes, drain & set it aside)
    2 ¼ cup lukewarm water
    1 tbsp ginger-garlic paste
    1 ½ tbsp ghee
    2 fresh turmeric leaves
    4 fresh kaffir lime leaves
    2 small cinnamon sticks
    2 star anise & 6 cloves
    Salt and seasoning powder to taste
    Yellow food coloring
    P/S: Use the same cup measurement for both rice and water.
    Steps:
    Heat up some ghee in a pan. Then, add in the dry spices, ginger-garlic paste, salt and seasoning powder. Stir fry for 1-2 minutes. Then add in the rice. Turn off the flame.
    Add in the turmeric leaves, water and a few drops of colouring. Transfer rice into the rice cooker and cook.
    Once cooked, remove the leaves and use a fork to gently fluff the rice.
    Ingredients for the rendang:
    1 large chicken, cut into 8 pieces
    2 fresh turmeric leaves
    6 kaffir lime leaves
    5-6 lemongrass, crushed
    6-8 mixed red & green cili padi
    1 chicken stock cube
    1 tsp brown sugar
    1 tsp turmeric powder
    Julienned turmeric and kaffir leaves
    Instant rendang paste (store-bought)
    Serunding (store-bought)
    Dry chilli paste (6-8 heaped tbsp) or adjust to your own spiciness level
    100 ml water
    450-500ml thick coconut milk
    Oil for cooking
    Salt to taste
    Steps:
    Heat up some oil in a wok over medium flame. Add in the lemongrass, dry chilli paste and some salt. Sauté for 2-3 minutes then add in the kaffir & turmeric leaves, as well as the chicken pieces.
    Add in the stock cube, turmeric powder and a little water. Allow the chicken to cook, 10 minutes.
    Now, add in the rendang paste, coconut milk and continue to cook. The coconut milk will begin to thicken. You may remove the lemongrass, turmeric and lime leaves.
    Then, add in the serunding, julienned lime and turmeric leaves, brown sugar and cili padi. Allow to simmer until the gravy thickens further. The oil will begin to separate. At this stage, you may turn off the flame. Serve it hot with the nasi kunyit and enjoy 😋😋😋
